1/2 cup butter, softened
1/3 cup granulated sugar
1/3 cup firmly packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups flour
1 cup milk chocolate chips
1 cup miniature M&M baking bits

Steps:

Preheat oven to 375°.
Cream the butter and sugar.
Add the egg and vanilla; blend well.
In another bowl, mix the flour, salt and baking soda.
Add dry ingredients to the wet ingredients; mix well.
Mix in the chocolate chips and mini M&Ms.
Spoon the dough onto a greased cookie sheet.
Bake for 8-10 minutes or until golden.

One package dry chocolate chip cookie mix (1 pound 1 1/2 ounces), found in the baking aisle
1 cup bittersweet chocolate chunks
4 ounces walnut pieces (about 1 1/4 cups)
7 tablespoons softened unsalted butter
4 tablespoons coffee liqueur, such as Kahlua
3 tablespoons instant espresso or instant coffee crystals
1 tablespoon ground coffee beans
1 large egg, beaten

Steps:

Preheat the oven to 375 degrees F. Place the racks in the center of the oven.
In a mixing bowl, make a well in the center of the chocolate chip cookie mix. Add the chocolate chunks, walnuts, softened butter, Kahlua, instant espresso, ground coffee and egg. Mix well to combine all the ingredients into the cookie dough. Scoop with a small scoop or by heaping tablespoons and drop the dough 2 inches apart on ungreased, nonstick cookie sheets or sheets lined with parchment paper. Chill for 5 to 10 minutes.
Bake the cookies in batches, until set and lightly browned but not crisp, 9 to 11 minutes. Remove from the oven and leave on the cookie sheets for about 5 minutes before transferring to a wire rack to cool before serving.

This recipe was given to me by a former babysitter. These cookies are so good they are addictive! They are slightly crunchy but soft on the inside. I typically freeze half of the dough and keep it in the freezer so I can make these cookies whenever I have a craving!

1 cup butter
1 cup white sugar
1 cup brown sugar (packed)
2 extra large eggs
1/2 teaspoon vanilla
2 cups flour
2 cups oatmeal
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
6 ounces white chocolate chips
6 ounces milk chocolate chips (or semi-sweet)

Steps:

Cream sugars with butter.
Add eggs one at a time.
Add Vanilla.
Sift dry ingredients. Gently add to mixture.
Add chips.
Bake 375 degrees for 8-10 minutes or until edges are light brown. Cool on Rack.
