- Combine the tomatoes, chili powder, garlic, 2/3 cup water and 1/2 teaspoon salt in a small saucepan. Bring to a simmer over medium heat and cook, breaking up the tomatoes with a spoon, for 10 minutes. Add the chicken breast, nestling it in the sauce, and simmer, flipping once, until cooked through, 8 to 9 minutes per side. Transfer the chicken to a plate, shred it, and return it to the sauce. Season with salt and pepper.
- Lay a tortilla on a work surface and top evenly with 1/2 cup Oaxaca cheese. Add a quarter of the shredded chicken and tomato sauce and a quarter of the beans. Fold the tortilla in half to enclose the fillings. Repeat with the remaining tortillas and ingredients.
- Melt 1/2 tablespoon butter in a large nonstick or cast-iron skillet over medium heat. Cook one of the quesadillas, flipping once, until golden brown and the cheese is melted, about 3 minutes per side. Remove to a cutting board and repeat with the remaining quesadillas.
- Cut into triangles and serve with the guacamole, salsa, scallions and sour cream.

- Heat the lard in a large skillet over medium heat. Add the onion and garlic and cook, stirring, until soft, about 5 minutes. Add the ground pork, ancho powder, cumin, paprika, oregano, cinnamon, clove and 1/2 teaspoon salt and cook, stirring and breaking up the meat, until brown, about 4 minutes. Add 1/2 cup water, bring to a simmer and cook for 5 minutes. Transfer to a medium bowl.
- Lay a tortilla on a work surface and top evenly with 1/2 cup Cheddar. Add 1/4 of the chorizo, 1/4 of the beans and some jalapeno. Fold the tortilla in half to enclose fillings. Repeat with remaining tortillas and ingredients.

CHICKEN AND BEAN QUESADILLAS

- Toss chicken with oil and Cajun seasoning. Bake or saute until cooked through. Allow to cool slightly, and dice into small bite-sized pieces.
- Spray skillet with cooking spray and heat over medium-high heat.
- While skillet heats, start assembling your quesadillas. Spread about 2 tbsp. refried beans evenly over one half of the tortilla. Arrange diced chicken over the beans, sprinkle 1/4 c. of cheese over the chicken, and spread 1-2 tsp. drained salsa over the cheese. Fold tortilla in half.
- Place quesadillas in the hot skillet as you make them and have room. (This is a bit of an assembly line process.) Allow to cook 3-5 minutes before carefully flipping each quesadilla over. The first side should be nice and brown. Cook 3-5 minutes on the opposite side until both sides are brown and the cheese is melted. Transfer cooked quesadillas to a clean plate or cutting board.
- Continue making, flipping, and removing quesadillas until they are all cooked. Cut each quesadilla into halves or thirds before serving. Enjoy!
CHICKEN AND REFRIED BEAN ENCHILADAS

- Combine both cheeses.
- Combine chicken, refried beans and salsa. Add 3 cups of combined cheeses.
- Heat oil in small skillet.
- Soften each tortilla in oil, approximately 5 seconds per side. Dip in enchilada sauce.
- Immediately fill with some of chicken mixture; roll and place in 13x9 pan.
- Repeat with remaining tortillas and filling.
- Top enchiladas with remaining sauce and cheese.
- Bake at 350º for 20-30 minutes, until cheese is melted and bubbly.

- Saute chicken and onion over med-high heat until chicken is no longer pink and onions are transparent.
- In food processor or blender, combine black beans, salsa, and taco seasoning and blend until creamy.

- Heat the oil in a large frying pan and cook the onion and garlic for 2 mins. Add the cumin and cook for 1 min more. Tip in the beans, paprika and a splash of water. Using a potato masher, break the beans down as they warm through to make a rough purée. Season generously.

- Preheat the oven to 425°F (220°C). Line a baking sheet with foil and grease with nonstick spray.
- Make the chicken tinga: Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté for 4 minutes, or until the onion is translucent and starting to brown. Add the shredded chicken, 1¾ cups (415 G) Pace® Medium Picante Sauce, the adobo sauce, and salt, and stir to combine. Bring to a simmer and cook for 5 minutes, stirring often, until the chicken is heated through. Remove the pan from the heat.
- Assemble the quesadilla: Place 8 tortillas around the edges of the prepared baking sheet so about half of each tortilla hangs over the side of the pan. Place another 2 tortillas in the center to cover the pan completely.
- Spread the refried beans on top of the tortillas inside the baking sheet, making sure to spread all the way to the corners. - Brush the top of the tortillas with the melted butter, then place another baking sheet over the tortillas to keep in place.
- Bake for 20 minutes, then remove the top baking sheet and bake for another 15 minutes, or until the tortillas are browned. Remove from the oven and let rest in the pan for 10 minutes.
- Use the foil to lift the quesadilla onto a cutting board, then remove the foil.
- Drizzle the quesadilla with the Pace® Chunky Salsa and sour cream, then top with the cilantro. Slice into 12 rectangles and serve.
