1/2 cup pudding or risotto rice ((Arborio rice))
1 cup water
2 cups full-fat milk
1 tsp vanilla extract
2 tsp sugar

Steps:

  • Add the rice and water to a pan and cook on a low to medium heat until all the water is absorbed.
  • Gradually add the milk, one ladleful at a time, and stir continuously until all the milk is used up, and the rice is cooked through. Make sure there is still a bit of liquid left, see the 3rd photo in the collage.
  • Add the sugar and vanilla extract, give it a good stir, then cover the pan with a lid and turn the heat off.
  • Remove the lid after 5 minutes, give it another stir and enjoy!

1 quart whole milk
1 cup arborio rice
2/3 cup sugar
3/4 cup dried currants or 3/4 cup golden raisin, plumped in warm water and drained
1/2 cup irish cream (Bailey's)
butter cookie, for serving

Steps:

  • Preheat the oven to 300°F
  • Butter a 9-inch square baking dish.
  • In a medium saucepan, bring 3 cups milk to a simmer.
  • Add the rice and sugar and stir until the sugar is dissolved.
  • Spread the mixture in the prepared dish, cover loosely with foil and bake for 30 minutes.
  • Stir and continue baking until the rice is tender, about 30 minutes more.
  • Remove from the oven and stir in the remaining 1 cup milk and the currants or golden raisins; let cool.
  • Divide the pudding among 6 whiskey glasses and top with Irish cream.
  • Serve with the cookies.

Steps:

  • In a small saucepan, bring coconut milk to a gentle boil over medium heat
  • Lower the heat, add the rice, peel and cardamom, stir and allow to simmer until thickened slightly, about 5 minutes
  • Stir in the maple syrup and turn off the heat
  • Allow rice pudding to cool and thicken even more before serving
  • If desired, stir in the mashed banana or peanut/almond butter

This creamy, comforting and Classic Rice Pudding recipe is easy to make on the stovetop. It's a cozy, quick-fix snack or dessert that's perfect for chilly afternoons!

1 large egg
1/4 cup (52g) white or light brown sugar
1 tsp vanilla extract
1/8 tsp ground cinnamon
2 cups (480ml) whole milk
1/2 cup (120ml) heavy whipping cream
1/3 cup (65g) short grain white rice (I used arborio)
Pinch of salt

Steps:

  • Whisk together the egg, sugar, vanilla and cinnamon in a small bowl. Set aside.
  • Add the milk, cream, rice and salt to a medium-sized saucepan and bring to a boil over high heat.
  • Once boiling, reduce the heat to low and simmer until the rice is tender, about 20-25 minutes. Stir frequently to keep the rice from sticking to the bottom of the pan.
  • Slowly add about half a cup of the hot rice mixture to the egg mixture, whisking quickly, to temper the egg mixture.
  • Add the egg mixture to the saucepan with the remaining rice mixture. Stir everything together and continue heating on low heat for about another 5-10 minutes, or until thickened. Don't boil. It will thicken quickly. Keep in mind that the mixture will continue to thicken as it cools, so you don't want it to be too thick before you take it off the heat. A touch soupy still is ok.
  • Remove from heat and serve warm.

4 cups full-fat milk (1 litre)

2 eggs, lightly beaten
1 -2 tablespoon butter (optional)
1/2 cup golden raisin (can use more)

Steps:

  • In a heavy-bottomed saucepan stir together sugar with milk, cream, cooked rice, vanilla and cinnamon; bring to a boil uncovered over medium-low heat, stirring often.
  • Reduce the heat to low and cook uncovered, stirring occasionally especially as it thickens for about 15 minutes.
  • Then lightly stir in eggs; continue cooking stirring often until the mixture thickly coats the spoon and the rice is very soft (about 10 minutes).
  • Stir in butter (if using) and raisins.

4 large oranges
For garnish:
1 cup candied almonds (dragée or Jordan) (optional)

Steps:

  • Combine dairy through almonds: To your slow cooker add the milk, heavy cream, almond extract, rice flour, sugar and salt. Whisk well to thoroughly combine the ingredients. Add 1 cup of almonds and stir.
  • Add orange peel to slow cooker: Use a vegetable peeler to remove four thick strips of the zest from 1 orange. Add to the slow cooker and stir.
  • Turn the slow cooker on: Everyone's slow cooker is a little different. If you have an older slow cooker it might take a little longer. You know if your slow cooker runs hot or low, so please plan and adjust the time accordingly. Set the slow cooker on high and cook for 2 to 3 hours or low for 4 to 6.
  • Stir the pudding: Two or three times during cooking, go ahead and stir the slow cooker ingredients making sure nothing sticks to the bottom of the slow cooker.
  • Stir and remove the orange peel: Give the pudding a good stir. If it's soft, creamy and thickened, but still loose it's ready to serve. Remove and discard the orange peels. You can serve rice pudding warm, room temperature or cold. It will continue to thicken as it cools. For a loose consistency serve it warm from the slow cooker (it will be loose, but it shouldn't be watery or soupy, think honey or ketchup), for a thicker consistency serve at room temperature or for the thickest consistency (solid) serve it cold. If it chills and becomes too thick for your tastes, just rewarm on the stove or in the slow cooker and stir in a little milk 1 to 2 tablespoons at a time until it reaches your desired consistency.
