This is a recipe from Mme. Jehane Benoit, a classic Canadian cookbook author, who says "children love these".

8 medium red apples
8 wooden skewers
3 cups sugar
1/2 cup light corn syrup
1/2 cup water
1 drop cinnamon oil
1 teaspoon red food coloring

Steps:

  • Wash and dry apples; remove stems.
  • Insert skewer in stem end of each apple.
  • Mix sugar, syrup and water in a saucepan; bring to a boil, stirring until sugar has dissolved.
  • Then cook (285F on candy thermometer), without stirring, until a small amount of mixture separates in threads that are hard but not brittle when dropped in very cold water.
  • Remove from heat and add flavouring and colouring, stirring only enough to mix.
  • Hold each apple by skewer end and quickly swirl in syrup, tilting pan to cover apple completely.
  • Remove from syrup, allow excess to drop off, then swirl to spread syrup smoothly over apple.
  • Put on lightly buttered baking sheet to cool.

RED CANDY APPLE SLICES

Cooking spray
2 cups sugar
1 cup light corn syrup
One 2-ounce box cinnamon candy
Few drops of red food coloring
Chopped peanuts
Shredded coconut
Assorted candies
2 firm apples, such as Jonathan or Fuji
2 firm Granny Smith Apples

Steps:

  • Bring a medium pot of water to a boil. Spray a cookie sheet with cooking spray. Set aside.
  • In a medium saucepan, bring the sugar, 1/2 cup water and corn syrup to a boil. Cook to 250 degrees F, or until the syrup spins a thread when poured from the edge of a cooking spoon. Pour in the candy pieces and continue cooking to 285 degrees F. Remove from the heat and add the food coloring to achieve the desired shade of red.
  • Put the chopped nuts, coconut and candies in shallow bowls. Set aside. Wash the apples thoroughly. Remove the stems from the apples and insert a popsicle stick into the center of the bottom of each apple.
  • Dip the apples quickly in the candy mixture, twisting as you dip to cover the entire apple. Roll the apples in the assorted toppings, coating the bottom half of each apple. Place on the greased cookie sheet and allow the coating to cool and harden. Remove the popsicle sticks and use an apple slicer or a sharp serrated knife to cut the apples into slices. Place a toothpick in each slice.

6 medium sweet-tart apples, such as Braeburn, Fuji, or Gala
Popsicle sticks
1 pound semisweet chocolate, cut into chunks
1 cup M & M's, chopped pistachios, shredded coconut, toffee pieces, or crushed Oreos

Steps:

  • Twist off the stems from the apples and push a Popsicle stick down into the core. Put the apples in the fridge while preparing the chocolate; they'll coat better if they're cold.
  • Slowly melt the chocolate in a double boiler over hot water or in a microwave set on high for 2 minutes, stirring halfway through the heating time to smooth it out. Remove from the heat and stir until completely melted and warm, not hot. Dunk each apple into the chocolate, allowing the excess to drip back into the bowl. Roll the apples around in the chocolate, turning with the stick, so it's coated all the way up to the top. Use a spoon to baste any hard to get spots.
  • Put the desired coating in a separate bowl and roll the dipped apple around so it is completely covered. Set the chocolate dipped apples on a cookie sheet lined with wax paper. Refrigerate until the chocolate is set.

8 red apples
400g caster sugar
1 tsp lemon juice
4 tbsp golden syrup
a few drops red food colouring (optional)
8 sticks , chopsticks or lolly sticks

Steps:

  • Remove the stalks from the apples, then put them in a heatproof bowl and pour over boiling water from the kettle to cover them and leave for 3-4 mins. Remove with a slotted spoon and pat dry. (This removes the protective wax from the skin and makes the toffee stick to the apples better.)
  • Push the sharpest end of each stick into the stalk-end of each apple, making sure it's firmly wedged in. Put a large piece of baking parchment on a board.
  • Tip the sugar into a large saucepan, add the lemon juice and 100ml water. Bring to a simmer and cook until the sugar has dissolved. Swirl the pan gently to move the sugar around, but don't stir. Add the golden syrup and simmer the mixture (be careful it doesn't boil over) until it reaches 'hard crack' stage or 150C on a sugar thermometer. If you don't have a thermometer, test the toffee by dropping a small amount into cold water. It should harden instantly and, when removed, be brittle. If it's soft, continue to boil. When it's ready, drip in some food colouring, if you like, and swirl to combine. Turn off the heat.
  • Working quickly, dip each apple into the toffee, tipping the pan to cover it fully. Lift out and allow any excess to drip off back into the pan before placing on the baking parchment. Repeat with the remaining apples. Gently heat the toffee again, if you need to. Leave to set. Best eaten on the same day.

Steps:

  • Lightly grease cookie sheets. Insert craft sticks into whole, stemmed apples.
  • In a medium saucepan over medium-high heat, combine sugar, corn syrup and water. Heat to 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads. Remove from heat and stir in food coloring.

2 cups packed brown sugar

1 cup chopped walnuts

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first six ingredients; stir in butter. Reserve 1-1/3 cups crumb mixture for topping. Press remaining mixture onto bottom of a greased 13x9-in. baking dish. Bake 15-20 minutes or until lightly browned. Cool completely on a wire rack., Sprinkle apples over crust; spread with apple butter. Stir walnuts into reserved topping; sprinkle over apple butter. Bake 35-40 minutes or until lightly browned. I came up with this recipe to try and duplicate the apple rings that I used to have when I was growing up.

8 apples, peeled and cored
2 cups water
1 cup sugar
4 ounces red cinnamon candies

Steps:

  • Slice the apples into thin rings.
  • In a dutch oven or soup kettle put the water, sugar and red cinnamon candies.
  • Bring the mixture to a boil and then reduce heat to medium, stirring occasionally.
  • When the cinnamon candies have dissolved, add the apple rings.
  • Simmer for 15 minutes on lowish heat until the apples are tender.
  • While the apples are simmering, about every 5 minutes gently stir the mixture.
  • When the apples are cooked, turn off the heat and allow the apples to cool in the syrup.
  • They will continue to darken in color as they sit in the syrup.
  • Serve either chilled or at room temperature.
