CLASSIC TEXAS CAVIAR
Don't bother with soaking and cooking beans for Classic Texas Caviar - the canned variety works well. But skip the bottled dressing, and take a little extra time to measure your own vinegar, oil and spices.

COWBOY CAVIAR
Depending on where you're from, this simple dip is known as cowboy caviar or Texas caviar, and it's a favorite at tailgates and potlucks all over the South. Its creator, Helen Corbitt, a dietitian from New York, had never heard of black-eyed peas when she moved to Texas in 1931. The exact details are fuzzy, but at some point in her 40 years working in restaurants there, she combined black-eyed peas with a simple vinaigrette, and it was a big hit. The recipe has evolved over the years, and you can find a number of variations online. Some contain corn and black beans (as this one does), and others avocado. Some call for bottled Italian salad dressing, others homemade. No matter how you tweak it, it's always good with a pile of tortilla chips.

REDNECK CAVIAR
This dip is really good with Tostitos scoops or your favorite cracker. My son didn't like any of these ingredients until he tried this combination. You may also substitute black beans for a can of pinto beans. (It is also called Cowboy Caviar or Texas Caviar).

Have fun with this dish. This is a great dish to experiment with, you can add or subtract ingredients to fit your personal taste. I have added black-eyed pea relish, jalapeños, and even pear relish on occasions, depending on my mood and what I had on hand. This is a fun dish and people of all ages love it.

- Southern Redneck Caviar. This recipe is a pretty common or standard redneck caviar you would find in the southern US. The great thing about redneck caviar is that there isn’t an original recipe, it’s more a type of dish, just like how there isn’t a dead-on recipe for salads.
- Redneck Caviar With White Acre Peas. This dish takes a slightly different approach to ingredients by including some more south of the border ingredients such as jalapenos and avocado.
- Ozark Redneck Caviar. This is a recipe that represents the Ozarks, it utilizes lots of local beans like purple hull pea and crowder peas which are ripe in the area during the summer.
- Spicy Redneck Caviar. We all know southern food is supposed to be spicy. This dish takes on that tradition by including lots of green chilies and red peppers to give the dish a spicy kick which takes it a little closer to the border of Mexico.
- Redneck Caviar With Pimento Cheese. Pimento cheese is loved across the southern states for obvious reasons, but this dish takes redneck caviar to a new cheesy level.
