Bacon-Green Onion Mashed Potatoes image

Bacon-Green Onion Mashed Potatoes are wonderfully creamy and buttery with extra flavor from crumbled bacon and green onions. Makes a great side for a holiday meal.

3 pounds Yukon Gold or Russet Potatoes, (peeled and cut into chunks)
3 cloves garlic, (peeled)
8 slices bacon, (cut into 1/2-inch pieces)
3 green onions, (sliced)
2/3 cup milk, (warmed)
2 tablespoons butter, (softened)
2/3 cup sour cream
1 1/4 teaspoons salt
1/2 teaspoon pepper

Steps:

  • Place the potatoes and garlic in a large pot and cover with water. Add a few teaspoons of salt. Bring to a boil. Simmer until soft, about 20 minutes.
  • While potatoes are cooking, fry the bacon in a large nonstick skillet until crispy. Remove with a slotted spoon and drain on paper towels.
  • Drain off all but 1 tablespoon of bacon grease. Add green onion and cook for 1 to 2 minutes.
  • When potatoes are done, drain well and return to pot or place in a large bowl.
  • Add milk, butter, sour cream, salt and pepper. Mash potatoes with a potato masher.Or you can use a potato ricer. If you're using a potato ricer, press the potatoes through it before you add them to the bowl.
  • Stir in bacon and green onions. Serve.

1 teaspoon milk, or as needed
8 slices bacon strips, cooked and crumbled
2 cups shredded Colby-Monterey Jack cheese
½ bunch green onions, chopped, or to taste
½ cup sour cream
¼ cup butter, softened
2 cloves garlic, pressed
1 ½ teaspoons salt
½ teaspoon ground black pepper

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 25 minutes. Drain.
  • Mash potatoes in a large bowl using an electric mixer; pour in milk to make creamier. Stir in bacon, Colby-Monterey Jack cheese, green onions, sour cream, butter, garlic, salt, and pepper.

Number Of Ingredients 6

12 scallions
6 tablespoons pure olive oil
Salt and pepper to taste
16 new potatoes, quartered
1 head roasted garlic
1 stick butter, softened

Steps:

  • Preheat the oven to 450 degrees. Brush the scallions with 2 tablespoons of the oil and sprinkle with salt and pepper. Place on a sheet pan and roast 10 minutes. Remove from the oven and chop coarsely. Toss the potatoes with remaining olive oil and sprinkle with salt and pepper. Roast until just a bit overcooked but not brown or dry, about 25 minutes. As soon as they come out of the oven, place the potatoes in a large mixing bowl and add the garlic, scallions, and butter. Smash with vigorously with a potato masher to achieve a rustic texture, the mixture should not be smooth. Season to taste with salt and pepper. To keep the smashed potatoes warm, put them in a bowl or pan, cover, and place the bowl in a large pan of warm water.

6 medium russet potatoes, scrubbed
1 tablespoon olive oil
6 garlic cloves, minced
2 medium yellow onions, chopped (about 2 cups)
1/4 cup skim milk
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon chopped fresh thyme (or 1 tsp dried)
1 tablespoon butter, melted

Steps:

  • Cook potatoes until fork tender (about 30 min).
  • While potatoes are cooking, heat olive oil in a medium skillet over medium heat.
  • Add garlic and onions, cook, stirring frequently until soft and golden (about 10 min).
  • Drain potatoes, reserve 1/4 cup liquid.
  • Cool potatoes until you can handle them to slip off the skins.
  • Cut potatoes into quarters and return to the saucepan.
  • Add 1/4 cup potato water, milk, salt & pepper.
  • Heat mixture until heated through (about 5 min).
  • Mash potato mixture until smooth.
  • Stir in onion/garlic & thyme.
  • Spoon potatoes into a serving dish; drizzle with butter and serve.

1 cup milk
1 cup packed chopped green onion, bottoms and tops
1/2 cup unsalted butter, melted

Steps:

  • Cook potatoes in a large pot of boiling salted water until tender; drain and return to pot.
  • Cook over low heat until any water from potatoes evaporates.
  • Place a kitchen towel across the top of pot, cover pot with lid and remove from heat; let stand 10 minutes.
  • Mash hot potatoes in pot; set aside.
  • Butter large serving bowl.
  • Bring milk to simmer in medium saucepan.
  • Add chopped green onion and simmer 5 minutes.
