Lemon juice provides the snappy flavor in this wonderful ice cream recipe from our Test Kitchen. The light, make-ahead treat looks splendid served in individual "boats" made from lemon halves.

1 cup half-and-half cream
1/3 cup sugar
3 tablespoons lemon juice
1 teaspoon grated lemon zest

Steps:

  • In a small bowl, stir cream and sugar until sugar is dissolved. Stir in lemon juice and zest (mixture will thicken slightly). Cover and freeze until firm, about 8 hours or overnight. Remove from the freezer 10 minutes before serving. Spoon into lemon boats or dessert dishes.

A simple and refreshing lemon sorbet with just 4 ingredients, serve as a light dessert or in between courses at a dinner party

250g white caster sugar
thick strip of lemon peel
juice of 2-3 lemons
2 tbsp vodka (optional)
zest of half a lemon

Steps:

  • Heat 250ml water, the sugar and the lemon peel in a small pan until the sugar has dissolved then bring the mixture to the boil. Cook for 3 mins then turn off the heat and leave to cool. Pick out the lemon peel and discard. Measure out 100ml of lemon juice and add to the sugar mixture along with the vodka if using.
  • Pour into a freezer box and freeze for 1hr 30 mins then mix up with a whisk to break up and incorporate the ice crystals (which will be starting to form at the edges) before returning to the freezer.
  • Keep mixing the sorbet once an hour for 4 hours to break up the ice crystals. Stop mixing when firm but still scoopable then store in the freezer for up to 1 month. Serve scoops of sorbet decorated with a few curls of lemon zest.

FRESH LEMON SHERBET

Unlike ice cream, store-bought sherbet is usually third-rate. If you want a really good fruit sherbet, do you have to make it yourself? YES. In our house lemon is our favorite, but you can use this basic recipe and substitute fresh squeezed lime or orange juice, or use fresh raspberries (YUM). Since getting an ice cream maker with the freezer insert, we make sherbet weekly. We like the sherbet better than regular ice cream and it's a 'little' healthier! If using a canister-style (freezer insert) ice cream machine, freeze the cannister for at least 12 hours, or preferably, overnight. If the canister insert is not thoroughly frozen, the sherbet will not freeze beyond a slushy consistency. Be sure to use freshly squeezed (not bottled) lemon juice. You can substitute vodka for the Triple Sec if desired, but the Triple Sec adds a more citrusy flavor. Prep time includes juice chilling time. 1 tablespoon lemon zest, grated, from 1 to 2 lemons
1 cup granulated sugar (7 ounces)
1/8 teaspoon table salt
2/3 cup lemon juice
1 1/2 cups water
2 teaspoons triple sec
2/3 cup heavy cream

Steps:

  • Process zest, sugar, and salt in a food processor until damp, ten to fifteen 1-second pulses.
  • With the machine running, add lemon juice and water in a slow steady stream; continue to process until the sugar is fully dissolved, about 1 minute.
  • Strain the mixture through a non-reactive fine-mesh strainer into a medium bowl to remove pulp and zest; stir in Triple Sec, then cover with plastic wrap and chill in the freezer until very cold, about 40º, 30-60 minutes (Alternatively, set the bowl over larger bowl containing ice water).
  • Do not let mixture freeze.
  • When mixture is cold, using a whisk, whip the cream in a chilled medium bowl until soft peaks form. Whisking constantly, add the chilled juice mixture in a steady stream, pouring against the edge of the bowl.
  • Immediately start the ice cream machine and add the juice/cream mixture to the frozen insert.
  • Churn until the sherbet has the texture of soft-serve ice cream, 25 to 30 minutes.
  • Remove the canister from the machine and transfer the sherbet to a storage container; press plastic wrap directly against the surface of the sherbet (to prevent ice crystals from forming) and freeze until firm, at least 3 hours. Can be wrapped well in plastic and frozen for up to one week.
  • To serve, let sherbet stand at room temperature until slightly softened and an instant-read thermometer inserted into the sherbet registers 12º to 15º.

10 lemons
3 cups cold water
1 1/2 cups sugar
1 cup lemon juice
1 teaspoon grated lemon rind
1 egg white
10 sprigs mint

Steps:

  • With a sharp paring knife, cut off the tops of the lemons (about one inch). With a teaspoon, remove the pulp from the lemons, being careful not to damage the shells.
  • Extract the juice from the lemon pulp by pressing it through a sieve into a bowl. Reserve one cup of the juice.
  • Put lemon shells including tops on a tray in the freezer.
  • To make the sorbet, combine water and sugar in a heavy saucepan, and bring mixture to a boil. Boil for three minutes.
  • Remove saucepan from heat and add lemon juice and lemon rind. Allow to cool.
  • Put mixture into sorbet machine and freeze according to manufacturer's instructions.
  • Beat the egg white and fold into the sorbet. Store in freezer.
  • Just before serving, fill the lemon shells with the sorbet, decorate each with a mint leaf, and replace the tops.

1 1/4 cups freshly squeezed lemon juice (7 or 8 lemons)
1 1/4 cups sugar
2/3 cup nonfat buttermilk
1 1/2 cups heavy cream
1/2 cup corn syrup
1/4 teaspoon salt
2 tablespoons Candied Lemon Zest for Desserts (optional), chopped

Steps:

  • Prepare an ice bath. Place lemon juice in a small saucepan set over medium heat. Boil until reduced by half, about 12 minutes. Add sugar; stir until dissolved, about 4 minutes. Remove from heat. Stir in the buttermilk, cream, corn syrup, salt, and candied lemon zest. Chill over the ice bath or overnight in the refrigerator.
  • Freeze mixture in an ice-cream maker, according to manufacturer's directions. Place in an airtight container in the freezer; store up to 1 month.

Steps:

  • Combine in a medium-size saucepan: 1 cup fresh lemon juice, 2 cups water, 1 1/4 cups sugar.
  • Heat just until the sugar has dissolved. Remove from the heat and add: 3/4 cup milk.
  • Transfer the mixture to a bowl, cover, and place in the refrigerator until completely cool. Freeze in an ice-cream maker following the manufacturer's instructions. Transfer the frozen sherbet into a clean dry container, cover, and store in the freezer for several hours to firm up before serving.
  • Add 2 strips of lemon zest when dissolving the sugar. Remove before freezing.
  • Use Meyer lemons and reduce the sugar to 1 cup.

  • Cut each lemon in half. Check if the thickness of the white ring of the skin (the pith) is larger than ¼-inch thick. If so, pare the zest from that lemon, cutting away any of the pith before proceeding. Starting with three lemons, slice the lemon halves into thin slices, removing the seeds. Juice the remaining lemon with a citrus juicer to adjust tartness later.
  • Put the entire slice (plus any zest pieces) and the sugar into the container of a food processor. Purée the mixture, scraping down the sides of the container as needed, until the lemons are chopped as fine as possible.
  • Press the lemon mixture through a fine mesh strainer to remove larger pieces of zest (and any missed seeds).
  • Have your ice cream maker ready to go (I use a KitchenAid Ice Cream Maker Attachment). You want to churn the base as soon as you combine the lemon mixture with the milk & cream to avoid curdling.
