QUINOA, FRESH FIG AND HONEY-BALSAMIC PARFAIT
This quinoa yogurt parfait is special to me because of its wholesome ingredients. Quinoa is gluten-free, which is good for those who have food allergies, like my daughter. And I love fresh ripe figs when they are in season. Enjoy this for breakfast or dessert. —Dawn Hutchins, St. Johns, Florida

- In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, until liquid is absorbed, 12-15 minutes. Remove from heat; fluff with a fork., Meanwhile, place vinegar in a small saucepan. Bring to a boil; cook 1-2 minutes or until liquid is reduced by half., In a small bowl, mix cooked quinoa, vanilla, cinnamon and salt. Layer half of quinoa mixture, half of honey, balsamic vinegar, half of figs and half of yogurt into 4 parfait glasses. Top with remaining quinoa mixture, honey, yogurt and figs.

Steps:
- Whisk balsamic vinegar and honey together in a saucepan over medium heat. Cook, stirring occasionally, until mixture begins to bubble, 3 to 5 minutes.
- Stir garlic, rosemary, and garlic salt into vinegar mixture. Cook and stir until mixture starts to foam. Reduce heat to low and simmer, stirring occasionally, until glaze coats the back of a wooden spoon, 30 to 40 minutes.

BALSAMIC AND HERB QUINOA SALAD
Serve this cold salad as a delicious summer side to your favorite grilled meat or try it alone as a great light lunch. I have been experimenting a lot with quinoa recently, and this is by far my favorite recipe. It's such a nice, healthy alternative to pasta and rice!

- Bring 2 cups water, quinoa, and bouillon granules to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes. Spread quinoa onto a baking sheet and refrigerate until cooled, about 30 minutes. Rinse saucepan.
- Place lima beans into the saucepan and add enough water to cover beans by 1 inch; season with salt and pepper. Cover saucepan with a lid and bring water to a boil. Reduce heat to medium and simmer until beans are cooked through but still tender, 3 to 4 minutes. Drain water and rinse beans under cold water to stop the cooking process; refrigerate until cool, about 10 minutes.
- Cook and stir almonds in a skillet over medium heat until toasted, about 5 minutes. Remove skillet from heat and cool almonds to room temperature, about 5 minutes.
- Mix quinoa, lima beans, almonds, tomatoes, scallions, and mozzarella cheese together in a large bowl.
- Whisk vinegar, almond oil, olive oil, Italian seasoning, basil, garlic, and salt together in a bowl until smooth; pour over quinoa mixture and stir to coat.

- Rinse quinoa using a fine mesh sieve and drain well. In a small pot, add the rinsed quinoa, spices, and vegetable broth. Cover the pot with a lid and simmer over medium-low heat for 20 minutes. Remove from heat and fluff with a fork.Cover loosely with lid and set aside.
- In a saucepan over medium-low heat, whisk together balsamic vinegar, honey, and olive oil until thickened and the mixture is syrupy (5-7 minutes).
- Preheat your grill (indoor or outdoor is fine—a grill pan was used for this recipe). Gently wash the figs and pat dry. Cut the figs in half from the stem down (the stem is quite hard to cut through, so you can cut just to the side of the stem. - Dip the figs into the balsamic honey mixture until well coated. Place them face down on the grill until you get charred marks from where the honey caramelizes, about 3-4 minutes. Flip and let them cook on their backs for another minute or two. Transfer to a plate and continue cooking until all figs are grilled. Set aside.
