One of the most common dishes in the Dominican Republic, Moro is a mixture of rice, beans and vegetables.

3 tablespoons vegetable oil
1 small red onion, (cubed)
half of a green and/or red bell pepper, (cubed)
2 cloves of garlic, (minced)
1 tablespoon cilantro, (chopped)
2 tablespoons tomato sauce
2 cubes of chicken bouillon ((caldo de pollo))
1 pack of sazon ((culantro y achiote))
1 teaspoon oregano
1/2 teaspoon adobo
1/2 teaspoon ground black pepper
1 can red or pinto beans, (with liquid)
2 1/2 cups water
3 cups rice

Steps:

  • In a large cast-iron pot, heat oil over medium heat. Saute onion, pepper, garlic, cilantro, tomato sauce, chicken bouillon cubes, sazon, oregano, adobo and black pepper for about 2-3 minutes until vegetables begin to release aroma.
  • Add the beans with it's liquid and water. When the water begins to boil, add the rice, stirring occasionally to avoid from sticking to the bottom of the pot.
  • Once the rice has soaked up all the water and begins to dry up, lower the heat to low. Cover and let cook for 25 minutes. Then, stir the rice carefully and cover for an additional 5 minutes.
  • Serve warm with a side of your choice.

2 tablespoons olive oil, divided
1 strip bacon, sliced
1/2 cup onion, chopped
2 cloves garlic, minced
1/2 cup green bell pepper, chopped
1/2 cup acorn squash, chopped
1 tablespoon tomato paste
1 large chicken bouillon cube, crumbled
2 1/2 cups water, divided
1 (15 oz) can red beans, drained
1/4 cup fresh cilantro, chopped, for garnish
1 teaspoon kosher salt
1 cup medium-grain rice

Steps:

  • In a medium saucepan over medium heat, add 1 tablespoon of oil and bacon. Stir in the garlic, bell pepper, squash, tomato paste, bouillon cube, and 1/2 cup water. Bring to a boil, then reduce the heat, cover with a lid and simmer for about 10 minutes. Add the beans and simmer for another 10 minutes. Serve over white rice, garnished with cilantro.
  • White Rice:
  • In a medium pot, bring the 2 cups of water to a boil over high heat and add the 1 tablespoon of oil and salt. Stir in the rice, cover with a lid and let cook over medium-low heat for about 20 minutes. Lower the heat for the last 5 minutes. The rice should be soft and fluffy.

2 tablespoons dried oregano

Steps:

  • In a rice pot (caldero) or Dutch oven over medium heat, add the oil. Heat up for about 2 minutes, then add the butter, thyme and onions. Cook, continuously folding over the ingredients with a rubber spatula, until the onions become translucent. Add the rice and sauté with the other ingredients for 3 minutes, stirring constantly. Add the wine and fold the ingredients over for an additional 5 minutes. Add 1 cup of chicken stock at a time and continue to cook, folding the ingredients over and over until the liquid has been absorbed. Continue until the last of the chicken stock has been added. The rice will be done to al dente after a total time of 45 minutes. Set aside.
  • For the chimichurri: Stir together the oil, vinegar, cilantro, parsley, oregano, salt and pepper in a bowl. Set aside.
  • For the habichuelas criollas: In a large pot over medium heat, add the oil and allow to heat up. Add the bell peppers and onions, then add the adobo, chicken base, cumin, garlic, oregano, sazón completo, sazón con achiote, thyme and tomato paste. Gently fold over the ingredients in the pot. Do not allow to stick. Cook, folding the ingredients constantly, 5 minutes. Add the pink beans and their liquid. Lower the heat and simmer for 10 minutes. Set aside.
  • For the pico de gallo: In a mixing bowl, add the onions, tomatoes, cilantro and lime juice and gently mix. Add salt and pepper to taste. Set aside.
  • For the risotto mamposteao: Salt and pepper both sides of the skirt steak and grill accordingly to desired doneness.
  • In a nonstick pan over medium heat, add the oil; allow to heat up. Add 1/4 cup habichuelas criollas and with a rubber spatula move the ingredients around. After 1 minute add 2 1/4 cups of the cooked rice and fold the ingredients with a spatula until mixed. Add the chicken stock and heavy cream. Cook, continuously folding the ingredients over (do not allow to sit), 3 minutes. Add the Parmesan and continue to cook, folding ingredients over until the risotto becomes thick.
  • On a plate, place some risotto mamposteao with sliced skirt steak over. Add pico de gallo on top before drizzling chimichurri sauce over the steak. Repeat to make 3 to 5 more plates.

1 pound dry kidney beans
¼ cup olive oil
1 large onion, chopped
1 green bell pepper, chopped
2 tablespoons minced garlic
2 stalks celery, chopped
6 cups water
2 bay leaves
½ teaspoon cayenne pepper
1 teaspoon dried thyme
¼ teaspoon dried sage
1 tablespoon dried parsley
1 teaspoon Cajun seasoning
1 pound andouille sausage, sliced
4 cups water
2 cups long grain white rice

Steps:

  • Rinse beans, and then soak in a large pot of water overnight.
  • In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.
  • Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.
  • Stir sausage into beans, and continue to simmer for 30 minutes.
  • Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.

2 cups water
1 3/4 lbs calabaza squash or 1 3/4 lbs butternut squash, peeled and cut into 1/2 inch cubes
1 teaspoon annatto seeds (optional)
2 tablespoons olive oil
1 medium onion, chopped
1 small sweet green pepper, chopped
1/2 chili pepper, finely chopped
2 cloves garlic, finely chopped
6 fresh cilantro leaves, finely chopped (or use culantro leaves, if you can find them)
1/2 cup tomato sauce
1 (15 ounce) can pink beans, undrained
3/4 teaspoon salt
1/2 teaspoon dried oregano leaves
3 cups water
1/4 cup olive oil
1 teaspoon salt
2 cups long-grain white rice

Steps:

  • Prepare Cooked White Rice: In a heavy 4-quart saucepan or Dutch oven, heat 3 cups water, 1/4 cup olive oil, and salt to boiling over high heat.
  • Reduce heat to medium; add 2 cups rice and cook uncovered until rice appears to be dry-10 to 15 minutes.
  • Using a fork, bring rice on the bottom to the top, but do not mix.
  • Reduce heat to low; cook 10 minutes.
  • Turn rice over again and cook 10 minutes longer.
  • Cover rice and keep warm until ready to serve.
  • This rice dish is somewhat crunchy in texture.
  • Beans: In a 1-quart saucepan, heat water and squash to boiling over high heat.
  • Reduce heat to low, cover, and cook until tender-10 to 15 minutes.
  • Drain squash, reserving 1 1/2 cups cooking liquid in a measuring cup.
  • Add annatto seeds to cooking liquid and set aside 5 minutes.
  • In 4-quart saucepan, heat olive oil over medium heat.
  • Add onion, green pepper, garlic, chile pepper, and cilantro; saute mixture, or sofrito, 5 minutes.
  • Strain liquid from annatto into sofrito, discarding seeds.
  • Add tomato sauce and squash.
  • Reduce heat to low and cook, stirring occasionally, until sauce is thickened-about 20 minutes.
  • Stir undrained beans, salt, and oregano into mixture and cook until beans are warmed through and sauce has thickened again-about 15 minutes.
  • To serve, spoon bean mixture over Cooked White Rice on serving plate.
  • Enjoy!

1 yellow onion, minced
1 red onion, minced
2 cloves garlic, minced
1 red pepper, minced
1/2 teaspoon fresh chili pepper, minced
1 cup tomato puree
1 pound dried pinto beans, soaked overnight and drained
Salt, freshly ground black pepper and chili pepper sauce to taste

Steps:

  • In a large pot, warm the olive oil over medium heat. Add both onions, the garlic, the red pepper and the chili pepper, stir and cook for 7 minutes, or until soft.
  • Add the tomato puree and stir. Add the soaked and drained beans. Add cold water to barely cover the beans, stir, reduce heat to medium-low and simmer for 2 to 3 hours, or until the beans are tender. Check frequently to make sure that the cooking beans never become completely dry and at risk for scorching. Add salt, pepper and chili pepper sauce to taste. Serve with plain boiled white rice.

1/2 lb ham, chopped
1/2 cup sofrito sauce
1 sazon goya con culantro y achiote

2 cups rice, preferably long grain

1/2 cup roasted red pepper, chopped
1 bay leaf
1 teaspoon dried oregano, crushed
1 tablespoon green olives

Steps:

  • In a medium sized pot heat olive oil and add ham. Cook until browned.
  • Add sofrito and simmer over medium heat for 2 or 3 minutes.
  • Add all remaining ingredients, mixing thorougly.
  • Taste broth for reseasoning, if necessary. It should be very slightly on the salty side being that the rice will absorb most of the seasoning.
  • Cover. Cook over medium low heat for about 25 minutes. Stir, cover and cook for an additional 15 minutes.

1 pound dried small red beans (do not use kidney beans)
1/2 teaspoon salt
14 cups water
1 tablespoon olive oil
4 strips bacon, cut into pieces
1 large onion, chopped
3 cloves garlic, chopped
1 green bell pepper, chopped
2 tomatoes, peeled and chopped
1 teaspoon tomato paste mixed with 1 teaspoon water
1 sprig each of cilantro and fresh parsley, tied together to make a bouquet garni
Salt to taste
1/2 teaspoon white vinegar
1 teaspoon oregano
1 hot green pepper, chopped

Steps:

  • Rinse the beans thoroughly and pick out any foreign matter. Place in a bowl and cover with 6 cups of cold water; let sit overnight. (Alternatively, place the beans in a saucepan with 6 cups of cold water and boil for 2 minutes; set aside for 1 hour.)
  • Drain the beans and place in a large saucepan with 1/2 teaspoon of salt and 8 cups of water. Bring to a boil and simmer at medium heat until the beans are tender, about 1 to 1 1/2 hours.
  • Meanwhile, make a sofritoor paste. In a skillet, heat the olive oil and the bacon until the fat is rendered. Add the onion, garlic, bell pepper and tomatoes and cook for 10 to 15 minutes or until the vegetables are soft. Add the diluted tomato paste and the bouquet garni. Cook for 5 minutes.
  • Add the paste to the beans and cook, stirring, for 15 minutes. Add salt to taste, vinegar, oregano and hot pepper and cook an additional 15 to 20 minutes, or until the beans are very creamy.

12 ounces andouille sausage, diced

¾ cup poblano peppers

1 smoked ham hock
2 bay leaves
1 teaspoon freshly ground black pepper
1 teaspoon dried thyme

hot sauce to taste
4 cups cooked white rice
2 tablespoons chopped green onion, or to taste

Steps:

  • Place beans in a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse.
  • Heat vegetable oil in a large pot over medium heat. Cook and stir sausage in hot oil until oils slightly release from sausage and edges brown, 5 to 7 minutes. Stir onion, celery, and poblano pepper into sausage; cook and stir until vegetables soften and start to turn translucent, 5 to 10 minutes. Stir garlic into sausage mixture; cook and stir until fragrant, about 1 minute.
  • Stir red beans, chicken broth, ham hock, bay leaves, black pepper, thyme, cayenne pepper, and hot sauce into the sausage mixture; bring to a boil, reduce heat to low, and simmer gently, stirring occasionally, for 1 1/2 hours. Add salt and continue simmering until beans are soft, meat is tender, and desired consistency is reached, 1 1/2 to 2 hours more. Season with salt.
  • Spoon rice into bowls, ladle red beans mixture over rice, and top with green onion.
