TASTY BUNS
Excellent yeast buns that can be used for hamburgers or just plain dinner rolls. They don't take long to make and have never failed for me!

Steps:
- Stir together 2 cups flour and the yeast. In a separate bowl, heat milk, water, oil, sugar and salt to lukewarm in microwave. Add all at once to the flour mixture, and beat until smooth, about 3 minutes.
- Mix in enough flour to make a soft dough, 2 to 3 cups. Mix well. Dust a flat surface with flour, turn dough out onto floured surface, and let rest under bowl for about 10 minutes.
- Shape dough into 12 slightly flat balls, and place on greased baking sheet to rise until doubled in size.
- Bake in a preheated 400 degrees F (200 degrees C) oven for 12 to 15 minutes.

QUICK-RISE BUNS
These are a great, all-purpose bun. They rise quickly, so you can make a batch first thing in the morning and have them ready for lunch. They make great dinner buns, or hamburger buns, and even lend themselves well to cinnamon buns.

Steps:
- Stir 1 Tbsp sugar into 1 cup warm water. Sprinkle yeast over top. Let stand 10 minutes. Stir.
- Meanwhile, in large mixer bowl, beat the 2 eggs slightly along with the remaining 2 cups water. Stir in the 6 Tbsp sugar, 2 tsp salt, and 6 Tbsp oil. Then stir in the yeast mixture. Beat in 4 cups of flour with your mixer on medium speed. Beat 3 minutes to develop the gluten.
- Work in the rest of the flour gradually, either with your dough hook attachment or by hand with a wooden spoon. If using mixer with a dough hook, let it go about 3 - 4 minutes until it pulls away from the side of the bowl. If mixing by hand, once the dough is too stiff to mix with a spoon, turn out onto a counter and work the flour in by hand.
- Either way, at the end of mixing, the dough still benefits from kneading it a bit by hand. Turn out onto your counter or table and knead the dough by hand, using flour as necessary to keep it from sticking to the counter. Knead till dough feels smooth and elastic to the touch. This will take 3 to 4 minutes if you have already used a dough hook, or 8 to 10 minutes if you are doing it entirely by hand.
- Turn dough into large, well greased bowl, grease the top of the dough (spray with Pam), cover with wax paper, then a damp cloth, and set in a warm place to rise until almost doubled in bulk, about 3/4 to 1 hour. Punch down. Divide dough into 3 large pieces, then cut each large piece into 12 smaller pieces. Form into 36 buns.
- Place buns on cookie sheet for hamburger-size buns, or in 9 x 13 cake pan for dinner buns. Grease top of buns (easiest way it to spray them with Pam), and cover with wax paper to rise.
- Let buns rise until doubled in bulk.
- Bake at 350 degree F for about 20 minutes for hamburger buns, or 25 minutes for pan buns, or until they sound hollow when tapped on the top. Brush tops again with melted butter or spray with cooking oil spray to make a nice shiny and tender top crust.
- Cook's Notes
- Hint: Use 1 cup of whole wheat flour and the rest white. No one will know, and the taste is so much better! Another option is to make 24 regular buns and a dozen cinnamon buns.
- - roll one third of the dough out on a floured surface to about a 10 x12 inch rectangle.
- - Spread with 1/4 cup plus 2 Tbsp butter, then sprinkle on evenly: 3/4 cup brown sugar, 2 tsp cinnamon and 3/4 cup raisins (raisins are optional).
- - Roll up from long edge and cut into 12 even slices
- - prepare 9 x 13 inch pan by melting 1/4 cup plus 2 Tbsp butter and 2 Tbsp corn syrup, and pour into bottom of the pan. Sprinkle over evenly: 3/4 cup brown sugar, 1 Tbsp cinnamon and 3/4 cup pecan halves.
- - place cinnamon roll slices in the prepared pan, cover with wax paper, and let sit in warm place until doubled in size.
- Bake at 350 degrees F for 25 to 30 minutes. Remove and let sit in pan for 5 minutes. Then turn over onto foil and let the pan sit over the cinnamon buns for 10 minutes, to allow all the sugar syrup to run onto the buns. Serve immediately.
EASY QUICK BUNS
These are super easy, super quick buns. I get requests to take them everywhere we go. They are great for those last minute dinner guests, or a nice surprise for breakfast. They freeze well, and make excellent toast. This recipe is a combo of my grandmothers recipe and a few others, all tweaked to make a fast, easy, soft, fluffy bun.

- Mix 2 C flour& yeast in a large bowl.
- In a separate bowl, heat milk, water, oil, sugar& salt to lukewarm in microwave.
- Add all at once to flour mixture and beat till smooth. (Approx 2 mins in a Kitchenaid stand mixer).
- Mix in enough flour to make a soft dough (2 - 2 1/2 Cups).
- Mix well until dough is soft and slightly sticky, then turn out onto floured surface and let rest under a large greased bowl for about 15 minutes.
- Shape dough into 12-15 small balls and place on greased baking sheet to rise until doubled in size. (approx 45 Mins).
- Bake in preheated 400 degree oven 12-15 minutes.

" QUICK BUNS"
These buns are light and wonderful. In just over 2 hrs from start to finish. This recipe is from the Canadian Mennonite Cookbook.

Steps:
- Grease or parchment paper 1 or 2 cookie sheets, depending on the size.
- Dissolve sugar in warm water. Sprinkle yeast over liquid.
- Combine milk, salt, and butter in saucepan and heat until warm.
- Add yeast and flour. Work and knead dough for about 10 minutes.
- Cover and let rise in warm place for about 30 minutes.
- Turn on floured surface and pat to 3/4" thickness.
- Cut with round (or any shape that takes your fancy) cookie cutter and place on prepared sheets.
- Let rise in warm place for about 45 minutes or until double in size.
- I usually put some flour in a hand sieve and sprinkle the tops before baking.
- Bake at 375 degrees for 15-20 minutes.

TWENTY MINUTE BUNS
Very quick and simple. Nothing is better than fresh hamburger buns. This is a very sticky dough that requires very little kneading.

- In a large mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
- Add oil, 2 cups of flour and the salt; stir well to combine. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 40 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- Turn the dough out onto a lightly floured surface and divide into three equal pieces. Divide each big piece into 6 small ones. Form the pieces into rounds. Place the rounds into the prepared pan. Cover the rolls with a damp cloth or plastic wrap and let rise until doubled in volume, about 20 minutes.
- Beat together the egg white and water. Gently brush the risen rolls with the egg wash and then bake at 350 degrees F (175 degrees C) for 15 minutes or until the rolls are golden brown.

ALMOST-FAMOUS CINNAMON BUNS

- Make the dough: Warm the milk in a medium saucepan over low heat until it reaches about 100. Remove from the heat and sprinkle in the yeast and 1/4 teaspoon sugar (don't stir). Set aside until foamy, 5 minutes. Whisk in the melted butter, egg yolk and vanilla.
- Whisk the flour, the remaining 1/4 cup sugar, the salt and nutmeg in the bowl of a stand mixer. Make a well in the center and pour in the yeast mixture. Mix on low speed with the dough hook until thick and slightly sticky. Knead on medium speed until the dough gathers around the hook, 6 minutes. (Add up to 2 more tablespoons flour if necessary.)
- Remove the dough and shape into a ball. Butter the mixer bowl and return the dough to the bowl, turning to coat with butter. Cover with plastic wrap and let rise until doubled, 1 hour 15 minutes.
- Roll out the dough, fill and cut into buns (see Cook's Note). Butter a 9-by-13-inch baking pan; place the buns cut-side down in the pan, leaving space between each. Cover with plastic wrap and let rise until doubled, 40 minutes. Preheat the oven to 325.
- Bake the buns until golden brown, about 35 minutes. Cool in the pan 15 minutes. Meanwhile, make the glaze: Sift the confectioners' sugar into a bowl, then whisk in the cream and melted butter. Transfer the buns to a rack and spoon the glaze on top while still warm.
40-MINUTE HAMBURGER BUNS

Steps:
- Mix yeast well with first 4 cups flour.
- In a large, lightly greased mixing bowl, place flour and yeast and add remaining ingredients, adding approximately another 4 cups of flour to form soft dough.
- Cover and let rise 15 minutes and punch down.
- Let rise again for 10 minutes and then form buns, placing on cookie sheets.
- Let rise in warm place (in the oven with the light on) for 30 minutes.

QUICK BEEF BUNS

- Cook beef, pepper & onion in skillet over med. heat until brown. Remove from heat and stir in bread crumbs, barbecue sauce and salt. Set aside.
- Preheat oven to 375º. Separate crescent roll dough in 4 rectangles on lightly floured board. Roll dough in 8x4 rectangle-cut crosswise in half. Place 2 tbsp of meat mixture on each half. Top with some mozzarella. Pull corners of dough toward the center and twist. Pinch to seal. Place buns on greased cookie sheet. Repeat with rest. Makes 8 buns.
- In small cup, beat egg yolk and 1 tsp water with fork until blended. Brush top of buns.
- Bake 10-15 minutes or until golden.
QUICK YEAST ROLLS
This easy yeast roll recipe was given to me by my Great, Great Grandmother. I used it a couple of years ago in our state fair and received first place.

- In a large bowl, mix the shortening, sugar, and hot water. Allow to cool until lukewarm, and mix in the yeast until dissolved. Mix in the egg, salt, and flour. Allow the dough to rise until doubled in size.
