EASY THAI CHICKEN



Easy Thai Chicken image

So sticky, so tender, so moist and just packed with so much flavor. And it's an easy peasy weeknight meal, made in 30 min or less!

Yield 8 servings

Number Of Ingredients 11

2 tablespoons unsalted butter
8 bone-in, skin-on chicken thighs
1/4 cup peanuts, chopped
2 tablespoons chopped fresh cilantro leaves
1/2 cup sweet chili sauce
2 tablespoons reduced sodium soy sauce
2 cloves garlic, minced
1 tablespoon fish sauce
1 tablespoon freshly grated ginger
Juice of 1 lime
1 teaspoon Sriracha, or more, to taste

Steps:

  • Preheat oven to 400 degrees F. To make the sauce, whisk together chili sauce, soy sauce, garlic, fish sauce, ginger, lime juice and Sriracha in a small bowl; set aside. Melt butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side. Stir in chili sauce mixture. Place into oven and roast until completely cooked through, reaching an internal temperature of 165 degrees F, about 25-30 minutes. Then broil for 2-3 minutes, or until caramelized and slightly charred. Serve immediately, garnished with peanuts and cilantro, if desired.

2 tablespoons vegetable oil
½ onion, sliced
3 cloves garlic, sliced
1 large skinless, boneless chicken breast, cut into 1-inch pieces
¼ cup oyster sauce
3 tablespoons soy sauce
1 pinch white sugar
2 small chile peppers, sliced
⅓ cup water
½ cup fresh basil leaves

Steps:

  • Heat oil in a wok or large skillet over medium heat. Add onion and garlic; cook and stir until fragrant, about 30 seconds. Add chicken; cook and stir until no longer pink, about 5 minutes. Stir in oyster sauce, soy sauce, and sugar. Stir in chile peppers. Pour in water. Cook until slightly thickened, 3 to 5 minutes. Stir in basil before serving.

This can be made in 20 minutes! Make sure you use unsweetened coconut milk and not cream of coconut. This is from one of my favorite cookbooks, "BHG Off The Shelf Cooking." ***When I first posted this, I hadn't yet made it. Well, made it today and it seems to be lacking something but I'm not sure what! Sprinkling it with a little garlic salt helped it tremendously. I welcome any ideas from others on how to improve it!

3/4 cup unsweetened coconut milk
1/4 cup peanut butter
1/4 teaspoon ground ginger
1/4 teaspoon ground black pepper
4 boneless skinless chicken breast halves (about 1 1/4 pounds)
1 tablespoon cooking oil
4 green onions, cut into 1-inch pieces
1/4 cup honey-roasted peanuts, coarsely chopped

Steps:

  • In a small bowl stir together coconut milk, peanut butter, ginger and pepper; set aside.
  • In a large skillet cook chicken in hot oil over medium heat for 8-10 minutes or until chicken is tender and no longer pink, turning once halfway through cooking. Remove from skillet; keep warm.
  • For sauce, add green onion to skillet. Cook and stir about 2 minutes or until tender. Stir in coconut milk mixture. Cook and stir until bubbly.
  • To serve, spoon the sauce over chicken. Sprinkle with peanuts.

1 medium red bell pepper, cut into 1- to 2-inch-long julienne strips
1 medium orange bell pepper, cut into 1- to 2-inch-long julienne strips
1 (8 ounce) can bamboo shoots
1 bunch scallion, sliced
1 garlic clove, minced
1 tablespoon fresh ginger, minced
1 1/2 teaspoons red curry paste
1 lb boneless skinless chicken breast
1/4 teaspoon curry
1 cup reduced-sodium chicken broth (to taste)
1 (13 1/2 ounce) can light coconut milk
1 tablespoon fish sauce or 1 tablespoon reduced sodium soy sauce
1 teaspoon light brown sugar

Steps:

  • Heat medium pot over medium-high heat. Add coconut milk, garlic, ginger, broth, fish sauce (or soy sauce) and brown sugar; bring to a simmer.
  • Add pepper and scallions to coconut sauce while cooking chicken. Add bamboo shoots before adding chicken. Add red curry paste to taste.
  • Cut chicken into 1/2 cubes or smaller. Add chicken to frying pan with non-stick oil spray and add curry powder. Cook so that it is 90% done. Add to sauce mixture. Add more red curry paste to taste.
  • Let it simmer for another 10 minutes.
  • Serve immediately, with jasmine or brown rice.
