RHUBARB BUTTER
Inexpensive, and yummy. This was a staple at our house growing up to put on toast, and cakes. Mom also sometimes put it on chicken. It's not really sweet, more tart. I'm surprised it wasn't already on 'Zaar. Mom used white sugar, but I like the flavor of brown sugar...

Steps:
- Cut the rhubarb into 1" chunks.
- Using a blender or a food processor add the water and rhubarb. Blend. This should make about 3 cups of pulp.
- Place in a heavy pan. Bring to a boil.
- Add sugar and cinnamon.
- Cook, stirring all the time until it looks like fruit butter.
- If you want add up to 4 drops of food coloring. It will be a beautiful color. Grandma did this, Mom and I never have.
- Ladle into hot prepared jars.
- Process at once in a hot water bath (212 degrees) for 5 minute.
- Remove and place on clean towel.
- Cool and wait for that beautiful popping sound.
BROWNED-BUTTER RHUBARB CRISP

Browned butter and almonds add toasty, nutty notes to the topping, making this an almost-effortless, high-impact dessert. You may notice that 2 tablespoons of the butter aren't browned; they are added to the hot browned butter to cool it down a bit so that you can use it immediately. Feel free to swap an equal amount of rolled old-fashioned oats for the almonds in the topping. Serve this cozy dessert with whipped cream or ice cream, if you like.

- Heat oven to 350 degrees. Meanwhile, brown the butter: Melt 1/2 cup/113 grams of the butter in a small skillet set over medium heat. (Use a skillet with a light interior so you can easily see the milk solids change color.) Cook the butter, stirring occasionally and scraping the milk solids off the bottom and sides of the pan as needed, until the milk solids turn golden brown and smell toasty, a few minutes. Transfer the butter to a medium heatproof bowl. Cut the remaining butter into 2 pieces and add it to the bowl with the hot butter. Stir occasionally until all the butter melts.
- Add the flour, brown sugar, almonds and salt to the butter, and stir together until evenly combined and clumps form. You may need to use your fingers to do the last bit of mixing.
- Prepare the rhubarb: In a 9-by-9-inch (or 9-inch round) baking dish, combine the rhubarb, granulated sugar, flour, vanilla paste, orange zest and a pinch of salt. Stir until combined and evenly mixed. Press the rhubarb gently into the pan, then scatter the crumble evenly over the top.
- Bake until the topping is deep golden brown and the rhubarb juices are bubbling, 55 to 65 minutes. Cool slightly, then serve warm with ice cream or lightly sweetened whipped cream. Store any leftovers in an airtight container in the fridge for up to 2 days. The topping will soften as it sits.
RHUBARB BUTTER CRUNCH
This recipe was passed down through my MIL's family and is the best crunch ever! Serve with either ice cream or whipped cream. I have left the directions as she gave me - adds a touch of character to the recipe!

- Preheat oven to 375 degrees Fahrenheit.
- Grease 9x13 baking dish.
- Combine rhubarb with sugar and place in greased baking dish.
- Combine brown sugar, oatmeal, butter, shortening and flour and mix to pebble-like consistency; mixture will be crumbly.

RHUBARB GOOEY BUTTER CAKE BARS
A riff on the classic gooey butter cake, these custardy dessert bars (made easy with Betty Crocker™ yellow cake mix!) are filled with chopped rhubarb. If you only have fresh rhubarb on hand, or it's not in season and frozen is available, this recipe can work equally well with whichever you have on hand. - Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray.
- In large bowl, stir Cake Base ingredients until well blended. Spread in pan.
- In another large bowl, beat cream cheese and 3 1/2 cups powdered sugar with electric mixer on medium speed until blended. Beat in 1/2 cup melted butter. Add eggs, one at a time, scraping bowl occasionally. Stir in rhubarb. Pour batter evenly into pan over cake base.
- Bake 38 to 43 minutes or until golden brown on edges and center is set. Cool completely, about 2 hours.
- When ready to serve, sprinkle 1 tablespoon powdered sugar over top. Using sharp knife, cut into 6 rows by 4 rows, cleaning knife blade after each cut. Serve with whipped cream. Store loosely covered in refrigerator.

- Place all of the ingredients together in a small saucepan, and place it over medium-high heat. Once the mixture begins to bubble and boil, turn it down to medium-low and allow it to simmer, about 25 minutes, stirring every few minutes.
- Remove the pot from heat, then blend the mixture until smooth, using either an immersion blender, high-powered blender, or food processor. Pour the smooth mixture back into the pot, then place it back on the stove over low heat.

- Remove the rhubarb leaves, they are poisonous.Wash the rhubarb and cut it into slices, about 2,5 cm/ 1 inch thick. Place into a large, wide pot. Add the sugar, water, and lemon juice. Stir well. Bring to a boil and cook the rhubarb, stirring often, about 20 minutes or until very soft.
- Puree the mixture with an immersion blender, making sure you wear something with long sleeves and gloves, the butter is very likely to splatter and that can cause painful burns.
- Taste and add more sugar, if desired. You might also want to add some spices, likes cinnamon or vanilla, but that is optional, I prefer my rhubarb butter to be pure and not too sweet.
- Place the pot back on the hob and continue cooking for about 30 minutes or until slightly thickened. Stir often, making sure to scrape the bottom and sides of the pot while you stir. Don't let the rhubarb butter scorch. If you like a thicker rhubarb butter, you can cook it for more than 30 minutes, until the butter reaches the desired consistency.
