This was a requested recipe from an old Bon Appetit magazine. A marvelous apple pie with almonds and raisins in a crumb top.

1/2 lb puff pastry
3 large tart apples, peeled and thinly sliced (red apples)
1 cup water
3/4 cup sugar
2 tablespoons cornstarch dissolved in 1/4 c water
1 tablespoon fresh lemon juice
1/2 teaspoon vanilla
3/4 cup graham cracker crumbs
1/2 cup butter, room temperature
6 tablespoons dark raisins
1/4 cup blanched sliced almonds
2 tablespoons sugar
1/4 teaspoon cinnamon
1/8 teaspoon mace
1/8 teaspoon nutmeg

Steps:

  • Grease 10-inch pie plate. Roll puff pastry dough 1/8 inch thick and fit into plate, cutting off excess with knife. Arrange apples over pastry.
  • Place rack in middle of oven and preheat to 400*F.
  • Combine water and sugar in small saucepan and bring to a boil over medium heat, stirring until sugar dissolves, then boil 10 minutes without stirring.
  • Add dissolved cornstarch and stir constantly until thickened. Set aside for 15 minutes then stir in lemon juice and vanilla.
  • Pour over apples.
  • Thoroughly combine crumbs, butter, raisins and almonds. Mix in remaining ingredients and sprinkle evenly over apples.
  • Bake 15 minutes; cover with foil and bake 30 minutes longer. Serve warm.

pinch of nutmeg
Custard:
2 eggs
1 cup sugar
1/2 cup Original Bisquick®
3/4 cup milk
Crumble:
1 cup Original Bisquick®
1/3 cup brown sugar
1/2 cup chopped walnuts
3 tablespoons butter (hard)
heavy cream

Steps:

  • Butter a 10-inch pie plate. Sprinkle the sliced apples with cinnamon and nutmeg, and mix together. Place the apples in the pie plate. For Custard: Beat together the ingredients for the Custard, and pour it over the apples. For Crumble: Mix together the ingredients for the Crumble, and cut in the butter. Sprinkle this over the apples, and press down lightly. Bake in a preheated oven at 325° for 1 hour. Serve with whipped cream. Refrigerate pies containing eggs (pumpkin, custard, cream pies); however, they don't freeze well. Fruit pies can be kept at room temperature or stored in frig, loosely covered, for two days. You can freeze a baked fruit pie up to four months. Freeze uncovered till frozen, then wrap tightly and return to freezer. To serve a double-crusted fruit pie, unwrap and thaw at room temperature one hour; heat pie at 375° on the lowest oven rack 35-40 minutes.

Everyone in the family has something that they're the best at making. I make the best cookies, my sister, Carol, makes the best pies in the whole world!...no competition in our family! This recipe includes an ingredient called free-flowing brown sugar. This is a non-clumping or caking version of ordinary brown sugar. It has a lower moisture content then the traditional one, which makes it free flowing much like granulated sugar. It is available at most specialty supermarket. If it is not available in your part of the world, use regular brown sugar and make sure it is broken up, free of clumps. Macintosh or Granny Smith apples are the best choices for apple pie because they are the least mushy apples.

2 pounds Granny Smith apples
1 cup white sugar
½ cup brown sugar
2 teaspoons ground cinnamon
½ cup all-purpose flour
2 tablespoons butter
1 tablespoon white sugar
1 recipe pastry for a 9 inch double crust pie

Steps:

  • Peel and slice apples. Toss with sugars, cinnamon and flour. Set aside.
  • Roll crust to make slightly larger to fit 10-inch glass pie pan. Fit bottom crust in pie pan. Turn in apple mixture and dot with butter. Put crust on top and crimp edges of crust together.
  • Preheat oven to 450 degrees F (230 degrees C).
  • Wet hands with water and dampen top of pie. Sprinkle with additional sugar. Puncture top of pie with fork so the steam can escape.
  • Bake for 15 minutes in preheated oven. Reduce heat to 350 degrees F (175 degrees C) and continue baking for about 45 minutes more, until crust is golden brown. It's a good practice to place a piece of aluminum foil slightly larger than the pie under the pie plate to catch overflows. Serve warm.

3/4 cup margarine
2 cups sugar
3 eggs
1 egg yolk
3 1/3 cups flour
1 tablespoon baking powder
1/2 teaspoon baking powder
1 1/2 teaspoons salt
2 cups prepared lemon pudding (make from packaged mix, or use canned)
3 tablespoons milk

Steps:

  • Preheat oven to 350. Grease two loaf pans.
  • In large bowl, cream the margarine and sugar together thoroughly. Add the eggs, one at a time, mixing well after each.
  • Sift the dry ingredients together and add them to the eggs. Add the lemon pudding and milk. Mix until very well blended.
  • Pour the batter into the prepared loaf pans. Bake at 350 for 40 to 50 minutes, or until a toothpick inserted in the center comes out clean.
