EMERGENCY BARBECUE SAUCE
I use this all the time when a recipe calls for barbecue sauce. It's also great to mop on beef when you're grilling. Try it!

QUICK BARBEQUE SAUCE

Steps:
- Heat the oil in a medium saucepan over medium-high heat. Add the onion and cook, stirring, until lightly browned, about 4 minutes. Add the garlic and crushed pepper and cook, stirring frequently, until fragrant, about 45 seconds. Add the tomato paste and cook, stirring, until lightly browned, about 1 minute more. Add the tomatoes, vinegar, sugar, and salt and bring to a boil. Lower the heat, and simmer, uncovered, stirring occasionally, until deep red in color and reduced to about 4 cups, about 25 minutes. Season with pepper to taste. Use now, or store, covered in the refrigerator for up to 3 days or freeze for up to 1 month.

- In a small saucepan over medium heat, stir together the ketchup, brown sugar, Worcestershire sauce, vinegar, hot pepper sauce, garlic powder, mustard powder, and salt. Bring to a simmer, then remove from heat and allow to cool slightly before brushing on your favorite meat.

"THE FRUGAL GOURMET'S" SOUTHERN BARBECUE SAUCE
This is the only barbecue sauce I use for "Pulled Pork" barbecue. From Jeff Smith's first cookbook, "The Frugal Gourmet", 1984 One recipe is enough for about 10 lbs. of meat. It keeps well in a jar in the fridge. If you don't have liquid smoke, try adding some smoked paprika.

- Heat butter in saucepan over medium-high heat. Add ketchup and allow to cook for a minute or two and then stir, and continue to cook until it slightly darkens in color. Add in the water, turn the heat down to medium and add the remaining ingredients, except the additional water and salt and pepper. Allow to barely simmer for two to three minutes. Remove from heat. Taste and adjust seasonings, add salt and pepper if needed and if too thick, slowly stir in a little at a time, the additional water to desired consistency.
