BLACKBERRY-LIME GIN AND TONIC ICE POPS
For the adults, this is a dessert and after-dinner drink all rolled into one. This recipe makes enough for large ice pop molds. It's tempting to add more gin but keep in mind that they will not freeze properly if you do. These are sure to be a hit at your next barbecue!

Steps:
- Combine tonic water and sugar in a small saucepan and bring to a boil over medium-high heat. Boil for 2 minutes and remove from heat. Stir in gin and let cool while you assemble the ice pops.
- Cut lime into 6 slices. Cut each slice in half. Place 2 pieces of lime in each mold. Evenly divide berries among the molds.
- Pour tonic water mixture into the molds through a funnel, leaving a 1/2-inch space on the top. Freeze for 8 hours, or overnight.

Steps:
- Place a small fine strainer over a highball glass. Press raspberries through the strainer into glass; discard solids. Add truvia and lime juice; stir to dissolve. Add ice cubes to glass. Add gin and tonic water; stir to combine. Serve garnished with a lime wedge.
GRILLED GIN AND TONIC
Steps:
- For the mint simple syrup: Combine the sugar and 1/2 cup water in a small saucepan over medium heat. When the sugar dissolves, turn off the heat, add the mint sprigs and let cool. Strain into a clean jar. Can be stored in the refrigerator for a week.
- For the gin and tonic: Heat a grill pan and grill the lime slices on both sides, just until it gets nice grill marks but is still firm.
- Cut 1 lime slice into pieces and put it into the bottom of a cocktail shaker or mixing glass along with the chopped cucumber, bitters and 1 tablespoon mint simple syrup. Muddle to mash all the solids. Add ice to the glass and pour over the gin. Shake or stir to get the gin cold. Strain into a martini glass (or over ice in a tall glass) and top with a splash of tonic water. Garnish with the grilled lime slice and cucumber spear.
