My family prefers oven-fried chicken to the deep-fried variety. Creamy ranch dressing makes this wonderfully crunchy chicken tender and juicy.

1/2 cup dry bread crumbs
1/4 cup grated parmesan cheese
2 tablespoons yellow cornmeal
1/2 teaspoon Italian seasoning
6 bone-in chicken thighs (about 2-1/4 pounds), skin removed
1/2 cup ranch salad dressing

Steps:

  • In a shallow bowl or large resealable plastic bag, combine crumbs, Parmesan cheese, cornmeal and Italian seasoning. Dip chicken in salad dressing, then coat with crumb mixture. , Place in a greased 13-in. x 9-in. baking dish. Bake, uncovered, at 375° for 45-50 minutes or until juices run clear.

½ cup dry bread crumbs
¼ cup grated Parmesan cheese
2 tablespoons yellow cornmeal
½ teaspoon Italian seasoning
½ cup ranch dressing
3 skinless, boneless chicken thighs
3 skinless, boneless chicken breasts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Combine bread crumbs, Parmesan cheese, yellow cornmeal, and Italian seasoning in a shallow dish. Pour ranch dressing in a separate shallow bowl.
  • Dip chicken thighs and chicken breasts in ranch dressing to coat; press into the bread crumb mixture to coat both sides. Arrange chicken pieces in the prepared baking dish.
  • Cook chicken until no longer pink in the center and the juices run clear, 45 to 50 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
