Red Potato-Cauliflower Salad (Weight Watchers 0 point) Recipe - (4.5/5) image

2-1/4 C. diced red potatoes (about 12 oz.)
1 (10 oz.) bag cauliflower florets (about 3 cups)
1/2 C. chopped green bell pepper
1/2 C. chopped celery
1/4 C. fat-free mayonnaise
1/4 C. fat-free sour cream
1/4 C. chopped dill pickles
1 tbs. cider vinegar
1 tbs. prepared mustard
1/2 tsp. salt
1/4 tsp. black pepper

Steps:

  • Place potatoes and cauliflower in a large microwave-safe bowl. Cover with wax paper; microwave on HIGH 8-14 minutes or until tender. Drain and rinse with cold water; drain. While vegetable mixture cooks, combine celery, green pepper and next 7 ingredients in a large bowl. Add potato and cauliflower; stir to combine. Let stand 15 minutes before serving.

1 large head of cauliflower, cut into bite-sized florets (6 to 8 cups)
A heaping 1/2 cup mayonnaise
2 tablespoons yellow mustard
1 tablespoon apple cider vinegar
Freshly ground black pepper
1/3 cup chopped dill pickles
2 tablespoons chopped fresh dill
1 tablespoon chopped fresh chives
3 hard-boiled eggs, peeled and chopped
2 celery stalks, chopped
1 shallot, diced

Steps:

  • Bring a pot of salted water to a boil. Add the cauliflower florets to the boiling water and cook until tender, 5 to 7 minutes. Drain well and cool to room temperature.
  • Add the mayonnaise, mustard, vinegar, 1/2 teaspoon salt and 1/2 teaspoon pepper to a large mixing bowl and whisk to combine. Then add the cooled cauliflower, pickles, dill, eggs, celery and shallot. Mix until thoroughly combined. Serve at room temperature or cover and store in the refrigerator until ready to serve.

2 medium sweet red peppers, seeded and quartered
1 medium green pepper, seeded and quartered
summer squash, halved lengthwise
zucchini, halved lengthwise
1 cup red onion, sliced
12 ounces canned artichoke hearts, without oil, drained
1 teaspoon dried thyme
1/2 teaspoon table salt
1/4 teaspoon black pepper, freshly ground

Steps:

  • Preheat oven to 450ºF. Coat 2 large baking sheets with cooking spray.
  • Arrange peppers, squash, zucchini, onion and artichokes on prepared baking sheets, flesh side up, and coat vegetables with cooking spray; sprinkle with thyme, salt and black pepper.
  • Roast until vegetables are tender and golden brown, about 20 to 25 minutes. Chop vegetables into bite-size pieces and serve. Yields about 3/4 cup per serving.

Steps:

  • Put broccoli,cauliflower, tomatoes and onion in a large bowl.
  • Mix Fat Free Miracle Whip, red wine vinegar, and Splenda until smooth (you may want to add more or less vinegar and Splenda to suit your taste).
  • Pour dressing over salad and mix gently until completely combined.
