CARIBBEAN BEEF BURGERS WITH MANGO SALSA
Spicy, sweet and oh-so-simple. Ground Beef gets a peppery boost from jerk seasoning, and the freshly chopped mango salsa gives the dish a cool finish.

- Combine Ground Beef and jerk seasoning in large bowl, mixing lightly but thoroughly. Shape into four 3/4-inch thick patties.
- Place patties on grid over medium, ash-covered coals. Grill, covered, 11 to 15 minutes (over medium heat on preheated gas grill, covered, 13 to 14 minutes), until instant-read thermometer inserted horizontally into center registers 160°F, turning occasionally. Season with salt, as desired.
- Meanwhile, combine salsa ingredients in medium bowl, mixing lightly. Serve burgers with salsa.

- For the slaw: Toss the cabbage with the lime juice, sriracha, salt and pepper in a large bowl. Cover and chill until ready to serve.
- Cut the mangos into spears. Reserve 12 spears for your burgers. Chop the remaining spears for your slaw. Add them to the slaw just before serving along with the scallions and mint and toss to finish.
- For the burgers: Combine the ground beef, teriyaki sauce, sriracha, ginger, garlic, salt and pepper in a medium bowl. Mix with your hands until combined. Form into 6 patties roughly 3/4-inch thick and 4 inches in diameter.
- Brush a grill, grill pan or skillet with vegetable oil and heat on medium-high. When nice and hot, add the patties and cook for about 4 minutes per side for medium-rare. Take them off the heat.
- To build the burgers: Spread mayonnaise on the bottom bun. Season with salt and pepper. Place a lettuce leaf on top of the seasoned mayo and top it with a patty, 2 slices of avocado, 2 spears of the reserved mango and the bun lid. Repeat with the 5 other burgers. Serve the slaw on the side.

- Heat a large nonstick skillet with EVOO, two turns of the pan, over medium-high heat.
- Place meat of choice into a mixing bowl. Combine the dry spices and sugar in a small dish, then sprinkle evenly over the meat. Add fresh basil or cilantro, lots of salt and pepper to the meat. Mix the meat and spices and form four large patties. Make a divot in the center of the burger. As the burgers cook, the well will swell up and you'll end up with a flat surface instead of the dreaded burger bulge. Cook the patties for 3-4 minutes on each side, turning once.
- While the burgers cook, make the mango salsa: in a small bowl, combine the mango, red pepper, jalapeño, cucumber and lime zest and juice. Season with salt, to taste.
- Toast the buns lightly under a hot broiler.
- When the burgers are done, transfer them to bun bottoms and top with Bibb lettuce, lots of salsa and bun tops. Serve burgers with a few chips alongside.

MAHI MAHI STEAKS WITH MANGO SALSA AND CURRY COUSCOUS

- Preheat grill pan or indoor electric grill to high heat. Squeeze juice of 1 lime over fish. Drizzle steaks with a little oil and rub oil into fish to coat. Season steaks with salt and pepper. Cook steaks 5 minutes on each side on hot grill.
- To assemble salsa, combine all ingredients for salsa in a small bowl.
- To make couscous, bring broth or water to a boil with curry powder, salt, oil, and raisins. Place couscous in a bowl. Add boiling liquid to bowl and cover. Let couscous stand 10 minutes. Fluff couscous with a fork and combine with scallions, carrot, orange pieces, and almonds.
- Top fish with salsa and serve with generous portions of curry couscous.
- Have some gourmet chips on hand for snacking with leftover salsa.
JERKY TURKEY BURGERS WITH PAPAYA SALSA

- Preheat a large nonstick skillet, indoor grill pan or tabletop grill to medium high heat. Combine the turkey, garlic, scallions, ginger, thyme, allspice, nutmeg, salt and pepper in a medium bowl. Form mixture into 4 large patties no more than 1-inch thick. Drizzle the patties with a touch of oil. Place patties in a hot pan or on a hot grill and cook 6 minutes on each side. Squeeze the juice of 1 ripe lime over the patties before removing them from the heat. Place the cooked patties on bun bottoms and top with lettuce leaves.
- Combine the papaya, red bell pepper, red onion, serrano or jalapeno, cilantro and orange juice in a bowl. Season salsa with salt, to your taste. Pile salsa on top of the lettuce resting on cooked patties and add bun tops to the burgers. Serve with Chili Lime Avocados and pineapple wedges.
