Years ago, I discovered this handwritten recipe on a note card and decided to give it a try. It's deliciously different from the usual green bean casserole and quickly became a favorite. -Carol Conn, Aurora, Colorado

1-1/4 pounds fresh green beans, trimmed
2 tablespoons butter
1-1/2 cups sliced fresh mushrooms
1 medium onion, chopped
2 garlic cloves, minced
2 tablespoons all-purpose flour
1-1/2 cups 2% milk
2 tablespoons ranch salad dressing mix
1/4 teaspoon white pepper
1/4 cup soft bread crumbs, toasted

Steps:

  • Place green beans in a Dutch oven; add water to cover. Bring to a boil. Cook, uncovered, 3-4 minutes or just until tender. Drain. , Meanwhile, in a large skillet, heat butter over medium-high heat. Add mushrooms and onion; cook and stir 3-4 minutes or until tender. Add garlic; cook 1 minute longer., In a small bowl, whisk flour and 2 tablespoons milk until smooth. , Whisk in remaining milk; stir into mushroom mixture. Bring to a boil, stirring constantly. Cook and stir for 2 minutes. Stir in salad dressing mix and pepper. Add beans; heat through. Transfer to a serving bowl; sprinkle with bread crumbs.,

1 cup sour cream
1/2 cup buttermilk
1 to 2 teaspoons wasabi paste
2 to 3 tablespoons finely chopped fresh chives
Salt and pepper
1 1/4 to 1 1/2 pounds green beans
Frying oil
1 cup flour
1 1/2 teaspoons baking powder
1 tablespoon granulated onion
1 tablespoon granulated garlic
2 large eggs, beaten

Steps:

  • Combine the sour cream, buttermilk, wasabi, chives and season with salt and pepper. Reserve.
  • Bring a few inches of water to a boil, salt it and cook the green beans, 2 minutes. Remove, cold shock in an ice bath, drain and dry on a kitchen towel.
  • Meanwhile, heat a few inches of oil over medium to medium-high heat. Combine 1 cup water, the flour, baking powder, onion, garlic and eggs in a bowl to form a batter. Dip the beans in the batter, a dozen at a time, and fry them up in batches. Cool on a cooling rack. Sprinkle with salt while hot.
  • Serve the fried beans with the wasabi dipper.

1 package (16 ounces) dried pinto beans
1 quart water
1 can (6 ounces) tomato paste
1/2 cup chopped onion
1 garlic clove, minced
1 to 2 tablespoons chili powder
2 to 3 teaspoons crushed red pepper flakes
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon dried marjoram

Steps:

  • Place beans in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain, discarding liquid. Return beans to pan; add 1 qt. water. Bring to boil. Reduce heat; cover and simmer for 1-1/4 to 1-1/2 hours or until beans are tender. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer 1-1/2 hours longer.

1 (15 ounce) can baked pork and beans
1 (14 ounce) can butter beans, drained
6 slices bacon
1 medium onion, peeled, chopped coarsely
1/2 medium green pepper, seeded, deveined, and cut into 1/2-inch slices
1 (3 1/2 ounce) jar sliced mushrooms, drained
1/2 cup ketchup
1/4 cup mild mustard (French's yellow mustard is good)
2/3 cup maple syrup (or maple flavored syrup)
1 teaspoon dried oregano
6 whole cloves
1 bay leaf

Steps:

  • Cut bacon slices into 3 or 4 pieces each. Put in large saucepan and begin to cook until some fat is rendered. Add the sliced green pepper and chopped onion. Cook until onion begins to glaze and bacon is cooked, but not crisp.
  • Add all the other ingredients. Stir until hot and serve. Un-used portions can be frozen.

1 cup all-purpose flour
¾ cup Buffalo sauce, divided
2 eggs
1 cup panko bread crumbs
2 (1 ounce) packages ranch dressing mix
1 pound green beans, stem ends trimmed, rinsed

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with foil and grease with nonstick spray.
  • Place flour in a shallow bowl. Whisk 1/2 cup Buffalo sauce and eggs together in a small mixing bowl. Combine bread crumbs and ranch mix in a third bowl.
  • Dredge green beans in flour, dip in the egg mixture, then coat with the bread crumbs. Set out on the prepared baking sheet.
  • Roast in the preheated oven until golden brown, about 12 minutes. Serve immediately with remaining Buffalo sauce for dipping.
