⅔ cup water
⅔ cup white sugar
1 cup raspberries

Steps:

  • Bring water and sugar to a boil in small saucepan, stirring occasionally, until sugar is dissolved, 5 to 10 minutes. Remove saucepan from heat and stir in raspberries. Mash mixture using a potato masher or fork. Let mixture steep for at least 1 hour.
  • Drain mixture through a fine mesh strainer, pressing raspberry pulp with a spatula to extract as much liquid as possible. Discard solids and store syrup in a sealed container in the refrigerator.

6 cups raspberries
3/4 cup sugar
1/2 cup water

Steps:

  • Combine raspberries, sugar, and water in a medium saucepan over medium-high heat. Cook, stirring occasionally, until raspberries break down slightly and release some of their juice, about 6 minutes. Remove from heat; let stand for 15 minutes. Strain mixture through a fine sieve, pressing down on solids to extract as much liquid as possible. Refrigerate for at least 1 hour.

1 cup granulated sugar or sugar alternative for sugar free option
12 ounce fresh raspberries, rinsed

Steps:

  • In a small saucepan add water and sugar and cook on medium-high heat until sweetener dissolves. Add raspberries and bring to a boil. Lower heat to simmer and remove any foam that forms over the raspberries. Simmer for 25 minutes. Remove from heat and strain syrup over a clean bowl. Discard fruit (most of the bright red color will be transferred to the syrup). Clean the saucepan or use another and place the red syrup back in the pan. Simmer for an additional 15 minutes. Cool and strain into clean jars. Keep in refrigerator for up to 1 week.

Learn how to make Homemade Raspberry Simple Syrup at home, no preservatives. Add to cocktails, mocktails, or pour it over pancakes and waffles!

2 lbs raspberries
1 quart water ((4 cups))
2 cups sugar

Steps:

  • Rinse the raspberries clean.
  • Place the raspberries in a medium saucepan.
  • Cover with water and bring to a boil. Reduce to a medium simmer and let the raspberries cook for about 20 minutes. Skim any foam that rises to the top.
  • After about 20 minutes, the raspberries will have lost most of their color and the water should be deep pink/red in color. Remove from heat. Strain the raspberry liquid through a fine mesh strainer into another clean pot, separating the solid berries from the liquid. DO NOT press down on the solids to extract more juice; it's tempting, but doing this will make your raspberry syrup cloudy.
  • Once the raspberry liquid has been strained, discard the solid berries. Add 2 cups of sugar to the raspberry liquid. Bring back to a boil, stirring frequently to dissolve the sugar into the syrup. Let the syrup simmer for 5 minutes till the sugar is completely dissolved, skimming any additional foam that rises to the top.
  • Remove from heat and allow to cool completely. Pour into a glass container, seal, and refrigerate. The syrup should last for several weeks.

Use this classic raspberry syrup recipe to make pre-Prohibition cocktails-or new refreshing drinks. It's easy and quick to make at home with fresh fruit.

Number Of Ingredients 2

1½ cups raspberries (about 1 6-oz. container)
2 cups (400 g) granulated sugar

Steps:

  • Blend 1½ cups raspberries with 1 cup water in a blender until puréed, about 45 seconds.
  • Add purée to a small saucepan over medium heat and cook until mixture begins to boil. Immediately reduce heat to low and continue to cook, stirring frequently, for 7 minutes. Remove from heat and allow to cool for 5 minutes. Rinse out blender jar.
  • Strain purée through a tea strainer or chinois (cheesecloth optional) into a heatsafe liquid measuring cup, stirring and pressing on solids, until you have 1 cup raspberry juice. Discard any excess. Transfer raspberry juice to blender, add 2 cups granulated sugar, and blend until well mixed and sugar is completely dissolved, about 1½ minutes.
  • Transfer mixture to a clean, resealable glass jar and refrigerate until chilled. Shake jar before using. Raspberry syrup will keep 2 weeks in the refrigerator-or you can freeze it for several months.

2.5 ounces (5 tablespoons) bourbon, such as Bulleit Bourbon
3 ounces (6 tablespoons) lemon juice, chilled

Steps:

  • Make the raspberry syrup: In a small saucepan, combine the sugar, water and raspberries. Bring to a simmer and then remove from the heat. Stir until the sugar dissolves. Strain the syrup, pushing the pulp of the berries through but leaving behind the seeds. Discard the seeds. Chill the syrup at least 30 minutes and up to 24 hours.
  • Get ready: Prepare a cocktail shaker with a fitted lid. On 2 small cocktail skewers, skewer 3 raspberries on each and set aside.
  • Make the cocktail: In a cocktail shaker filled with ice, add the bourbon, lemon juice and 4 ounces of the raspberry syrup. Shake until chilled.
  • Serve: Add a few ice cubes into two glasses and pour half of the cocktail into each. Garnish with the raspberry skewers.
