My mother gave me the recipe for this old-fashioned pudding. It's a great way to use up day-old bread. Nothing enhances this traditional dessert better than garden-grown rhubarb. My husband and 8-year-old daughter just love it.

8 slices bread, lightly toasted
1-1/2 cups milk
1/4 cup butter, cubed
5 eggs, lightly beaten
3 cups chopped fresh or frozen rhubarb, thawed
1-1/2 cups sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup packed brown sugar

Steps:

  • Remove crusts from bread; cut into 1/2-in. cubes. Place in a greased 1-1/2-qt. baking dish. , In a large saucepan, heat milk over medium heat until bubbles form around sides of pan; remove from the heat. Stir in butter until melted. Pour over bread; let stand for 15 minutes., In a large bowl, combine the eggs, rhubarb, sugar, cinnamon and salt; stir into bread mixture. Sprinkle with brown sugar. Bake at 350° for 45-50 minutes or until set. Serve warm. Refrigerate leftovers.

This dessert couldn't be simpler. Unlike many custards, it doesn't require a hot-water bath. Shallow gratin dishes, shown here, allow the rhubarb to spread out and cook evenly. You can also use 4-inch ramekins (2 inches deep). Simply give the rhubarb a stir halfway through step 1.

Unsalted butter, for dishes
3/4 cup sugar, plus more for dishes
12 ounces rhubarb, trimmed and cut crosswise 1/4 inch thick
1 cup whole milk
1/2 cup heavy cream
1/3 cup all-purpose flour
2 large eggs, plus 1 large egg yolk
Coarse salt

Steps:

  • Heat oven to 350. Butter six 5 1/2-inch gratin dishes (1 inch deep), and dust with sugar; arrange on a rimmed baking sheet. Toss rhubarb with 1/4 cup sugar, and divide among dishes. Cover each first with parchment and then with foil, and bake until rhubarb is just beginning to release liquid and soften, about 30 minutes. Leave oven on.
  • Puree milk, cream, flour, eggs and yolk, remaining 1/2 cup sugar, and 1/2 teaspoon salt in a blender until smooth. Divide mixture evenly among dishes. Bake, uncovered, until just set, 22 to 24 minutes. Let cool for 20 minutes.

While visiting my cousin in Michigan I saw her rhubarb patch and asked for a root to grow at home; that was 6 days ago- she dug up a piece and I carefully...

2 to 3 c fresh rhubarb, cut in small pieces
2/3 c water
1/2 c granulated sugar.divided, plus 3 tablespoons more
1/2 c bisquick
1/4 tsp salt
3/4 c milk or cream
3 large eggs
3 Tbsp melted butter
2 tsp vanilla extract

Steps:

  • 1. Preheat oven to 400^. Spray a 9 inch square glass dish or pie dish. Set aside. --- Put rhubarb and water and 2/3 cup sugar in a saucepan; cook for about 10 minutes only, so it is still al-dente. Drain liquid into a measuring cup and reserve liquid.(there shouldn't be very much)
  • 2. Spread rhubarb evenly in bottom of prepared dish. Set aside.
  • 3. In a blender, combine the milk, eggs, remaining sugar, reserved liquid ,Bisquick, salt and vanilla and blend until combined, about 30 seconds. Add melted butter and blend again.
  • 4. Pour custard mixture over rhubarb and bake for 35-40 minutes until custard is set in center and lightly browned on top. Remove from oven and sprinkle top with 2 teaspoons of sugar.
  • 5. Once it is out of the oven and cool, the custard will deflate. Top with ice cream or whipped cream , if desired. --- Note:This side photo is of raspberry custard in pie plate- I made both these using fresh berries not cooked.(this photo from hoteatsandcoolreads.) Other fresh fruit may be used and it does not need to be cooked first. such as raspberry, strawberry, only if the fruit is tart and of a hard nature.

750 g rhubarb trimmed and cut into 1 cm slices
2 tbs caster sugar
250 g plain flour
3 tsp baking powder
110 g caster sugar
75 g salted butter
150 ml milk
1 tsp vanilla extract
3 eggs beaten
3 tbs custard powder
150 g caster sugar
300 ml milk
25 g butter

Steps:

  • Preheat your oven to 180℃ / 160℃ fan / 350℉ / Gas Mark 4
  • Make sure your dish is well greased with softened butter to prevent the pudding from catching or burning.
  • Melt the butter for the batter mix and leave to one side.
  • Arrange the sliced rhubarb evenly over the base of your pudding dish and sprinkle with sugar.
  • Bring your milk and butter for the custard sauce to boiling point and leave to one side.

This classic rhubarb custard pie is the perfect dessert for a spring or summer cookout or potluck. Use a ready-made pie crust or the homemade pastry.

For the Pie Crust
1 1/4 cups all-purpose flour
1/2 teaspoon salt
Optional: 1 teaspoon sugar (scant)
8 tablespoons butter (chilled, cut into small pieces)
4 to 6 tablespoons water (with ice)
For the Rhubarb Custard Filling
3 cups rhubarb (diced)
1 1/2 cups granulated sugar
3 tablespoons all-purpose flour
Pinch salt
1/2 teaspoon ground nutmeg
2 large eggs
2 tablespoons milk
1 tablespoon butter

Steps:

  • Gather the ingredients.
  • In a large bowl, combine the flour, salt, and sugar, if using. Whisk to blend thoroughly.
  • Add the butter, working it into the flour mixture with your fingers or a pastry blender. Some pea-sized pieces of butter should remain intact.
  • Stir in 4 tablespoons of ice water. Add more ice water, about 1 teaspoon at a time, until mixture begins to hold together.
  • Turn the dough out onto a lightly floured surface and press until a smooth dough has formed. Do not overwork or the crust will be tough.
  • Shape into a flattened disk. Cover and refrigerate for 30 minutes.
  • Position a rack in the center of the oven and heat to 400 F. On a lightly floured work surface, or between sheets of lightly floured parchment, roll the dough into a circle about 11-inches in diameter.
  • Transfer the dough to a 9-inch pie plate. Fold any excess dough over on itself and crimp the edge as desired.
  • In a large bowl, toss together the rhubarb, sugar, flour, nutmeg, and salt.
  • In a small bowl, whisk the eggs with milk.
  • Add the egg mixture to the rhubarb mixture, stirring until blended.
  • Transfer the rhubarb mixture into the prepared pie crust. Dot with butter.
  • Bake until set in the center, 45 to 55 minutes. If your crust begins to brown too much, cover the edges with foil.
  • Remove the pie to a rack to cool completely before slicing.
  • Serve the rhubarb-custard pie with a big dollop of freshly whipped cream or ready-made whipped topping, if desired.

2 lbs fresh rhubarb or 2 lbs frozen rhubarb
1 1/4 cups sugar
1 teaspoon grated orange rind
2 cups water
2 tablespoons cornstarch
1/4 cup cold water
1 1/2 teaspoons vanilla
2 tablespoons sugar
2 teaspoons cornstarch
1 pinch salt
1 cup milk
1 egg yolk
1 teaspoon vanilla
grated nutmeg

Steps:

  • Cut fresh rhubarb into 3/4 inch pieces.
  • In saucepan, combine rhubarb, sugar, orange rind and water.
  • Bring to a boil, reduce heat and simmer, uncovered, until rhubarb is tender, about 10 minutes for fresh, 3 minutes for frozen.
  • Taste and add more sugar if necessary.
  • Mix cornstarch with 1/4 cup cold water, stir into rhubarb.
  • Cook stirring, over medium heat until mixture thickens and becomes clear.
  • Boil gently for about 3 minutes.
  • Remove from heat and stir in vanilla.
  • Transfer to serving bowl.
  • Let cool, cover and refrigerate.
  • Custard sauce: In a heavy non aluminum saucepan or top of double boiler, combine sugar, cornstarch and salt.
  • Stir in milk.
  • Stir over medium heat, bring to a simmer and cook for 5 minutes or until sauce is thickened slightly.
  • Whisk egg yolk, whisk about 1/2 cup of hot mixture into yolk.
  • Whisk yolk mixture back into hot milk mixture.
  • Cook, stirring, over low heat for about 2 minutes or until sauce is thickened.
  • Remove from heat, stir in vanilla, and freshly grated nutmeg to taste.
  • Cover and refrigerate until needed.
  • To serve, pour sauce over individual servings of rhubarb.
