1 medium head red cabbage (about 2 pounds), shredded
8 bacon strips, chopped
1 small onion, quartered and thinly sliced
2 tablespoons all-purpose flour
1/4 cup packed brown sugar
1/2 cup water
1/4 cup cider vinegar
1 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large saucepan, place steamer basket over 1 in. of water. Place cabbage in basket. Bring water to a boil. Reduce heat to maintain a simmer; steam, covered, just until tender, 6-8 minutes., Meanwhile, in a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan., Add onion to drippings; cook and stir over medium-high heat until tender, 4-6 minutes. Stir in flour and brown sugar until blended. Gradually stir in water and vinegar. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Stir in cabbage, bacon, salt and pepper.

1/2 medium head red cabbage, cored and thinly sliced
2 teaspoons kosher salt
2 strips thick-cut bacon
1/2 medium red onion, peeled and chopped
1 Granny Smith apple, peeled, cored and thinly sliced
1/2 cup currants
1/2 teaspoon caraway seeds
1/4 cup red wine
Freshly ground pepper to taste
1/2 cup crumbled Stilton

Steps:

  • Place cabbage in large bowl and toss with 1 teaspoon of salt. Let stand for 15 minutes. Meanwhile, cook bacon in large skillet over medium-low heat until crisp, about 10 minutes. Drain, reserving 1 teaspoon of fat. Crumble bacon and set aside. Wipe out skillet and add reserved fat. Drain cabbage.
  • Saute onion over medium heat until soft, about 5 minutes. Add cabbage to the skillet in batches; as the cabbage wilts more will fit in the pan. Stir in apple, currants and caraway seeds and cook for 10 minutes. Stir in wine, lower heat, cover and cook until soft, about 30 minutes.
  • Stir in the remaining salt, the pepper and bacon. Cover and cook for 10 minutes more. Let cool. Assemble the pie and bake as above. Sprinkle the cheese over the top and bake for 5 minutes longer.

5 thick bacon strips, cut into small pieces
1 large onion, chopped
2 cloves garlic, minced, or more to taste
1 medium head cabbage, shredded or chopped
1 teaspoon paprika
1 pinch white sugar
salt to taste
ground black pepper to taste

Steps:

  • Cook bacon in a skillet over medium heat until crisp, about 5 minutes. Remove bacon and set aside. Add onion and garlic and cook in bacon grease until onion is soft and translucent, about 5 minutes. Stir in cabbage, paprika, sugar, salt, and pepper; mix to combine. Cook for about 10 minutes.

Smoky bacon and cabbage are a classic Eastern European combination, but tossing them with pasta and a bit of cream takes them in a heartier direction. Use a short, curvy shape, such as cavatappi or fusilli, that can catch the silky sauce in its crooks. Red cabbage is called for here, but regular green or Savoy cabbage would also work well. Top any leftovers with a fried egg and, of course, extra grated cheese.

1 pound cavatappi, fusilli or other short, curvy pasta
Kosher salt
2 tablespoons olive oil
8 ounces thick-cut bacon, sliced into 1/4-inch pieces
1 medium red onion, thinly sliced
4 cups thinly sliced red cabbage, from about 1/2 small cabbage, cut into pieces no larger than 3 inches wide
Black pepper
1 cup heavy cream
1/4 cup grated pecorino or Parmesan, plus more for serving
2 tablespoons mixed chopped fresh herbs, such as Italian parsley, thyme or oregano, for garnish (optional)

Steps:

  • Cook the pasta in a large pot of well-salted boiling water (2 heaping tablespoons kosher salt to about 7 quarts water) according to package instructions until it's just short of al dente. Reserve 1 cup pasta water, and drain.
  • Meanwhile, heat the olive oil over medium heat in a 12-inch skillet, preferably with sides. Add the bacon and cook until crisp, about 5 to 6 minutes, then remove with a slotted spoon and set aside on a plate lined with paper towels.
  • Add the onion to the pan, toss to coat in the rendered bacon fat and cook until translucent, about 1 to 2 minutes. Add the cabbage, toss to combine and cook until the cabbage is tender but maintains its vibrant color, about 3 to 5 minutes more. Season with salt and pepper.
  • Turn the heat to low and add the pasta to the skillet along with the bacon, heavy cream and grated cheese tossing to coat until the pasta is glossy with sauce and it thickens slightly, about 1 to 2 minutes. If you want the pasta saucier, add in 1/4 to 1 cup pasta water and toss until the desired consistency is reached. Top with the mixed herbs and pass grated cheese at the table, if desired.

  • Cook bacon in heavy large skillet over medium-high heat until crisp, about 5 minutes. Transfer to paper towels using slotted spoon and drain. 1/2 medium red cabbage (about 1 pound), finely shredded
1/4 medium green cabbage (about 1/2 pound), finely shredded
1/2 pound smoked bacon (about 8 strips), cut into 1/4-inch pieces
1 teaspoon caraway seeds (optional)
3 tablespoons olive oil
1 garlic clove, minced
1/4 cup plus 3 tablespoons cider vinegar
2 teaspoons sugar
2 1/2 teaspoons coarse salt
Freshly ground pepper
1 Granny Smith apple (optional)

Steps:

  • Toss the cabbages together in a large bowl; set aside. Cook bacon in a medium skillet over medium heat, stirring occasionally, until crisp, about 5 minutes. Transfer with a slotted spoon to paper towels to drain; set aside. Pour off all but about 1 tablespoon fat from skillet.
  • Add caraway seeds to skillet, if desired; cook over medium heat, shaking skillet often, until seeds begin to pop, about 1 minute. Add oil and garlic; cook, stirring, 10 seconds (do not let garlic brown). Remove from heat; pour in vinegar. Add sugar and salt; stir until dissolved. Pour dressing over cabbage. Season with pepper.
