Number Of Ingredients 14

1 medium leek
1 tablespoon olive oil
5 oz pancetta
2 cups carrot, diced
3 stalks celery stalk, sliced
8 oz cremini mushroom, sliced
3 cloves garlic, minced
kosher salt, to taste
4 sprigs fresh thyme sprigs
14.5 oz diced tomato
4 cups great northern beans, cooked or canned
6 cups low sodium vegetable broth
parmesan cheese, freshly grated, for serving
bread, crusty, for serving

Steps:

  • Trim the root end and the tough, dark green top of the leek and remove any thick outer layers. Cut the leek in half lengthwise, then slice into ¼-inch (6-mm) thick half moons.
  • Transfer to a bowl of water and shake around with your fingers to loosen any dirt or grit. Let the leeks sit in the water for a couple minutes to let any grit to sink to the bottom of the bowl. Carefully remove the cleaned leeks from the bowl, leaving the dirty water behind.
  • Heat the olive oil in a large, heavy-bottomed pot over medium heat. Add the pancetta and cook until crispy and most of the fat has rendered, about 8 minutes.
  • Add the leeks, carrots, celery, mushrooms, and garlic. Season with salt. Cook for 5-6 minutes, until the vegetables have released their juices and begin to soften.
  • Add the thyme leaves, tomatoes, beans, and vegetable stock. Stir to combine, then bring to a boil, cover, and cook, stirring occasionally, for 20 minutes until slightly reduced and hot throughout. Season with more salt, to taste.
  • Ladle into bowls and top with freshly grated Parmesan cheese. Serve with crusty bread.

2 tablespoons extra-virgin olive oil, plus more for drizzling
1 onion, chopped
1 stalk celery, diced
1 carrot, peeled and diced
1 pound cremini mushrooms, quartered
1/2 cup white wine
1 (28-ounce) can whole tomatoes, pureed in a blender
1 sprig fresh rosemary
2 cups cooked white beans (equivalent to one 16-ounce can), drained
Coarse salt and freshly ground pepper

Steps:

  • Heat oil in a medium saucepan over medium heat. Cook onion, celery, and carrot until tender, about 8 minutes. Increase heat to medium-high, add mushrooms, and cook until softened, 5 to 7 minutes.
  • Deglaze with wine, scraping up any brown bits with a wooden spoon.
  • Add tomatoes, rosemary, beans, and 1/2 cup water. Bring to a boil; reduce heat and simmer until slightly thickened, about 15 minutes. Season with salt and pepper. Serve with a drizzle of oil.

4 to 5 ounces cremini or button mushrooms, quartered
4 to 5 ounces some other fresh mushroom, shiitake, oyster, chanterelle, etc.
1 1/2 pounds boneless beef top sirloin steak, cut into 1-inch cubes
2 tablespoons extra virgin olive oil
Salt
2 medium carrots, cut into 1/4 inch thick slices
1 medium onion, cut lengthwise into thin wedges
2 cloves garlic, sliced thin
1/2 cup dry white or red wine (can sub beef or chicken broth)
16-ounce can small white beans (such as Great Northern, navy, or cannellini), rinsed, drained
14 1/2-ounce can diced tomatoes with garlic and onion, undrained
Chopped parsley for garnish

Steps:

  • Dry sauté the mushrooms: Put a large skillet over high heat and add all the mushrooms. Shaking the pan from time to time to prevent the mushrooms from sticking, dry sauté them until they being to release their water. Keep cooking until the mushrooms begin to brown. Remove to a bowl and set aside.
  • Brown the beef: Add 2 tablespoons olive oil to the skillet and lower the heat to medium-high. Brown the beef cubes in batches, turning to brown at least two sides of the meat. Remove from skillet, add to the bowl with the mushrooms and sprinkle salt over them.
  • Cook the carrots, onions, and garlic: Add the carrots and sauté 3-4 minutes. Add the onions and cook another 5 minutes, then add the garlic and cook another minute.
  • Add wine, bring to a boil and return the cooked beef and mushrooms to the pan: Continue cooking 3 more minutes.
  • Stir in the beans and tomatoes: Cook 5 minutes more. Add salt to taste. Serve, garnished with chopped parsley.

1 lb fresh white mushroom (about 5 cups, sliced)
1 cup chopped onion
1 teaspoon garlic, minced
1 teaspoon herbes de provence
2 (13 ounce) cans vegetable broth
1 (14 1/2 ounce) can diced tomatoes
1/4 cup dry white wine
2 (15 ounce) cans cannellini beans, rinsed & drained

Steps:

  • Heat oil in a large soup pot over medium-high heat.
  • Add mushrooms, onion, garlic, and herbe de Provence, and cook and stir until onion is very tender and mushrooms are slightly golden, about 8 minutes.
  • Add vegetable broth, tomatoes (including liquid), and wine.
  • Bring to a boil, reduce heat, cover, and simmer to blend flavors, about 15 minutes.

1 tablespoon olive oil
16 ounces wild mushroom mix, diced small
2 frozen sauteed chopped onion cubes
1 thick sprig fresh thyme
Kosher salt and freshly ground black pepper
4 mini sweet peppers, small dice
1 tablespoon grained Dijon mustard
4 cups vegetable stock
One 15.5-ounce can white beans, rinsed
1 cup shredded kale, optional, further chopped
Lemon wedge, for spritzing
Hot sauce, to taste (I like Tapatio, Cholula or Texas Pete here)

Steps:

  • In a medium pot on medium-high heat, add the olive oil, mushrooms, onion cubes and thyme. Saute until the mushrooms are tender and wilted, 8 to 10 minutes. Season with salt and pepper. Add the peppers and cook until they soften, 4 to 5 minutes.
  • Add the mustard and move it around the pot so it basically coats everything and disappears. Add the stock and beans. Lower to a simmer and cover. Let cook, 15 to 20 minutes.
  • Remove the sprig of thyme, then add the kale, if using, and stir. Serve with a spritz of lemon and a shake of hot sauce.

8 ounces cooked ham, cut into 1/2-inch cubes
1/4 teaspoon black pepper
1 (5 ounce) bag baby romaine lettuce or 1 (5 ounce) bag Baby Spinach
8 slices baguette (3/4-inch-thick)

Steps:

  • Cook garlic in oil in a 3 1/2- to 4 1/2-quart heavy pot over moderately high heat, stirring, until golden, 1 to 2 minutes.
  • Coarsely cut up tomatoes in can , then add (with juice) to garlic in oil.
  • Stir in broth, beans, ham, and pepper and bring to a boil.
  • Reduce heat and simmer, uncovered, 5 minutes.
  • Stir in greens and cook until wilted.
  • While stew is simmering, preheat broiler. Put bread on a baking sheet and drizzle with remaining 1/2 tablespoon oil. Broil 3 to 4 inches from heat until golden, 1 to 1 1/2 minutes.
  • Serve stew with toasts.

1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2-1/2 cups water
2 pounds beef stew meat, cut into cubes
2 bay leaves
3 medium potatoes, peeled and cut into 1-inch chunks
4 carrots, cut into 1/2-inch slices
1 pound medium fresh mushrooms, halved
1 tablespoon quick-cooking tapioca

Steps:

  • In a Dutch oven, stir the soups and water until smooth. Add meat and bay leaves. Cover and bake at 325° for 1-1/2 hours. , Stir in potatoes, carrots, mushrooms and tapioca. Cover and bake 1 hour longer or until the meat and vegetables are tender. Discard the bay leaves before serving.
