RASPBERRY CORDIAL
Preserve the flavours of a batch of raspberries in this refreshing concentrated drink - delicious with soda on ice

Steps:
- Put the raspberries in a pan with the sugar and vinegar. Mash over a low heat for 10 mins until smooth and syrupy. Rub through a sieve into a clean pan.
- Tip the seeds from the sieve into a bowl and stir in 300ml water, then sieve again to remove the last of the pulp from seeds. Pour the liquid into the pan with the sieved pulp, stir well and boil for 1 min. Pour into small sterilised bottles and seal. The cordial will keep unopened for a few months. Once opened, store in the fridge.

This kid friendly raspberry cordial allows you and your child the opportunity to create a non-alcoholic raspberry beverage. This bonding opportunity begins at harvesting the berries and progresses to creating this delightful sipper. An amazing opportunity to create memories for all involved.

Steps:
- Wash fresh raspberries well, removing any stems or leaves
- In a large non-reactive bowl add raspberries and lemon juice. Gently folding in the raspberries until they are coated with the lemon juice.
- Bring to boil the water and sugar. Allow the liquid to boil until the sugars is completely dissolved.
- Remove the sugar water from heat, gently pour the liquid over the raspberries. Allow the mixture to cool to room temperature.
- Once thorough cooled, cover the bowl and place into the refrigerator for 24 hours.
- Using a fine sieve and bottle funnel strain the raspberries from the liquid into a mason jar or swing top bottle. Reserve the sweetened berries into a separate bowl.
- Once bottled store the kid friendly cordial into the refrigerator.
- Prepare the raspberry juice concentrate as instructed.
- Using a fine mesh sieve, strain the berry from the liquid into clean pint size mason jars. It is important to only can the liquid, adding a coffee filter will help to ensure no berries enter the juice concentrate.
- Wipe jar rim with a clean, damp dishtowel, add warmed lids, and rings to finger tight.Process in a steam canner or hot water bath canner based on your altitude, see chart in article.

RASPBERRY CORDIAL
Raspberry Cordial is a sweet and tart drink made with fresh raspberries. You can drink it alone or add it to some soda water for a sparkling treat!

- Combine raspberries and sugar in a saucepan.
- Cook on medium-high heat until all the sugar has dissolved, about 20 minutes. Mash any remaining berry pieces.
- Pour the mixture through a fine mesh strainer. Strain twice if you want to ensure no pulp gets through. Add the lemon juice from two of the lemons.
- Boil the water, and then add it to the raspberry syrup in a large pitcher. Let the mixture cool, and then chill it all the way in the fridge.
- When you are ready to serve, slice the remaining lemon. Pour cordial into glasses and top with a lemon slice.
