Here's what you need: blueberry

3 cups blueberry

Steps:

  • Place blueberries in a food processor or blender and puree into a thick, smooth sauce.
  • Pour the sauce onto a baking tray lined with a silicone baking mat and smooth into a thin, even layer.
  • Bake for 6 hours at 175ºF (80ºC), until entire surface is just dry to the touch.
  • Once cool, turn the baking mat onto a cutting board and remove the silicone baking mat.
  • Roll the fruit sheet and cut into 1-inch (2 cm) pieces.
  • NOTE: If your fruit sheet comes out a bit too dry and you worry that rolling will cause it to crack, simply cover the surface with a few damp paper towels for a few minutes and try again. The moisture will rehydrate your fruit sheet just enough to be a flexible consistency.

4 cups berries or chopped stone fruit
1/2 cup sugar
1 tablespoon fresh lemon juice

Steps:

  • Puree berries or chopped stone fruit, sugar, and lemon juice. Cook in a saucepan over medium heat until thick, 30 to 35 minutes. Strain through a fine sieve onto a baking sheet lined with a nonstick baking mat; tilt to distribute. (Use a pan that isn't warped to prevent pooling.) Bake at 170 degrees until dehydrated, 2 1/2 to 3 hours. Let cool for 10 minutes. Cut into eight 4 1/2-by-5 1/2-inch rectangles. Roll in parchment. store at room temperature for up to 1 month -- or 2 seconds, depending on your kids' appetites.

  • Preparation: Line a 12x17 cookie sheet with a silpat or foil that is lightly brushed with vegetable oil and then wiped down with a paper towel (only a little bit of oil is needed).
  • Pit and chop peaches (leave skins intact). Places pieces in a blender or food processor and pulse until pureed. Transfer pureed mixture to a heavy bottom pan. Taste mixture and add sugar to preferred sweetness. Stir in lemon juice. Bring mixture to a boil and then lower to a simmer. Cook and stir every now and then until mixture thickens and clumps when scooped with a spoon, about 1 hour. Stir more frequently the last 20 minutes so mixture at the bottom of pan does not burn.
  • Pour mixture onto prepared bake sheet, then using an off-set spatula spread to an 1/8 inch thickness. Bake at 190 degrees until fruit leather is tacky, but does not stick to your fingers, about 3 hours. Let cool completely. Once cooled place smooth-side down on wax paper and cut to desired strip size. Roll up strips and store in an airtight container for up to 1 week.

  • If you have a dehydrator: lightly oil the solid sheets of the dehydrator. You can also line them with parchment paper. If you're using an oven: line two rimmed baking sheets with parchment paper. Preheat the oven to the lowest temperature it will go. It shouldn't be above 175 degrees.
  • Combine the mango, lime, applesauce and honey in a blender and blend until smooth. Taste, and adjust for sweetness. The puree should be the texture of thin baby food. If it's too thick, add a bit of water.
  • Pour a very thin layer of the puree on the prepared trays of the dehydrator or the baking sheets. Dehydrate according to your machine's instructions, or dry in the oven for at least six hours, but up to twenty hours. When the fruit roll-ups are done, they should be just barely sticky.
  • Cut into strips (keep them lined with parchment if that's how you dehydrated them), and seal in an airtight jar at room temperature for up to a month.
