Refrigerator Cucumber Slices image

This is a super way to use up all those cucumbers from summers harvest.....and may I add, it also tastes great.

Yield 3 quarts

Number Of Ingredients 7

6 large cucumbers, cut into 1/4 inch slices
3 medium onions, cut into 1/8 inch slices
3 cups sugar
3 cups cider vinegar
4 teaspoons pickling salt
1 1/2 teaspoons mustard seeds
1/2 teaspoon alum

Steps:

  • In a large container, combine cucumbers and onions.
  • In a large bowl, combine the remaining ingredients, stirring, until sugar is dissolved.
  • Pour over cucumber mixture; mix well.
  • Cover and chill overnight.
  • May be refrigerated for up to 2 weeks.

This easy refrigerator pickles recipe is a great way to use cucumbers and onions from the garden. Here in Upstate New York, we have an abundance of cucumbers. -Catherine Seibold, Elma, New York

Number Of Ingredients 9

6 cups thinly sliced cucumbers
2 cups thinly sliced onions
1-1/2 cups sugar
1-1/2 cups cider vinegar
1/2 teaspoon salt
1/2 teaspoon mustard seed
1/2 teaspoon celery seed
1/2 teaspoon ground turmeric
1/2 teaspoon ground cloves

Steps:

  • Place cucumbers and onions in a large bowl; set aside. Combine remaining ingredients in a saucepan; bring to a boil. Cook and stir just until the sugar is dissolved. Pour over cucumber mixture; cool. Cover tightly and refrigerate for at least 24 hours before serving.

7 cups thinly sliced cucumbers
1 cup bell pepper, green, thinly sliced
1 cup thinly sliced onion
1 tablespoon celery seed
2 tablespoons salt
1 cup sugar
1 cup vinegar

Steps:

  • Combine cucumbers, green/red pepper, onion, celery seed and salt in bowl; mix well.
  • Stir sugar into vinegar in small bowl until dissolved.
  • Pour over vegetables.
  • Chill, covered, in refrigerator overnight.
  • May store in refrigerator for 2 weeks.
  • (An optional first step is to mix the cuke slices with salt and allow the water to drain out for an hour. If this is done, it may be necessary to add an additional 2 tsps. of salt after draining. Using red peppers makes this a colorful dish).
