4 cups cooked chicken shredded or diced
1 pound Napa cabbage cored and finely shredded
2 cups red cabbage cored and finely shredded
1 cup shredded carrots
1 bunch scallions thinly sliced
1/4 cup fresh cilantro minced
1 cup fried wonton strips
2 tablespoons sesame seeds for garnish, optional

Steps:

  • In a small jar with a tight-fitting lid, combine oil, vinegar, hoisin sauce, soy sauce, ginger, and sesame oil. Shake vigorously until combined.
  • Allow flavors to blend at room temperature while preparing the rest of the salad. Or, refrigerate for up to 4 days.

XO sauce is a funky chile and pork sauce that adds a wonderful depth of flavor to Chinese dishes, but it takes time and lots of ingredients to make at home. This is a great little shortcut, using a jar of ready-made bacon jam (easily available online and in supermarkets) and adding a twist with soy sauce, fish sauce and rice vinegar.

350 grams (12 ounces) red cabbage (about 1/3), finely shredded
1/2 Chinese cabbage, shredded
1 large carrot (150grams/5 ounces), peeled and julienned or shredded
Olive oil, for cooking
4 boneless, skinless chicken thighs
One 100-gram (3 1/2-ounce) jar bacon jam
2 teaspoons fish sauce
1 teaspoon reduced salt soy sauce
2 teaspoons rice vinegar
1 bird's-eye chile, finely chopped
2 tablespoons rice vinegar
1 tablespoon reduced salt soy sauce
1 1/2 tablespoons sesame oil

Steps:

  • Put the shredded cabbages and carrot into a salad bowl. Whisk all the ingredients for the dressing together in a small bowl, pour over the salad and toss to combine. Set aside to soften and macerate.
  • Heat the oil in a frying pan. Season the chicken and fry over a medium heat for 3 to 4 minutes on each side until just cooked. Set aside to rest.
  • Meanwhile, in a small saucepan warm the bacon jam with the fish sauce, soy sauce, rice vinegar and chile.
  • Chop the chicken and add to the salad with the warm bacon jam. Toss to combine before serving.

12 ounces skinless, boneless chicken breasts
1 teaspoons salt
1 head romaine lettuce, shredded very thin
1/2 head iceberg lettuce, shredded
1 carrot, shredded
1 cup fresh cilantro, roughly chopped
1 teaspoon peanut oil
1/2 cup peanuts (see headnote)
1 tablespoon ponzu
1 tablespoon soy sauce
1/4 cup sesame oil
1 teaspoon sugar
1/2 teaspoon chile flakes
1/4 cup rice wine vinegar
2 tablespoons fresh orange juice

Steps:

  • 1. Fill a medium pot with enough water to cover the chicken by 2 inches. Add the salt to the water. Bring to a boil, then turn down the heat to just below a simmer. Place the chicken in the water, making sure the water does not boil so that the chicken stays tender. Once the chicken reaches an internal temperature of 150 degrees F or is firm and white in the center (not pink), remove from the pot and set on a plate to cool. Then cut into 1/2-inch cubes.
  • 2. In a salad bowl, combine the romaine, iceberg lettuce, carrot, and cilantro.
  • 3. To prepare the "wok"-style peanuts, in a medium skillet over medium-high heat, add the peanut oil, peanuts, sugar, and chile flakes. Stir occasionally until the peanuts have small char marks on them but are not burned, 2 to 3 minutes. Transfer to a plate to cool.
  • 4. In a small bowl, whisk together the rice wine vinegar, orange juice, ponzu, soy sauce, and sesame oil until well combined. Adjust the seasoning to taste. Toss all the ingredients together with the dressing and serve.

6 ounces shiitake mushrooms, stems removed, finely chopped (about 2 1/2 cups)
2 scallions, thinly sliced
1 medium shallot, finely chopped
5 salt-packed anchovies, rinsed, chopped
3 red Thai chiles, seeds removed, finely chopped
3 garlic cloves, finely chopped
1 (1-inch) piece ginger, finely chopped
1/2 teaspoon toasted sesame oil
1/4 teaspoon kosher salt
8 ounces haricots verts or green beans, trimmed
4 (3/4-inch-thick) slices country-style bread
2 tablespoons olive oil
2 small bunches carrots, any color, scrubbed, tops trimmed, halved if large
1 fennel bulb, cut into 1/2-inch wedges
1 teaspoon finely grated lime zest
2 tablespoons fresh lime juice
1 pound cooked fingerling potatoes, halved lengthwise

Steps:

  • Cut bacon into 1" pieces, then chop until a fine paste forms (this can also be done in a food processor).
  • Heat vegetable oil in a medium skillet over medium. Cook bacon, stirring occasionally, until brown and crisp, about 4 minutes. Using a small fine-mesh sieve, transfer bacon to a small bowl.
  • Working in separate batches and transferring each item to bowl with bacon as it's done, fry aromatics until brown (about 2 minutes for everything except mushrooms and shallot, which will take about 4 minutes). Let oil cool completely.
  • Pulse bacon, mushrooms, scallions, shallot, anchovies, chiles, garlic, ginger, cooled vegetable oil, sesame oil, and salt in a food processor until nearly smooth.

  • Prepare grill for medium-high heat (or heat a grill pan over medium-high). Brush both sides of bread with oil and grill until lightly charred, about 2 minutes per side.
  • Toss carrots, fennel, and haricots verts with lime zest and lime juice in a large bowl. Transfer to a platter and scatter crushed ice over. Place grilled bread and potatoes on another platter. Serve with XO sauce for dipping.
  • Sauce can be made 1 month ahead. Cover and chill. Bring to room temperature before using.
