Brazilian drink that's all the rage in Europe. Refreshing, cold, tart and sweet at the same time. Plain delicious.

- Crush sugar and lime wedges in bottom of glass. Add ice cubes then top off with Cachaca and a dash of club soda.
RED GRAPE AND ACAI CAIPIRINHA
A fun, inventive take on the traditional Brazilian caipirinha. The açaí gives it a good depth of flavor. I used the frozen açaí pulp, defrosted. I also make caipirinhas with just red grapes and it's delicious too.

Steps:
- Place grapes and sugar into a glass; mash well with a cocktail muddler. Fill the glass with ice cubes. Pour in cachaca and (defrosted) acai pulp; stir well. You can also shake the cocktail in a cocktail shaker.

- In a large rocks glass squeeze and drop in 2 eighths of lime. Add sugar, crush and mix with a spoon. Pour in the cachaca and plenty of ice. Stir well.

RED GRAPE FOCACCIA

Steps:
- On the day or the night before, cut up 1 potato into quarters and boil it with its skin on until fork tender. Chill until ready to use, if making the night before.
- Warm together the potato and milk.
- Meanwhile, place the flour, salt, olive oil, and yeast in a mixing bowl with a dough hook making sure the yeast isn't touching the salt. Pour in the warmed milk and potato and mix on low for 6 minutes. Cover the bowl with plastic wrap and let sit 1 hour or until double in bulk.
- Turn the mixer on to punch down the dough, then turn it out onto a flour work surface. Roll the dough into a flat rectangular sheet. Grease a sheet pan well with olive oil and transfer the dough to that pan. Continue to roll the dough into the corners of the pan to fit it exactly.
- Prick the dough all over then rub the surface with more olive oil. Dot the surface with grapes in even rows. Cover with plastic wrap and let rise in a warm place until it reaches the top of the sheet pan.
- Preheat oven to 375 degrees F.
- Sprinkle with coarse sugar and bake for 25 to 30 minutes until golden brown. Remove from oven and let cool in pan only a few minutes, then slide it out of the pan (steam gets trapped under the dough and can get soggy if you leave it in the pan too long). Cut into rectangular pieces and serve.

- In a mixing glass, gently muddle fruits with sugar. Add ice and cachaca and shake vigorously. Pour into an old-fashioned glass and serve.

- Pour the wine into the glass. Stir well, and serve.

REFRESHING CAIPIRINHA
Caipirinha is the national drink of Brazil. The drink is made with cachaça (pronounced - kuh-sha-suh). It is technically a brandy and a member of the aguardente family. There is an old adage in Brazil: "quanto pior a cachaça, melhor a caipirinha" -- the worse the cachaça, the better the caipirinha. The name caipirinha is derived from the Portuguese word caipira (hick, hayseed, country bumpkin, rube, etc.) coupled with the -inha suffix (a diminutive denoting little or small) and can be roughly translated as little hick, little hayseed, little country bumpkin, little rube, etc., etc. Poor man's drink or not, cachaça has become an integral part of Brazilian culture and its significance ranks right up there with soccer/football (futebol), carnival and samba as Brazilian national icons. The Brazilians like it sweet.... VERY sweet. In Brazil, the very best caipirinhas are made with "limões gallegos" -- what in the U.S. is often referred to as a key lime. Can also be made by the pitcher!

Steps:
- Trim the ends off the key limes and halve lengthwise. Cut each half into 4 slices.
- In a cocktail shaker, using a wooden spoon or a pestle, muddle the key limes with the 1/4 cup of sugar until juicy and the sugar dissolves.
- Add the cachaça and the crushed ice and shake for 10 seconds; taste and add more sugar if desired.
- Pour (not strain) into an old-fashioned glass or tumbler ice and serve.
