These chicken fritters are delicious on their own but outstanding with a chicken dipping sauce. Finger food at its best!

Steps:
- Mix chicken, bread crumbs, onion, mozzarella cheese, egg, mayonnaise, salt, pepper, and garlic powder in a bowl until well combined. Shape mixture into 8 equal-sized patties.
- Heat oil in a large skillet. Fry patties until lightly browned, about 5 minutes. Flip and fry for an additional 3 to 5 minutes. Transfer fritters to a paper towel-lined plate.

OVEN-FRIED RANCH CHICKEN

Steps:
- Whisk the buttermilk, mayonnaise, half of the thyme, 1 teaspoon paprika, the onion and garlic powders, cayenne and 1 teaspoon salt in a large bowl. Add the chicken and toss to coat; cover and refrigerate at least 3 hours or overnight.
- Position racks in the upper and lower thirds of the oven and preheat the oven to 400 degrees F. Line 2 baking sheets with aluminum foil and set a wire rack on each; coat the racks with cooking spray. Combine the breadcrumbs, chives, the remaining thyme and 1/2 teaspoon paprika, 1 teaspoon salt and 1/2 teaspoon black pepper in a shallow bowl.
- Remove the chicken from the marinade and dredge in the breadcrumb mixture, pressing to adhere. Put the white meat on one wire rack and the dark meat on the other rack, skin-side up. Coat the chicken with cooking spray. Transfer to the oven, placing the dark meat on the bottom oven rack; bake until the crust is golden and a thermometer inserted into the thickest part of the meat registers 165 degrees F, 50 to 55 minutes. Let cool slightly on the wire racks, 10 minutes. Season with salt.
HIDDEN VALLEY RANCH FRIED CHICKEN
Steps:
- Place chicken pieces in shallow baking dish. Pour salad dressing over the chicken to cover. Chill covered for at least 1 hour.
- Remove chicken from the dish. Shake off any excess marinade. Discard any leftover marinade. On a large plate, mix flour, salt
- and pepper. Roll each piece of chicken in the seasoned flour.
- In a large deep skillet, heat the oil to 375 degrees F. Fry the chicken for 5 to 7 minutes on each side until golden and juices run clear.
RANCH CHICKEN TENDERS
Chicken seasoned with dry ranch mix, then breaded and baked, makes for some tasty tenders! For a more intense ranch flavor, serve with additional ranch dressing for dipping.

- Preheat the oven to 350 degrees F (175 degrees C). Place butter in 9x13-inch baking dish and let melt in the preheating oven.
- Slice chicken breast against the grain into thin strips.
- Place ranch dressing mix in a small bowl. Whisk egg and milk together in a second bowl. Place bread crumbs in a third bowl.
- Dredge each chicken strip in ranch dressing mix, then coat in egg mixture and cover with bread crumbs; arrange in the prepared baking dish.
- Bake in the preheated oven for 15 minutes. Gently turn chicken pieces over and bake until an instant-read thermometer inserted into the center reads 165 degrees F (74 degrees C), about 15 minutes longer.

- Heat oven to 400°F. Spray cookie sheet with cooking spray.
- Pour buttermilk into shallow glass or plastic bowl. Add chicken; turn to coat. Let stand 5 minutes.
- Meanwhile, in 2-quart resealable food-storage plastic bag, crush cereal with rolling pin. Add Bisquick mix and dressing mix (dry) to cereal in bag. Remove chicken from buttermilk; discard buttermilk. Add chicken to cereal mixture. Seal bag; shake to coat.
- Place chicken on cookie sheet. Spray with cooking spray. Bake 45 to 50 minutes or until juice of chicken is clear when center of thickest part is cut (170°F).

Ready, Set, Cook! Hidden Valley Contest Entry. Hot and yummy Chicken and Ranch fritters. Chicken and Hidden Valley Ranch Dressing go hand in hand together like an old married couple. My grandmother used to make tuna fritters that I enjoyed as a child so the idea came from those days from long ago. I use a cookie scoop and I don't fry too many fritters at once.

- In a large mixing bowl combine the flour, cornmeal, breadcrumbs,Hidden Vally Original Ranch Mix and baking soda. Gently stir in the egg yolks, buttermilk and melted butter, Add chopped chives, shredded chicken and roasted peppers.
- Beat egg whites until stiff peaks form, gently fold into the batter. Heat canola oil in a dutch oven or large deep pot to 350*F. Drop batter using a cookie scoop or a well rounded tablespoon into the hot oil. Cook 6 at a time. Fry for 3-4 minutes or until golden brown turning once. Drain Fritters on a paper towel.
- In a small mixing bowl combine the mayonnaise, yogurt, Hidden Valley Original Ranch Mix, Parmesan and Dijon mustard. Serve with hot fritters.
