BURRITOS
The creation of burritos is attributed to Juan Mendez, a food stand merchant from the Bella Vista neighborhood of Ciudad Juarez in the state of Chihuahua.

Steps:
- In a hot pan with two tablespoons of oil, brown the ground beef with two chopped onions.
- When the meat is almost cooked, add the garlic, cumin, oregano, salt and pepper.
- Stir for a few minutes over low/medium and set aside.
- Cook the beans in water for 45 minutes and keep the cooking water.
- In a hot pan with four tablespoons of oil, fry the remaining chopped onion over medium heat until it becomes translucent but not brown.
- Then add the cooked beans, drained and 8 tablespoons of cooking water from the beans and salt.
- Mash beans while cooking to get a rather coarse puree. Continue to stir.
- Add a little cooking water if necessary so the mashed beans are fairly thick but not too compact.
- Keep on low heat for about 5 minutes, stirring constantly.
- Warm tortillas by steaming or baking them wrapped in aluminum foil to prevent them from drying.
- Top tortillas with ground meat,
- frijoles refritos
- and any of the optional toppings.
- To fold burritos, start by closing the top and bottom edges for about 2 inches (5cm), so food is enclosed properly when folding is completed.
- Finish by wrapping the burrito on itself.
AWESOME BREAKFAST BURRITOS

- In a large cast-iron skillet over medium-high heat, add the bacon and onion. Cook until the bacon is crisp and the onion is softened, 6 to 8 minutes. Remove to a paper towel-lined plate. Add the sausage to the same skillet and, using the back of a wooden spoon, break it up into small bits. Cook until golden brown, 5 to 7 minutes. Add the bacon and onion back to the skillet, along with the ham. Pour in the whisked eggs and use a rubber spatula to scramble the eggs and meat. Cook until the eggs are set, about 5 minutes, then add the cheese, salsa verde and chiles and stir everything together. Season with salt and pepper.
- Divide the scramble among the 12 tortillas. Roll up the tortillas, leaving the ends open. Wrap each burrito in foil. Serve immediately.
- To make ahead: Refrigerate the burritos after assembling; reheat the next day at 350 degrees F for 35 minutes in a pan covered with foil.
PW'S BREAKFAST BURRITOS

- Begin by browning the breakfast sausage in a skillet over medium heat. Drain off the grease and reduce the heat to low.
- Crack the eggs into a bowl. Add the half-and-half, seasoned salt and some pepper, and whisk to beat the eggs lightly.
- With the heat still on low, pour the egg mixture over the sausage mixture. Now, with a spoon or spatula, very gently stir the mixture. Continue lightly cooking over low heat until the eggs are set. Now taste and adjust the seasoning, adding more seasoned salt or pepper if desired.
- To assemble, warm the stack of tortillas on a paper towel in the microwave for about 30 seconds. Place a heaping spoonful of egg mixture onto the middle of a warm tortilla, and top with a spoonful of Breakfast Potatoes. Tuck in the sides and roll the tortilla until closed. Wrap in foil sheets and keep warm until ready to serve.
- For cheesy and spicy variations, add grated Monterey Jack, jarred jalapenos, hot sauce or all three.
- Preheat the oven to 375 degrees F.
- Place the potatoes on a baking sheet and bake until fork tender, about 45 minutes.
- Place the hot potatoes on a cutting board and dice them into 1-inch pieces.
- Heat a skillet over medium-low to medium heat. Next, put a tablespoon of canola oil in the skillet. Add in some butter and the onions and saute until they start to turn brown. Next, throw in the cooked diced potatoes and the peppers. Salt and pepper the potatoes, then stir them around, slightly pressing/packing them in the skillet. Cook without stirring for 5 to 7 minutes. You want to make sure the pan is hot enough to crisp the potatoes. Add more butter to the pan as necessary for moisture.
- After several minutes, use a spatula to flip the potatoes over and cook on the other side for another 5 to 7 minutes.
BEEF AND BEAN BURRITOS

- Preheat the oven to 170 to 180 degrees F.
- In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
- Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till its melted. Remove from the heat.
- Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
- When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
- Sprinkle the tops with the cilantro leaves and serve immediately to the fork-bangers in your life. They'll kiss you and hug you. Repeatedly.
BEEF AND BEAN BURRITOS (PIONEER WOMAN)

- In a large skillet over medium heat, cook the ground beef and onion until the beef is cooked through.
- Add the cumin, oregano, chili powder, and salt and stir to combine.
- Pour 7 ounces of the sauce into the meat and simmer over low heat for 5 minutes.
- Add a little water if the mixture gets too dry.
- Heat the refried beans in a saucepan over medium-low heat.
- Add the cheese and stir until it's melted. Remove from the heat.
- Heat the tortillas in the microwave for 1 minute, then spread a small amount of beans on each tortilla.
- Add a small amount of meat.
- Add any other optional ingredients you may be using or just leave as they are.
- Fold over the ends of the tortilla and roll them up.
- Place two burritos on a microwave-save plate.
- Drizzle some of the remaining red sauce over the top and sprinkle with mroe grated cheddar.
- Microwave the burritos for a minute or until the cheese is melted. Repeat with the rest of the burritos.
- Sprinkle the tops with cilantro leaves and serve immediately.

REVOLUTIONARY BURRITOS
Another copycat recipe from a local restaurant. Fact: we stole the recipe. The name of this Cuban-inspired burrito was changed to protect the innocent.

- NOTE: All measurements given are estimated.
- In skillet, heat olive oil over medium heat and cook the sweet potatoes until golden on all sides, about 8-10 minutes. Remove from pan and drain on paper towel.
- In same pan, cook the plantains on both sides until golden. Drain on paper towel.
- Divide remaining ingredients among the tortillas.
- Roll up the burrito by first rolling only 1/4 of the way, stop, fold in sides, then roll the rest of the way up.
- Serve seam side down.
- Raise your fist, shout "Hail, Burrito"! and take a big bite.
