RED CABBAGE
A sweet and sour side dish that's really nice with pork, ham, or sausage. Tastes better on day two, and freezes well.

Steps:
- Place water in a large saucepan, and stir in cabbage, apples, brown sugar, vinegar, cinnamon, allspice, cloves, and 1 tablespoon butter. Bring to a boil. Reduce heat, and cover. Simmer 45 minutes, stirring occasionally, until cabbage is tender. Stir in remaining butter before serving.

Steps:
- Heat a skillet over medium high heat. Add oil and onion and saute 2 minutes. Add cabbage and turn in pan, sauteing it until it wilts, 3 to 5 minutes. Add vinegar to the pan and turn the cabbage in it. Sprinkle sugar over the cabbage and turn again. Season with mustard seed, salt and pepper and reduce heat a bit. Let cabbage continue to cook 10 minutes or until ready to serve, stirring occasionally.
SAUTEED RED CABBAGE
The vegetable side has a slightly sweet-and-sour flavor.

- Halve, core, and thinly slice red cabbage.
- Heat olive oil in a large skillet over medium heat. Add cabbage and red-wine vinegar; season with coarse salt and ground pepper. Cook, tossing frequently, until cabbage is crisp-tender, about 15 minutes (add a splash of water if pan becomes dry).
- Add light-brown sugar; toss until dissolved, about 30 seconds. Season again with salt and pepper, as desired.

- In a large saucepan, saute onion in butter until tender. Stir in the cabbage, salt and pepper. Reduce heat; cover and simmer for 10 minutes. Stir in apples and water; cover and simmer 45 minutes longer or until cabbage and apples are tender. , Combine vinegar and brown sugar; stir into cabbage mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until cabbage and apples are glazed.

RED CABBAGE - THE ONLY WAY TO COOK IT!
I was served this by an old friend but never forgot how great it tasted, and have never been able to re-create it until by chance, meeting them again and insisting on having this oh-so-simple recipe for the best cabbage I have ever eaten!

Steps:
- Place the sliced cabbage in a pan and add the red wine vinegar and water and bring to the boil.
- Reduce heat after boil and leave to simmer with lid off for 10 minutes.
- Add the cranberry jelly to the cabbage and simmer for another 20 minutes or until the liquid has reduced to coat the cabbage.
- Serve (great with my sticky onion marmalade sausages and cheesy mashed potato bake!).
