1/2 lb bacon, cut into small pieces
3 tablespoons butter
1 cup chopped onion (2 medium)
1/4 cup Gold Medal™ all-purpose flour
1 1/2 cups Progresso™ chicken broth (from 32-oz carton)
1 cup half-and-half
1 package (1 oz) ranch dressing and seasoning mix (milk recipe)
2 cups shredded Cheddar cheese (8 oz)
1 bag (26 oz) frozen shredded hash brown potatoes
1/2 cup sour cream
3 cups Whole Grain Total® cereal
2 tablespoons butter, melted

Steps:

  • Heat oven to 350°F. In 10-inch skillet, cook bacon over medium heat until crisp. Remove bacon from skillet to paper towel- lined plate to drain. Set aside.
  • In 4-quart Dutch oven, melt 3 tablespoons butter. Add onions; cook about 5 minutes, stirring occasionally, until soft and translucent. Stir in flour; cook and stir 1 minute.
  • In 4-cup measuring cup, mix broth and half-and-half. Gradually add broth mixture to onion mixture, cooking and stirring with whisk about 3 minutes or until mixture begins to thicken. Stir in dressing mix and cheese; cook until cheese is melted. Add frozen potatoes; cook and stir 2 to 3 minutes or until potatoes begin to thaw. Stir in sour cream and reserved bacon. Pour into ungreased 13x9-inch (3-quart) glass baking dish.
  • Top mixture evenly with cereal. Drizzle 2 tablespoons melted butter over top.
  • Bake 30 minutes. If cereal begins to get too brown, cover baking dish with foil.

3/4 pound bacon (cooked and crumbled)
2 cups breakfast potatoes (cooked {I used frozen hash browns & prepared according to package directions})
1 pie crust
4 eggs
1 cup milk or half and half
3 tablespoons ranch seasoning
1 cup Monterey Jack cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Roll out pie crust and place into pie pan.
  • Cook bacon and roughly chop into crumbles, set aside.
  • Cook hash browns or breakfast potatoes. I used frozen hash browns and just prepared them according to package directions; cooking over the stovetop for 7 minutes, set aside.
  • In a large mixing bowl whisk together milk, eggs, and 3 tablespoons ranch seasoning.
  • Add potatoes, bacon, and cheese into the egg mixture and pour into pie crust.
  • Sprinkle remaining ranch seasoning over the top of the quiche.
  • Place in preheated oven and bake for 15 minutes. Then reduce heat, leaving the pie in the oven to 350 degrees F (175 degrees C) and bake for an additional 35 minutes. When it is done the top of the quiche will begin to turn a nice golden brown.
  • Remove from oven and allow to sit 5-10 minutes before slicing & serving.

1 cup milk or half-n-half
1 large russet potato (, diced small and parboiled or 1 (15-ounce) can diced potatoes, drained)

2 green onions (, sliced)
1/8 cup onion (, diced)
2 tablespoons fresh parsley (, minced)
1/2 teaspoon ground cayenne pepper [See Note 1]
1/4 teaspoon smoked paprika [See Note 2]
1/2 cup shredded cheddar cheese
Kosher salt/pepper

Steps:

  • Preheat oven to 350 degrees F
  • In a deep pie pan, roll out pie crust to cover pan with 1/4 inch excess, rolled down to form an edge.
  • In a skillet brown bacon to desired doneness, drain on paper towels reserving 1-2 tablespoons grease.
  • Add potatoes to bacon grease, brown on all sides add onions, salt & pepper to taste and cayenne pepper (optional).
  • Layer potato/onion mixture then meat, parsley, cheese into pie plate, spread evenly to make sure all surface is even.
  • Whisk eggs with milk or half-n-half, pour over mixture, tilting pan, if necessary, to fill all space.
  • Place pie in preheated oven, bake for 30 to 45 minutes or until eggs are set and cheese is golden brown.

6 slices smoked bacon
1 onion, diced
1 stalk celery, diced
1 (32 ounce) carton low-sodium chicken broth
10 potatoes, peeled and cubed
4 teaspoons all-purpose flour
1 (1 ounce) package ranch dressing mix
2 cups half-and-half cream
1 cup sour cream
salt and pepper to taste
2 cups shredded Cheddar cheese
¼ cup chopped green onion

Steps:

  • Place the bacon in a large Dutch oven and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate, crumble and reserve for topping.
  • Cook and stir the onions and celery in the bacon drippings until tender, 5 to 10 minutes. Add chicken broth and potatoes, and bring to a boil over high heat. Reduce heat to medium-low and simmer until potatoes are fork-tender. Remove from heat and mash about 1/3 of the potatoes.
  • In a large bowl, combine flour and dry ranch mix. Whisk in the half-and-half and sour cream, beating well to combine thoroughly. Slowly whisk the sour cream mixture into the soup. Gently heat soup over medium heat to warm, do not boil. Season the soup with salt and pepper. To serve, top each bowl of soup with a sprinkle of bacon crumbles, Cheddar cheese and green onion.

6 cups mashed potatoes (prepared with milk and butter)
1 cup 4% cottage cheese
1/2 cup whole milk
1 medium onion, finely chopped
2 tablespoons ranch salad dressing mix
1 pound sliced bacon, cooked and crumbled
2 cups shredded Monterey Jack cheese
1 cup crushed butter-flavored crackers (about 25 crackers)
1/4 cup butter, melted

Steps:

  • In a large bowl, combine the potatoes, cottage cheese, milk, onion and dressing mix. Spread in a greased 3-qt. baking dish. Top with bacon and cheese. Combine cracker crumbs and butter; sprinkle over top. , Bake, uncovered, at 350° for 35-40 minutes or until bubbly.

1/3 cup KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
1/3 cup milk
1 Tbsp. finely chopped fresh rosemary

Steps:

  • Heat oven to 400ºF.
  • Press pastry onto bottom and up side of 9-inch pie plate sprayed with cooking spray; trim edge.
  • Layer potatoes, bacon and cheese in crust.
  • Whisk remaining ingredients until blended; pour over ingredients in crust.
  • Bake 30 min. or until knife inserted in center comes out clean. Let stand 10 min. before cutting to serve.
