2 cups swiss cheese, shredded
1/4 cup butter
3 tablespoons all-purpose flour
3 cups milk
1 teaspoon salt
1 teaspoon onion powder
1/2 teaspoon white pepper
1/2 teaspoon ground nutmeg

Steps:

  • Heat oven to 350 degrees.
  • Spray a 13x9-inch (3 quart) glass baking dish with nonstick cooking spray.
  • In baking dish, mix potaoes and cheese.
  • In large saucepan, melt butter over medium heat.
  • Stir in flour; cook until bubbly, stirring constantly.
  • Gradually add milk, stirring constantly.
  • Stir in salt, onion powder, pepper and nutmeg.
  • Cook and stir until mixture comes to a boil.
  • Pour over potato mixture.
  • Bake 55-65 minutes or until mixture is set and top is lightly browned.

1 ⅔ cups water, divided
1 ½ teaspoons cornstarch
1 pinch salt and ground black pepper to taste
½ teaspoon ground thyme

¾ cup shredded Swiss cheese
¾ cup shredded Swiss Gruyere cheese
3 medium potatoes, peeled and thinly sliced
2 scallions, finely chopped
1 clove garlic, minced

Steps:

  • Melt butter in a saucepan over medium-low heat. Let simmer for 1 minute. Add flour, 1 tablespoon at a time, whisking constantly until completely incorporated, 5 to 8 minutes. Add 1 cup water slowly and whisking constantly to avoid clumping. Remove from heat.
  • Whisk remaining 2/3 cup water together with cornstarch in a small bowl. Add slurry to the gravy; whisk to combine.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Stir the gravy briefly; season with salt and pepper. Add thyme and rosemary. Stir in Swiss cheese and Gruyere cheese. Add potatoes, scallions, and garlic; stir well until potato slices are separated and coated with gravy. Pour mixture into an 8-inch square baking dish.

2 cups milk
1 cup shredded Swiss cheese (4 oz)
1/2 teaspoon dried rosemary leaves, crumbled
3 medium Yukon gold potatoes, peeled, sliced (4 cups)
1 medium dark-orange sweet potato, peeled, sliced (1 1/2 cups)
1 medium onion, thinly sliced
4 bone-in pork loin chops, 1/2 inch thick
1/2 teaspoon peppered seasoned salt

Steps:

  • Heat oven to 350°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. In 1 1/2-quart saucepan, mix sauce mix and milk. Heat to boiling over medium heat, stirring constantly with wire whisk. Stir in cheese and rosemary until cheese is melted.
  • In baking dish, layer half of the Yukon gold potatoes, all of the sweet potato and half of the onion. Spread about half of the sauce over top. Layer with remaining potatoes and onion; cover with remaining sauce.
  • Cover and bake 30 minutes. Meanwhile, heat 12-inch nonstick skillet over medium-high heat. Sprinkle both sides of pork chops with peppered seasoned salt. Cook pork in skillet 4 to 5 minutes, turning once, until brown.
  • Place pork on potatoes. Bake uncovered 30 to 35 minutes longer or until pork is no longer pink when cut near bone and potatoes are tender.

1 pound Swiss chard leaves and slender stems, stems cut into 1/4-inch cubes
2 1/2 cups heavy cream
1 garlic clove, smashed
1 small shallot, sliced
2 thyme sprigs
1 bay leaf
1/4 teaspoon freshly grated nutmeg
3 pounds (6 to 8 medium) Yukon Gold potatoes, peeled
1 tablespoon butter, at room temperature
Pepper
6 ounces grated Gruyère

Steps:

  • Heat the oven to 350 degrees, and place rack in the center. Bring a large pot of lightly salted water to a boil; set a bowl of ice water on the side. Boil the chard leaves until tender, 3 to 5 minutes, then transfer with a slotted spoon to the ice water. Squeeze them dry and chop roughly. Boil the diced stems until tender, 3 to 5 minutes. Drain well and add to chopped chard leaves.
  • In a small saucepan, bring the heavy cream, garlic, shallot, thyme and bay leaf to a simmer. Cook until reduced by half, about 25 minutes. Strain out the solids and add the nutmeg.
  • Meanwhile, slice the potatoes into 1/8-inch-thick rounds with a mandoline or sharp knife. Butter a 12- to 14-inch gratin dish. Assemble the gratin by layering the ingredients in this order: a single, slightly overlapping layer of one-third of the potato slices, a sprinkling of salt and pepper, one-third of the Gruyère, half the Swiss chard and one-third of the reduced cream. Repeat once, and then top with one more layer of potato, salt and pepper, and the rest of the Gruyère and cream.
  • Bake until the top is browned and the potatoes are fork-tender, about 45 minutes.

To that end, she offered up this recipe for Swiss potatoes, which is, as she noted, essentially a giant potato pancake, the flipping of which can - and should - be done as dramatically as possible. Make sure to dry the grated potatoes completely before frying them. This recipe serves two people, which is fortuitous because, as Ms. Ephron wrote, "Not just any potato will do when it comes to love."

  • Peel potatoes (after each is peeled, place it in a large bowl of cold water to cover to avoid discoloration). Dry potatoes and grate them in a food processor or with a hand grater.

1 head cauliflower, cut into florets
1 teaspoon olive oil, or as needed
½ onion, finely chopped
½ pound bacon
2 tablespoons butter
3 tablespoons all-purpose flour
1 cup heavy whipping cream
1 tablespoon milk, or as needed
1 cup shredded Swiss cheese, divided
1 cup shredded mozzarella cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch casserole dish.
  • Place potatoes and cauliflower into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender but firm, about 20 minutes. Drain and transfer potatoes and cauliflower to the prepared casserole dish.
