Coconut oil cooking spray, for spraying the muffin tin
2 tablespoons granulated sugar, plus more for dusting the muffin tin
6 ounces semisweet chocolate
6 tablespoons unrefined coconut oil
1/3 cup all-purpose flour
1/8 teaspoon (pinch) fine salt
2 large eggs plus 2 large egg yolks
2 teaspoons red gel food coloring
3 ounces cream cheese, at room temperature
1 1/2 teaspoons vanilla extract
Powdered sugar, for dusting

Steps:

  • Preheat the oven to 425 degrees F. Spray 6 cups of a standard muffin tin with the cooking spray, sprinkle with granulated sugar to cover the entire cup and dust off any excess. This will prevent the lava cakes from sticking. Set aside.
  • Melt the chocolate and coconut oil together in a double boiler, 5 to 7 minutes. Remove from the heat, add the flour and salt and stir until combined. Whisk the eggs and egg yolks together in a small bowl and slowly add to the chocolate mixture. Stir in 1 teaspoon of the red food coloring.
  • In a small bowl, beat together the cream cheese, granulated sugar, vanilla extract and remaining 1 teaspoon red food coloring. Spoon the filling mixture into a disposable pastry or icing bag and make a small cut when ready to fill.
  • Using a heaping 1/4-cup scoop, divide the lava cake mixture among the prepared muffin cups. Fill the centers with about 1 1/2 tablespoons of the cream cheese mixture. Bake until the edges are firm but the centers are not set, 9 to 11 minutes. Cool for 2 to 3 minutes, invert and sprinkle with powdered sugar. Serve immediately. (To make ahead, bake for 8 minutes, invert and rewarm in the microwave for 1 minute. Dust with powdered sugar.)

2 tablespoons granulated sugar
¼ cup heavy cream
1 ¼ cups dark chocolate chip, divided
2 large eggs
2 large egg yolks
⅓ cup light brown sugar
½ teaspoon kosher salt
1 teaspoon vanilla extract
2 tablespoons all purpose flour
1 cup whipped cream, for serving
1 cup fresh berries, for serving

Steps:

  • Coat the inside of 4 1-cup (125 G) ramekins with softened butter, then sprinkle with the granulated sugar, tilting to coat completely. Set aside on a rimmed baking sheet.
  • Heat the heavy cream in a small pot until boiling.
  • Pour the boiling cream over ½ cup (120 ml) dark chocolate in a small bowl and let sit for 3 minutes. Stir until the chocolate is melted and smooth. Refrigerate for at least 30 minutes, or store in the freezer for up to 3 months.
  • Preheat the oven to 425°F (220°C).
  • In a small microwave-safe bowl, combine the remaining ¾ cup (170 G) chocolate and the butter. Microwave in 30-second intervals, stirring between, until completely melted.
  • In a medium bowl, beat the eggs, egg yolks, brown sugar, salt, and vanilla with an electric hand mixer on medium-high speed until light and frothy, about 8 minutes.
  • Gently fold the chocolate mixture into the egg mixture, being careful not to deflate the eggs. Add the flour and fold to incorporate.
  • Divide half of the batter between the prepared ramekins. Add ½ tablespoon of the chilled ganache to the center of each ramekin, then scoop the remaining batter on top.
  • Bake for 12 minutes, until the tops are set and the cakes begin to pull away from the sides of the ramekins.
  • Let the lava cakes cool slightly, then invert onto plates. Dust with powdered sugar and garnish with berries. Serve immediately.

5 oz white chocolate
½ cup butter, melted, hot
2 eggs
2 egg yolks

4 ramekins, oven safe

Steps:

  • In a microwave-safe bowl, microwave the raspberry jam for one minute.
  • Add the white chocolate and stir until smooth. Freeze one hour.
  • In a mixing bowl, add the white chocolate and hot melted butter. Mix to combine.
  • Add the eggs, egg yolks, sugar, and flour, and whisk to combine thoroughly after each addition.
  • Preheat your oven to 350ºF (180ºC).
  • Coat the inside of the ramekins with butter and then add approximately one teaspoon of flour, moving it around so that it coats the inside completely. Discard excess flour.
  • Fill your ramekins about ¾ of the way with cake batter, then add a tablespoon of your raspberry mixture. Fill to the top with remaining batter.
  • Place the ramekins on a sheet pan and bake at 350ºF (180ºC) for 15-18 minutes, until the lava cakes are no longer jiggly in the middle.
  • Run a knife along the edges of the ramekin to loosen and invert onto a plate.
  • Serve warm with ice cream.

2 drops white food coloring

1 pinch kosher salt
¼ cup all purpose flour

Steps:

  • Preheat the oven to 425°F (220°C). Coat 6 4-ounce ramekins with butter and dust with cocoa powder, tapping out any excess.
  • Make the raspberry filling: In a small bowl, combine the raspberry jam, white food coloring, red food coloring, and rose water. Transfer the filling to a piping bag and set aside until ready to use.
  • Make the cake: Fill a small pot a third of the way with water and bring to a simmer. Add the butter and chocolate chips to a metal bowl large enough to fit over the pot and place over the simmering water, making sure the water is not touching the bottom of the bowl.   • Gently fold the cooled chocolate mixture into the egg mixture with a rubber spatula until just incorporated. Sift the flour into the batter and fold until incorporated.
  • Place the prepared ramekins on a rimmed baking sheet. Divide the batter between the ramekins, filling each just under halfway. Reserve enough batter to top each ramekin off after adding the filling.

1 teaspoon vegetable shortening (such as Crisco®)
1 tablespoon all-purpose flour, or as needed
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 ¼ cups white sugar
½ cup unsalted butter, softened
3 large eggs
1 teaspoon vanilla extract
⅔ cup milk
1 cup fresh raspberries, divided
1 (16 ounce) container cream cheese frosting, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease the entire bottom and sides of a 9-inch cake pan with shortening on a paper towel. Shake 1 tablespoon flour onto the pan until shortening is covered; turn pan over and lightly tap the bottom to remove excess flour.
  • Sift 2 cups flour, baking powder, and salt together in a medium bowl.
  • Cream sugar and butter together in a separate large bowl. Add eggs, 1 at a time, mixing thoroughly after each addition. Add vanilla extract and mix for 2 minutes. Add 1/2 of the flour mixture and mix thoroughly. Mix in milk. Mix in remaining flour mixture. 8 oz cookie dough, prepared
1 carton Tasty® Raspberry White Chocolate Lava Cake Ice Cream
10 oz white chocolate chip
2 ½ tablespoons coconut oil
2 tablespoons freeze-dried strawberry, crushed into a powder and sifted to remove seeds
3 oz graham cracker, cut into 2 in (5 cm) squared
1 cup heavy whipping cream
1 tablespoon powdered sugar
12 fresh raspberries
12 fresh mint leaves
Tasty® 12-cup nonstick brownie pan

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Lightly grease the brownie pan with nonstick spray. Using your fingers, press a cookie dough square into each of the cups, making sure that the dough completely covers the bottom of the cup and comes up the sides slightly.
  • Bake for 10 minutes, until the cookie dough is golden brown and cooked through. Let the cookie squares cool completely in the pan, about 20 minutes.
  • While the cookies cool, take the ice cream out of the freezer to soften.
  • Spread 1 heaping tablespoon of softened ice cream on top of each cooled cookie square. Freeze for 1 hour.
  • Make the magic shell: In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until smooth and all of the chips are completely melted. Stir in the freeze-dried strawberry powder.
  • Line a baking sheet with parchment paper and set a wire rack on top. Pop the ice cream bars out of the pan and set on the wire rack.
  • Top each ice cream square with a graham cracker square, pressing down to adhere.
  • Coat each ice cream bar with 2 tablespoons of the magic shell. Return to freezer for 20 minutes, until set.
  • Meanwhile, make the whipped cream: In a medium bowl combine the heavy cream and powdered sugar. Beat with an electric hand mixer for 4-6 minutes, until medium peaks form.
  • Top each ice cream bar with 2 tablespoons of whipped cream, a raspberry, and a mint leaf.
