These overnight oats can be made the night before and eaten the next day as a nutritious breakfast or post-exercise snack.

200g quinoa
200g porridge oats
4 tsp finely grated ginger
225ml milk , plus a little extra if required
1 tbsp vanilla extract
6 x 120ml pots bio yogurt
6 ripe peaches

Steps:

  • Boil the quinoa in plenty of cold water for about 18 mins until the grains burst. Tip into a sieve and rinse under under cold water. Meanwhile, tip the oats into a large bowl with the ginger. Pour over 400ml boiling water and stir well. The mixture will become quite thick, but this process does stop the slightly starchy taste that some birchers made with cold water have. Stir in 225ml milk, the vanilla and 3 pots of yogurt, then fold through the quinoa. Cover and chill overnight.
  • The next day, add a little more milk to get the consistency you want, then spoon into six bowls. Top two with a ½ pot yogurt each and 2 stoned and chopped peaches, then mix together. If you're following our Healthy Diet Plan, cover the other birchers and chill for another day. Serve with the remaining peaches and yogurt as above.

1/4 cup sliced fresh ginger, with skin
2 cups granulated sugar
2 cups cold water
10 ounces semi-frozen peaches
1/2 cup ginger simple syrup
Ice cubes
1 bottle Champagne

Steps:

  • Begin by making the ginger simple syrup. Peel and grate the ginger. Add it together with the sugar and cold water to a saucepan. Bring it to the boil and stir until the sugar dissolves. Cover and let steep for 15 minutes. Strain, discard ginger pieces and set simple syrup aside.
  • In a blender add frozen peaches and ginger simple syrup. Blend until completely pureed then place into the refrigerator to cool.
  • For serving:
  • Add ice cubes to a cocktail shaker and fill half way with peach puree. Top off with Champagne and shake vigorously to combine. Pour into Champagne glasses and repeat process as needed.

Three 12-ounce bottles chilled beer, light or mild, such as Modelo Especial (not dark beer)
3 cups (24 ounces) chilled peach nectar, such as bottled R.W. Knudsen brand or canned peach nectar
2 fresh peaches, pitted and cut into wedges or 5-ounces frozen peach slices, thawed
3/4 cup Ginger Simple Syrup, recipe follows
1/2 cup sugar
One 4-inch piece fresh ginger, cut into 1/4-inch pieces

Steps:

  • Combine the beer, peach nectar, peaches and syrup in a large pitcher; stir to blend. Serve immediately.
  • Place 1/2 cup water, the sugar and ginger in a small saucepan. Bring the syrup to a boil over high heat. Reduce the heat and simmer until the sugar dissolves, about 5 minutes. Let the syrup cool completely, about 20 minutes. Strain before using.

70 g rolled oats
185 ml skim milk
70 g low-fat yogurt (whisked till smooth)
160 g canned peaches (in natural juice, drained and chopped)
2 teaspoons honey
1 tablespoon slivered almonds (toasted)

Steps:

  • Into a medium bowl put the oats and then add the milk and yoghurt and stir to combine.
  • Cover and place in the fridge overnight.
  • In the morning stir in half the peaches and 1 teaspoon of honey.
  • Divide between to serving bowls, top each with equal amounts of remaining peaches, the toasted almonds slivers and drizzle with honey.
  • NOTE - to toast almonds , spread over a baking tray and place in an oven preheated to 160C for 6 to 7 minutes or until golden.
