Oh, how we loved the buttery taste of this Irish shortbread. It's different than most shortbread we've made. The shortbread is very delicate, crumbly, and full of butter flavor. But, it's not overly sweet. Perfect for someone that doesn't like a sweet dessert. If you do like things a little sweeter, though, it wouldn't hurt to add another 1/2 cup of sugar to the dough. It's a sticky dough and very hard to spread. We suggest spraying your hands with cooking spray and spread into a parchment paper-lined pan. This Irish recipe will be a real treat for a mid-afternoon pick me up with a cup of tea.

3 cup(s) all-purpose flour
1 1/2 cup(s) corn starch
1 1/2 cup(s) confectioners' sugar
2 1/2 cup(s) butter (5 sticks), room temperature (use real thing for true taste!)

Steps:

  • Cream the butter until smooth.
  • Add the corn starch, flour, and confectioners' sugar, a little at a time, until well mixed.
  • Scoop dough out onto a cookie sheet either ungreased or lined with parchment paper.
  • Smooth dough out onto a cookie sheet.
  • Bake in preheated 325-degree oven for about 30 minutes. Shortbread should not brown, but just begin to slightly lose the whiteness.
  • Cool to room temp.
  • Slice into bars or triangles.

This is what your average Irish person will crave when they live abroad- not the healthiest way to start your day- but its delicious. The key here is the quality of the pork you use - "clonakilty" is the best brand in my opinion - worth the effort to try and get an Irish brand for the ingredients as it genuinely makes a big difference! I think this is a great hangover cure because its a greasy comfort food . Not for those watching their waist line though :S

1 link clonakilty pork sausage
5 -6 slices lean bacon (rashers )
1 inch of thickly sliced disks of clonakilty white pudding sausage
1 inch of thickly sliced disks of clonakilty blood pudding sausage
5 button mushrooms
4 eggs
1 tablespoon of kerrygold real irish butter
salt and pepper
irish brown bread
Heinz ketchup
2 glasses of freshly squeezed orange juice
irish tea, 1 pot of (barrys or lyons are great blends )

Steps:

  • Heat a frying pan with a little oil. Fry the sausages slowly over a medium heat - keep turning.
  • Add the pudding to the pan and continue to cook. Put sausages and pudding on a plate and keep warm in the oven.
  • Place rashers on frying pan and cook until colour has darkened and they crisp - transfer to oven. Add more oil to the frying pan and sauté the mushrooms.
  • Add as many eggs are you want per person and fry however you prefer them.
  • Add the salt and pepper to the mushrooms.
  • Serve all ingredients on a plate and serve with crusty french bread (aka breakfast roll - popular hangover cures sold in petrol stations in Ireland ) or with Irish brown bread . Add ketchup to taste. Loads of Kerrygold Irish butter for the bread is yum as it is slightly salty and has a gorgeous flavour. Round it all of with a glass of cold orange juice and a strong cup of tea!

I used to work at cookies by design,so this is the real deal - except modified a little because the average person will not be able to buy "almond emulsion" or "spread" Also, this recipe is scaled down from it's original, which was made in a 60 qt. mixer. It may have to be scaled down again. I have not made it at home. I must warn you, I do not know the yield on these cookies. I made up a number...

24 ounces butter (softened)
20 ounces powdered sugar (sifted)
3 whole eggs, plus
1 egg yolk
1/2 ounce vanilla extract
1/4 ounce almond extract
6 1/2 cups flour

Steps:

  • With paddle attachment, mix butter for 30 seconds. Add a 1/3 of the powdered sugar, mix on first speed for 1 minute. Add another 1/3 of the powdered sugar, mix another minute. Finally, add the last 1/3 of sugar, mix 1 minute.
  • Combine eggs, vanilla, and almond extract together, add to butter/sugar mixture. Mix for 30 seconds.
  • Add a 1/3 of the flour, mix 1 minute.
  • Scrape.
  • Add the next 1/3 of the flour, mix 2 minutes.
  • Scrape.
  • Add the final 1/3 of the flour, mix 3 minutes.
  • Refrigerate until able to be rolled out and cut into desired shapes.

1 1/2 c cornstarch
1 1/2 c confectioners' sugar

Steps:

  • 1. Mix all ingredients together to form a soft ball. 2. Roll into small balls and press with down with a fork. Place on an un-greased cookie sheet. Or the dough may be pressed into a 9" round or 9" square, lightly oiled, pan and then after baking sliced into bars or triangles. 3. Bake in preheated 325 degree oven for about 12 min. Shortbread should not brown, but just begin to slightly loose the whiteness.
