SOUTHWESTERN SALSA AND SPICY CORN CHIPS



Southwestern Salsa and Spicy Corn Chips image

1 (24-ounce) jar chunky salsa
3 tablespoons chopped fresh cilantro leaves
3 scallions, white and green parts, chopped
2 teaspoons Southwestern dry marinade mix (from a packet)
1 (18-ounce) bag restaurant-style tortilla chips
Vegetable oil cooking spray
1 (1.25-ounce) packet Tex-Mex taco seasoning

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl, combine salsa, cilantro, scallion, and Southwestern marinade mix. Set aside.
  • Working in batches, pour a single layer of chips on baking sheet. Very lightly coat with vegetable oil spray. Lightly sprinkle with taco seasoning. Bake for 5 minutes. Repeat until all chips are seasoned.
  • Serve chips on a large platter with a bowl of the Southwestern Salsa.

2 cups corn, nibs
1 small zucchini (about 6-inch)
1 small jalapeno pepper
2 garlic cloves (I used garlic power)
1/4 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 cup ground flax seeds

Steps:

  • Blend all ingredients in a blender until smooth.
  • Spread on dehydrator sheets covered with paraflexx and dehydrate for 1-2 hours at 125 degrees.
  • Turn over onto mesh trays and score with knife and continue dehydrating overnight.

4 low-fat corn tortillas (6 inch)
1/8 teaspoon salt (or sodium-free seasoning of choice)
nonstick cooking spray

Steps:

  • Preheat oven to 400 degrees F.
  • In cup, mix cumin, chili powder, and salt.
  • Spray 1 side of each tortilla with cooking spray, sprinkle with chili powder mixture.
  • Cut each tortilla into 8 wedges and place on ungreased large non-stick cookie sheet.
  • Bake tortillas 8 to 10 minutes until crisp, cool on wire rack.
  • If not serving right away, store in tightly covered container.

5 ears corn, shucked
1 tablespoon canola oil, plus more for brushing
1 medium red onion, diced
1 red bell pepper, seeded and diced
1 poblano pepper, seeded and diced
2 scallions, thinly sliced, white and light green parts separated from dark green parts
3 cloves garlic, roughly chopped
1 bottle Frank's® Buffalo Ranch Thick Sauce, divided
1 can green chile, diced
8 oz shredded pepper jack cheese
8 oz shredded mozzarella cheese, divided
1 teaspoon McCormick® chili powder
tortilla chip, for serving

Steps:

  • Preheat a large heavy-bottomed pan over high heat.
  • Brush the corn with canola oil and cook in the pan, turning frequently with tongs, until lightly charred on all sides, 10-15 minutes. Transfer to a cutting board to cool, then cut the corn kernels off the cobs.
  • While the corn cooks, preheat the oven to 350°F (180°C).
  • Heat 1 tablespoon canola oil in a large, oven-proof pan over medium-high heat. When the oil is shimmering, add the red onion, bell pepper, poblano, and the white and light green scallions. Cook, stirring frequently, until the vegetables are beginning to soften, 4-5 minutes. Add the garlic and continue cooking until fragrant, 2-3 minutes more.
  • Remove the pan from heat and stir in the corn kernels, ½ cup Frank's® Buffalo Ranch Thick Sauce, the green chiles, pepper Jack cheese, and half of the mozzarella cheese. Stir to combine, then spread in an even layer. Top with the remaining mozzarella cheese and the chili powder.
  • Bake until the cheese is golden brown and the dip is bubbling, 20-25 minutes.
  • Drizzle the remaining Frank's® Buffalo Ranch Thick Sauce on top and garnish with the dark green scallions. Serve with tortilla chips.

Kroger® Unsalted Butter, for greasing
1 can creamed corn
1 can whole kernel corn, not drained
1 box corn muffin mix
1 container sour cream
¾ teaspoon kosher salt, divided
½ teaspoon ground cumin
½ teaspoon chili powder
10 tablespoons Kroger® Unsalted Butter, divided
1 tablespoon jalapeño, seeded
1 can chipotle pepper in adobo sauce
1 teaspoon honey
1 small jalapeño, sliced into thin rounds

Steps:

  • Preheat the oven to 350°F (180°C). Grease a 9 x 13-inch glass baking dish with Kroger® Unsalted Butter.
  • In a large bowl, whisk together the creamed corn, kernel corn, corn muffin mix, sour cream, ½ teaspoon salt, the cumin, chili powder, and 8 tablespoons melted Kroger® Unsalted Butter until smooth. Fold in the chopped jalapeño.
  • Pour the mixture into the prepared baking dish and smooth the top.
  • Remove a small chipotle pepper from the sauce and place in a small blender. Add 1½ tablespoons of adobo sauce, the remaining 2 tablespoons melted Kroger® Unsalted Butter, the honey, and remaining ¼ teaspoon salt. Blend until smooth.
  • Drizzle the chipotle sauce over the top of the corn pudding, then use a butter knife to swirl the sauce into the top of the pudding.
  • Gently press the sliced jalapeños, if using, onto the surface of the pudding.
  • Transfer the pudding to the oven and bake for 80-90 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and let cool for 5 minutes.
  • Serve warm.
