VEGAN TACOS AL PASTOR
This vegan version of tacos al pastor is made with TVP (textured vegetable protein) that is cooked in a spicy lime sauce with guajillo chiles. They are served with homemade tomato salsa.

- Place guajillo peppers in a saucepan, cover with water, and boil until softened, about 10 minutes. Drain.
- Combine lime juice, 2 cloves garlic, cumin, and cloves in a small saucepan over medium heat; bring to a boil. Remove from heat and cool for 5 minutes. Pour into a blender, add guajillo peppers, and blend until smooth. Add 1 to 2 tablespoons of the water if the sauce is too thick.
- Heat oil in a large saucepan over medium heat and cook onion slices until soft and translucent, about 5 minutes. Stir in vegetable protein; cook and stir for 2 minutes. Pour in guajillo sauce and remaining water; season with salt. Bring to a boil; reduce heat to medium-low cook, covered, until flavors combine, about 10 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Combine tomatoes and chile de arbol peppers in a baking dish.
- Roast tomatoes and peppers until charred, 5 to 10 minutes. Cool tomatoes slightly. Peel.
- Combine peeled tomatoes, peppers, 1 slice onion, 1 clove garlic, and salt in a blender; blend until smooth. Pour salsa into a small bowl.
- Warm corn tortillas in a skillet. Divide vegetable protein mixture amongst tortillas and top with salsa, chopped onion, and cilantro.

- Cook tomato on a ridged grill pan over medium-high heat until slightly blackened, about 5 minutes. Remove from heat and cool until easily handled. Peel off skin and remove seeds.
- Bring a small pot of water to a boil. Add guajillo and ancho chile peppers; cook until softened, about 5 minutes. Drain.
- Combine tomato flesh, softened chile peppers, 2 slices pineapple, orange juice, quartered onion, vinegar, chipotle peppers, salt, garlic, cloves, cumin seeds, and oregano in a blender; blend until smooth.
- Arrange pork slices in a glass or ceramic baking dish. Pour blended mixture over pork, ensuring all sides are evenly coated. Cover baking dish with plastic wrap.
- Marinate pork in the refrigerator, 4 hours to overnight.
- Cook remaining pineapple slices on a ridged grill pan over medium-high heat until slightly blackened and soft, about 5 minutes per side. Chop into small pieces.
- Wipe out grill pan and preheat over medium-high heat. Cook marinated pork in the hot pan, turning once, until browned, 4 to 5 minutes.
- Chop pork coarsely into small pieces against the grain. Serve with pineapple, chopped onion, and cilantro.

- Para preparar estos tacos al pastor veganos, lo primero que hay que hacer es reunir los ingredientes que necesitaremos como puedes ver en la siguiente imagen.
- Para comenzar con nuestra preparación pondremos a hidratar nuestra soja texturizada, para esto la colocamos en una cacerola con agua hirviendo, añadimos una pizca de sal, las hojas de laurel y dejamos que se suavice completamente. Esto tardará aproximadamente 10 minutos a fuego alto.Una vez lista la retiramos del fuego, dejamos enfriarse, y una vez fría la exprimimos perfectamente para retirar el exceso de agua que pudiera contener aún y la reservamos un momento.
- Por otro lado, del mismo modo en agua muy caliente colocamos a suavizar los chiles guajillo y pasilla.
- Una vez blandos los chiles pasilla y guajillo, los colocamos en la licuadora junto con el vinagre, el agua, la canela, la pimienta, el comino, el clavo, la mejorana, los ajos, la mitad de la cebolla y una pizca de sal, y licuamos hasta obtener una salsa homogénea para los tacos de soya al pastor.
- Una vez lista la salsa la añadimos colándola sobre la soja, integramos todo muy bien, procurando que toda la soja se impregne de la salsa. Entonces cubrimos con papel film y dejamos reposar en el refrigerador por al menos 4 horas.
- Una vez pasado este tiempo o más si así lo deseas, tomamos un poco de cebolla picada y dejamos que se fría en un sartén con aceite caliente. Una vez lista la cebolla añadimos la soja texturizada y dejamos que se fría hasta que esta bien cocida, puedes añadir también trozos de piña, para que la soja tenga más sabor a pastor.
- Una vez listo el relleno, tomamos las tortillas de maíz y formamos los tacos mexicanos veganos, añadiendo un poco de piña picada y acompañando con un poco de cilantro picado o tu salsa favorita, y ¡LISTO! Ya podemos disfrutar de estos exquisitos tacos al pastor veganos.
