While I enjoyed making soup from scratch, time doesn't often allow me to spend hours in the kitchen. This fast soup gets a head start from frozen vegetables and leftover meat.

- In a large saucepan, bring the broth, tomatoes, onion, cabbage, vegetables and seasonings to a boil. Add macaroni; simmer, uncovered, for 10 minutes or until pasta is tender. Add meat; heat through.

Steps:
- Preheat the oven to 350˚F (180°C).
- Add the potatoes, broccoli florets, and red pepper to a baking sheet.
- Sprinkle the garlic powder, parsley, salt, pepper, and 2 tablespoons of olive oil over the vegetables and toss to coat.
- Bake for 25 minutes, until the vegetables are tender.
- Sprinkle the Parmesan cheese over the vegetables.
- Add the vegetables to a large bowl with the cous cous and remaining tablespoon of olive oil and toss to combine.
- Enjoy!

EASY GREEN VEGETABLE SOUP

Steps:
- Put the spring onions, potato and garlic into a large pan. Pour over the vegetable stock and bring to the boil.
- Reduce the heat and simmer for 15 mins with a lid on or until the potato is soft enough to mash with the back of a spoon.
- Add the peas and bring back up to a simmer. Scoop out around 4 tbsp of the peas and set aside for the garnish.
- Stir the spinach and yogurt into the pan, then carefully pour the whole mixture into a blender or use a stick blender to blitz it until it's very smooth. Season to taste with black pepper.
- Ladle into bowls, then add some of the reserved cooked peas and scatter over your favourite soft herbs or cress. Serve with crusty bread, if you like.

- Place couscous in a large bowl and add boiling water or stock. Cover bowl with plastic wrap and let stand for 10 minutes.
- Meanwhile, heat olive oil over medium heat and add onion; cook, stirring, until golden and soft. Add salt and cumin; stir to combine. Remove from heat and let cool slightly.

GREEN VEGETABLE SOUP
This soup takes advantage of summer vegetables bursting with flavor. If you find fresh small cannellini or other fresh beans, be sure to use them.

Steps:
- Heat the oil in a large pan- Cook the onion and leek over low heat, stirring occasionally, for 5 minutes.
- Add the celery, carrot, and garlic, then cover and cook for another 5 minutes.
- Add the water, potato, parsnip, kohlrabi or turnip, and green beans- Bring to a boil, lower the heat and cover, simmer for 5 minutes.
- Add the peas, zucchini, and small cannellini beans and season to taste- Cover and simmer for about 25 minutes, until all vegetables are tender.
- Meanwhile, make the pesto: Put all the ingredients in a food processor and process until smooth, scraping down the sides as necessary (Alternatively, pound together using a pestle and mortar.).
- Add the spinach to the soup and simmer for 5 minutes- Stir a spoonful of the pesto into the soup.
- Ladle into bowls and serve the remaining pesto separately.
QUICK GREEN VEGGIE SOUP WITH COUSCOUS
For this bountiful vegetable soup, the less cooking time, the better. Everything should remain bright green and just tender-crisp.

- In a small heatproof container, combine the couscous with 1 cup boiling water. Cover and set aside.
- In a soup pot, combine the broth with 2 cups water and bring to a simmer. Add the zucchini, peas, broccoli, scallions, ginger to taste, and dill. Return to a rapid simmer, then cover and cook 3 to 4 minutes, until the vegetables are just done.
- Stir in soy sauce to taste along with the oil, spinach, and parsley. Cook for another minute or two, just until the spinach has wilted.
- Stir in the couscous. Season with pepper and, if desired, additional soy sauce. Serve at once.
- This soup teams well with salad-filled wraps. I suggest making the wraps first, as the soup will need your full attention for the short time span it requires. Any of the following, from Easy, Tasty Wraps (page 151), will yield a delightful soup-and-wrap dinner: BBQ Seitan and Avocado Salad Wraps (page 152), Hummus and Avocado Wraps (page 152), or Baked Tofu and Raw Veggie Wraps (page 152).
