Steps:
- Put your glasses in the freezer if possible, or at least the fridge so that they are cold.
- Put the raspberries on a plate; separated from each other and place in the freezer at least 15 minutes before serving time.
- Gently 'smush' a couple of small mint leaves and add to each glass along with 5-6 of the frozen raspberry ice cubes.
- Add limoncello, then the sparkling wine or water.

RASPBERRY BASIL LIMONCELLO COCKTAIL
Steps:
- Combine the raspberries, basil, lemons and simple syrup in a small pitcher and muddle until the raspberries are mashed. Add the Limoncello and vodka. Let chill in the refrigerator for 30 minutes to allow the flavors to meld.
- Put crushed ice into rocks glasses and add some of the raspberry mixture. Fill to the top with sparkling wine. Garnish with lemon and raspberries and basil sprigs if desired.
