VEGGIE FAJITAS
My family loves these peppery veggie fajitas! Serve the fajitas with flour tortillas, cheddar cheese, lettuce, tomatoes, sour cream, and I even put steamed broccoli on the side (so each can add broccoli if wanted).

Steps:
- In a large frying pan over a medium heat, saute olive oil and garlic. Let the garlic saute for 2 minutes, stir in the green and yellow bell peppers. Let the peppers saute for 2 minutes, stir in the onions. After two minutes add the mushrooms and green onions to the frying pan. Season the vegetables with lemon pepper to taste and stir well. Cover the frying pan and cook until all of the vegetables are tender.

- In a large nonstick skillet, cook chicken in oil for 4-5 minutes. Add peppers and onion; cook and stir 4-5 minutes longer. , In a small bowl, combine seasoning mix and water; stir in the honey, parsley, garlic powder and salt. Stir into skillet. Add pineapple. - To make the fajita mix, take two or three strips from each colour of pepper and finely chop them. Set aside. Heat the oil in a frying pan and fry the remaining pepper strips and the onion until soft and starting to brown at the edges. Cool slightly and mix in the chopped raw peppers. Add the garlic and cook for 1 min, then add the spices and stir. Cook for a couple of mins more until the spices become aromatic, then add half the lime juice and season. Transfer to a dish, leaving any juices behind, and keep warm.
- Tip the black beans into the same pan, then add the remaining lime juice and plenty of seasoning. Stir the beans around the pan to warm them through and help them absorb any flavours of the fajita mix, then stir through the coriander.
- Warm the tortillas in a microwave or in a low oven, then wrap them so they don't dry out. Serve the tortillas with the fajita mix, beans, avocado and soured cream for everyone to help themselves.

- Heat vegetable oil in large skillet over medium-high heat.
- Add onion and bell pepper.
- Cook.
- Stir occasionally for 3-4 minutes or until vegetables are tender.
- Stir in beans, corn, fajita seasoning mix and water.
- Bring to a boil.
- Reduce heat to low and cook, stirring occasionally, for 3-4 minutes or until mixture thickens.
- Remove from heat.
- Stir in cilantro.

- Drain pineapple, reserving juice; set pineapple aside. In a large resealable plastic bag, combine seasoning mix and reserved juice; add the pork. Seal bag and turn to coat; refrigerate for 15 minutes., Meanwhile, place the red pepper, onion and pineapple on a double thickness of heavy-duty foil (about 12 in. square). Fold foil around mixture and seal tightly., Prepare grill for indirect heat. Drain and discard marinade from pork. Grill pork and foil packet, covered, over indirect medium heat for 20-35 minutes or until a thermometer inserted in the pork reads 145° and vegetables are tender. Remove from the grill. - Preheat an oven to 350 degrees F (175 degrees C). Wrap the tortillas in aluminum foil and heat in the oven.
- Combine the chicken, bell pepper, jerk seasoning, and pepper in a large bowl, set aside. Heat a large skillet over medium-high heat, and coat with cooking spray. Add the pineapple and cook until brown, about 4 to 6 minutes. Remove the pineapple from the pan and set aside.

Vegetarian Fajitas, with a tropical kick! Now, this recipe is made in honor of my parents, primarily because there are NO onions, garlic, eggs, cinnamon, or spice. They have allergies... But let me tell you something. You won't even miss the onions, garlic, or meat in this dish! (I know, I was surprised too!)

Steps:
- Chop up bell peppers, olives, pineapple.
- Heat oil in a skillet and add whole cumin.
- Toss in chopped vegetables (except olives) and saute them (do not let them get mushy) at medium heat for 3 minutes.
- Add ground cumin, paprika, salt, black pepper, cayenne pepper, and lemon.
- Add in olives, spinach, and banana peppers.
- Let saute at low heat so flavors soak into the vegetables.
- Remove from heat when vegetables are cooked, but not mushy.
- Heat tortillas in microwave and place the cooked vegetables in the middle, top with cheddar cheese (if desired), and lastly with the cold (lettuce, tomato, pineapple) salad, and salsa.
- Wrap up and eat that deliciousness!
