EASY MINI PIZZA RECIPE

1 garlic clove (minced or pressed)
1 tablespoon olive oil
1 14 ounce can crushed tomatoes in rich puree
1/2 teaspoon brown sugar
1/2 teaspoon Italian seasoning
1/2 teaspoon dried basil
pinch of salt
pinch of crushed red pepper flakes
12 4- inch flour tortillas
Pizza topping: Mini pepperoni (shredded mozzarella, fresh basil)

Steps:

  • Preheat oven to 450°. Bake pizza sauce.
  • Place flour tortillas on a rimmed baking sheet. Place a tablespoon of pizza sauce into the center of each tortilla round. Sprinkle cheese on top of the sauce on each tortilla round. Top each pizza with mini pepperoni rounds and fresh basil if using.
  • Bake 8 - 10 minutes or until the cheese is melted and starting to brown and the crust edge is browned and crisp.
  • HOMEMADE PIZZA SAUCEIn a small saucepan, sauté garlic in oil until tender. Stir in the remaining sauce ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until sauce reaches desired thickness. Sauce may be refrigerated for up to 1 week.

3 ¼ cups all-purpose flour, or more as needed
1 envelope Fleischmann's® Pizza Crust Yeast or RapidRise Yeast
1 ½ tablespoons sugar
1 ½ teaspoons salt
1 ⅓ cups very warm water (120 degrees to 130 degrees F)*
⅓ cup Mazola® Vegetable Plus! Oil
Green, red and yellow bell peppers
Mushrooms
Black olives
Pepperoni slices
Curly leaf parsley or other fresh herbs
1 pound shredded white and yellow cheeses such as mozzarella and cheddar

Steps:

  • Preheat oven to 425 degrees F.
  • Combine 2 cups flour, undissolved yeast, sugar and salt in a large bowl. Add very warm water and oil; mix until well blended, about 1 minute.
  • Gradually add enough remaining flour to make a soft dough. Dough should form a ball and will be slightly sticky. Knead** on a floured surface, adding additional flour if necessary, until smooth and elastic, about 4 minutes. Divide dough into 8 portions; cover. (If using RapidRise Yeast, let dough rise at this point for 10 minutes.)
  • Pat each portion of dough with floured hands into an 8-inch circle on a greased baking sheet. Form a rim by pinching the edge of the dough. Add a second crust to the same baking sheet.
  • Bake for 6 to 7 minutes, dough will be just set and only lightly browned on the bottom. Remove crusts to a wire rack to cool. Continue with remaining pizza dough. (Works best to use several baking sheets.) May use crusts immediately or place in freezer bags and freeze for up to 1 month.
  • When ready to bake, preheat oven to 475 degrees F. Spread each crust with pizza sauce. Top with desired toppings to make Halloween designs! Repeat with remaining pizzas. Place on a baking sheet and bake for 6 to 8 minutes, until cheese is melted and lightly browned and bottom of crust is browned.

1/3 cup pizza sauce (homemade or store bought)
1 cup mozzarella cheese (shredded)
1/3 cup mini pepperoni
1 tablespoon fresh parsley (chopped)
cooking spray

Steps:

  • Preheat the oven to 400 degrees F. Coat the cups of a muffin pan with cooking spray.
  • Unroll the crescent roll sheets and cut out 12 3-inch circles.
  • Press one circle of dough into each of the muffin pan wells.
  • Spoon the sauce evenly among the muffin cups and top with the shredded mozzarella cheese and pepperoni.
  • Bake for 8-10 minutes or until dough is golden brown and cheese is melted.
  • Sprinkle with parsley and serve.

⅓ cup Signature SELECT™ Pizza Sauce
1 cup Lucerne® Pizza 2-Cheese Blend
12 pepperoni slices (quartered)
1 tablespoon pizza seasoning or oregano

Steps:

  • Preheat the oven to 350°F and coat a muffin tin with nonstick spray and set aside.
  • Cut each of the biscuits in half and gently press each half into a cavity of the tin, pinching the dough together to make a circle.
  • Add 1 teaspoon of pizza sauce to each of the doughs and gently spread around.
  • Add a pinch of pizza seasoning or dried oregano to each pizza.
  • Top the sauce with 1 tablespoon of shredded cheese on each pizza.

1/2 cup warm water (110° to 115°)
1/2 cup biscuit/baking mix

2 teaspoons olive oil, divided
1/2 teaspoon Italian seasoning
1/2 to 3/4 cup all-purpose flour
1/4 cup pizza sauce
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • In a small bowl, dissolve yeast in warm water. Add the baking mix, Parmesan cheese, sugar, 1-1/2 teaspoons oil, Italian seasoning and 1/2 cup flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a lightly floured surface; knead until smooth and elastic, about 5-6 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 30 minutes., Punch dough down; divide in half. On a lightly floured surface, roll each portion into an 8-in. circle. Transfer to two 7-1/2-in. pizza pans coated with cooking spray; build up edges slightly. 3/4 pound sweet or hot Italian sausages, casings removed
3 large garlic cloves, chopped
1 cup packed grated mozzarella cheese (about 4 ounces)
3/4 cup purchased pizza or marinara sauce
1/3 cup grated Parmesan cheese (about 1 ounce)

Steps:

  • Preheat oven to 350°F. Lightly oil 24 muffin cups. Using 2 1/2- to 2 3/4 inch-diameter cookie cutter, cut out center of each bread slice (reserve trimmings for another use). Press bread rounds onto bottoms and about 1/2 inch up sides of prepared cups, forming crusts.
  • Sautamp;é sausage and garlic in heavy large skillet over medium heat until brown, breaking up with spoon, about 15 minutes. Using slotted spoon, transfer mixture to bowl; mix in mozzarella, 1/2 cup pizza sauce and Parmesan. Divide filling among crusts. Top each with 1/2 teaspoon of remaining sauce.
