CREAMY COLESLAW WITH PINEAPPLE
We love creamy coleslaw with pineapple. This one comes out great. Goes great with B-B-Q ribs or pulled pork. If you don't want as sweet you can use less sugar and add a little more apple cider vinegar.

- 1. Toss all the slaw mix ingredients together in a large bowl.
- 2. Put all the dressing ingredients in a separate bowl and whisk well
- 3. Pour dressing over slaw mix and toss well. Cover and refrigerate for at least 2 hours.
- 4. Before serving, toss well again.

- 1. In a large bowl, combine cabbage, carrots and red cabbage.
- 2. In a another bowl, combine mayonnaise, heavy cream, vinegar, sugar and salt. Whisk together until smooth and sugar and salt are dissolved.
- 3. Add mayo dressing to cabbage slaw and gently toss together until well-distributed. Add pineapple and raisins and gently toss to combine. Chill for about 10 to 15 minutes to allow flavors to meld.

- Remove the outer leaves of the cabbage, then wash it under running water. Dry well with a clean kitchen towel. Cut the cabbage into quarters then remove the core.
