TONGA TOAST (RAINFOREST CAFE)
We had this when we visited Disneyland...so yummy! Mine came w/o pecans but the last time my friend had this it came with them so it's in the recipe as an option.

Steps:
- Mix the sugar, milk, cinnamon, egg, and vanilla in a shallow pan. ( Another way I've seen this is to leave the sugar and cinnamon out of this step mix them together and then sprinkle them over the toast after it has cooked, whatever sounds good to you, I've done them both).
- Dip each slice of bread, flipping it over to saturate both sides.
- Fry in a frying pan that has been preheated on medium heat with a little butter in the bottom of the pan.
- Brown both sides, remove from heat and garnish each slice of bread with 1/2 a banana and 2-3 strawberries and desired amounts of butter and syrup and nuts -- enjoy.

Steps:
- Season flour with salt and pepper and mix.
- Roll roast in the mixture.
- Heat oil in a Dutch oven.
- Sear roast for 4 minutes on each side until well browned.
- Add ketchup, carrots, yams, onion and garlic.
- Cook for 5 minutes.
- Add beef stock and cover.
- Cook at 300°F (about seven coals underneath and 16 on top).
- Cook for up to 3 hours until beef is tender.

I have had this many times at the Rainforest Cafe and finally have decided to try and copycat it. Well, I finally think that I have. It is alot of ice cream, brownie, and sauces, but it is ohhhh sooooo goooodddd.....

Steps:
- On a chilled large round plate or platter arrange the scoops of ice cream so that they make a pile in the center of the plate.
- You may use more ice cream or less, up to you.
- Next, arrange the brownies along the sides of the ice cream so that it looks like a volcano shape.
- Next, drizzle the top and down the sides with the 2 sauces.
- Finally, add the whipped cream directly down the center of the volcano and then all over the sides.
- Drizzle with more sauce and stick a sparkler or streamer in the middle.
- Make sure you yell VOLCANO when you serve it.

- Place half of the onions in a 5-qt. slow cooker. Top with garlic and half of the beef. Top with remaining onion and beef. Combine coffee and soy sauce; pour over beef. Cover and cook on low until meat is tender, 9-10 hours. , Combine cornstarch and water until smooth; stir into cooking juices. Cover and cook on high until gravy is thickened, 30 minutes.

- Preheat oven to 350 degrees F.
- Heat the oil in a large pan over medium-high heat. Brown the meat on all sides and remove the meat to a roasting pan.
- Pour the wine around the meat. Sauté the cut vegetables until golden brown and add to the roasting pan. Pour the beef bouillon into the pan. Pour liquid over the roast and cover.
- Bake for 30 to 45 minutes per pound.
- Remove from oven and let rest for 15 minutes.

RAINFOREST CAFE COPYCAT STRAWBERRY LEMONADE RECIPE
Steps:
- In a small sauce pan put in your strawberries, sugar, 1 cup of water and a rind of 1 of the lemons.
- Stirring constantly, cook on medium high heat until it boils. Remove from stove once it starts boiling.
- Pour the strawberry mixture in a pitcher.
- Mix in 5 more cups of water and add your lemon juice. Stir until well combined.
- Taste and add any more sugar, water or lemon juice if needed.
- Put in the refrigerator and serve cold.
