RIBS WITH PEACH BBQ SAUCE

Ribs With Peach BBQ Sauce image

Ribs with peach BBQ sauce are super tender and full of bold, sweet and savory flavors. They cook low and slow, but the hands-on part is minimal. These scrumptious ribs are baked then finished on the grill or under the broiler.

Categories     Main Course

Time 2h20m

Number Of Ingredients 13

1 rack baby back pork ribs ((about 2 pounds/900g))
1 tablespoon smoked paprika
1/2 tablespoon EACH: chili powder, garlic powder, brown sugar
1 teaspoon salt
1/3 cup (79ml) Bourbon (can be omitted if you prefer)
3/4 cup (200g) Ketchup
2 tablespoon dark brown sugar ((light ok too - or maple syrup))
2 tablespoon apple cider vinegar
3/4 tablespoon onion powder
3/4 teaspoon garlic powder ((or 1 minced garlic clove))
3/4 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1 cup diced fresh peaches ((about 4 small peaches))

Steps:

  • Preheat oven to 300F/149C.
  • MAKE RUB: Combine all rub ingredients in a small bowl. Shortcut: use a store-bought rub.
  • PREPARE RIBS: Rinse ribs, Pat dry. Remove the silver skin on the back of the ribs (Note 1). Cut rack in half. Line a pan with tin foil. Generously sprinkle rub on both sides of ribs. Wrap each half separately in foil then place on pan. Cover entire pan with another piece of foil. To enhance flavor, season ribs, wrap them and leave them in the fridge over night.
  • BAKE RIBS: Place pan in oven and bake for 2 hours or until tip of knife slides easily into meat. If your ribs are meatier, you might need 2.5 hrs. (Ribs can be cooled, then refrigerated for up to 2 days at this point in sealed bags or container.)
  • MAKE SAUCE: (while ribs are baking) Bring bourbon to boil in a medium saucepan. Stir in rest of ingredients with a wooden spoon. Bring to boil, then lower to medium heat, cover and simmer for 15 minutes until thickened. If not thick enough, uncover and simmer another 5 minutes. If you don't like any chunks in the sauce, you can blend the peach mixture until smooth with an immersion blender. Taste and adjust seasonings.
  • GLAZE AND FINISH ON GRILL: Spray oil on clean gas grill (or charcoal) and heat to medium-high heat. If ribs were cooked earlier and are now cold, bring them to room temperature first or add more grill time. Brush sauce onto ribs. Place ribs on grill and grill for 4-6 minutes until char marks form, flipping once. Brush on additional sauce, cut into serving pieces and serve. Note 2 - to Broil.

Provided by Chef Kathy McDaniel

Categories     Dinner     Main Course

Time 2h40m

Number Of Ingredients 22

1 rack baby back ribs
1 teaspoon liquid smoke, to brush the ribs
1/4 cup brown sugar
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon chili powder
1 teaspoon ground cumin
1/4 teaspoon ground cayenne pepper
1 teaspoon ground black pepper
2 teaspoons salt
1/2 cup bourbon
1 cup ketchup
1 tablespoon brown sugar
3/4 cup peach preserves
2 tablespoons apple cider vinegar
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 tablespoom Dijon mustard
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon ground black pepper

Steps:

  • Preheat the oven to 300 degrees Fahrenheit
  • Rinse ribs and pat dry with paper towels. Remove the membrane on the back of the ribs.
  • With a brush, apply liquid smoke on the meaty part of the ribs. You may not need to use the whole amount of liquid smoke (1 teaspoon). A quick brush on is all you need to impart some smoky flavor.
  • In a small bowl, mix the spice rub ingredients.
  • Sprinkle the rub mix generously on both sides of the ribs.
  • Line a baking sheet with foil - this step is optional but helps with clean up.
  • Lay the ribs, meaty side down on a separate sheet of aluminum foil and fold the sides over the ribs. Place another sheet of foil on top and fold crimping the edges to seal, creating a tight package.
  • Place the ribs on the lined baking sheet (make sure the meaty side is down). and bake for 2 1/2 hours.
  • Remove from the oven and open the foil package carefully. Brush the bone side of the ribs with the Bourbon Peach BBQ sauce and return to the oven. Bake for 10 minutes.
  • Remove from the oven, flip the ribs and brush the meaty side with a generous amount of the Bourbon Peach BBQ sauce. Bake for 10 minutes.
  • The ribs are fully cooked and tender at this point. You can cut them into serving portions and finish them on the grill or broiler (to get a brown golden color and burnt bits).
  • Arrange the ribs on a sheet pan and brush with Bourbon Peach BBQ sauce. Place them under the broiler for 1 - 2 minutes or until bubbly and caramelized. Repeat on the other side.
  • Alternately, you can grill the ribs brushing with the Bourbon Peach BBQ sauce, as needed.

HOMEMADE PEACH BARBECUE SAUCE

Homemade Peach Barbecue Sauce image

Homemade barbecue sauce made with fresh peaches is always a hit in our home. This one uses ripe peaches with a hint of cinnamon and just a touch of heat from smoked paprika. It's seriously good barbecue sauce!

Provided by Kim

Time 1h

Number Of Ingredients 11

3 tablespoons butter
1 large or 2 small shallots (diced)
1 or 2 cloves garlic (pressed or chopped finely)
Salt and Pepper to taste (I'm not a huge black pepper fan so I leave it out)
2 tablespoons brown sugar
1/2 to 1 teaspoon cinnamon (I'm a huge fan of the roasted saigon cinnamon)
1/2 to 1 teaspoon smoked paprika
1 cup ketchup
1 cup fresh peaches (pulse them in the food processor (I like to leave mine a bit chunky))
1 tablespoon worcestershire sauce
Juice from 1/2 fresh lemon

Steps:

  • Pulse your peaches in a food processor until chunky or smooth, depending how you like your sauce. Set aside.
  • In a large saucepan melt the butter over medium heat. As it starts to glisten add the shallots and cook those until the start to go golden brown. This will take 5 to 10 minutes depending on your heat and the size of the pan you use. Once they are almost golden add the garlic. Allow to cook for about 1 to 2 more minutes.
  • Now you can add the spices, ketchup, brown sugar, and peaches. Cook until it comes to a boil.
  • Add the worcestershire sauce and the lemon juice, stir and bring back to a boil. Let it boil for about a minute or two, stir, then reduce to a simmer. Let it simmer for about 20 to 30 minutes. Give it a stir here and there.
  • Swipe it over everything you can get your hands on!
  • You can store the surplus in glass jars in the fridge for a couple of weeks.
  • Great on chicken, fish and pork.

BABY BACK RIBS WITH SPICY PEACH BBQ SAUCE

Baby Back Ribs with Spicy Peach BBQ Sauce image

Provided by Giada De Laurentiis

Time 4h20m

Yield 2 to 4 servings

Number Of Ingredients 13

2 tablespoons light brown sugar
1 tablespoon kosher salt
2 teaspoons smoked paprika
2 racks pork baby back ribs (about 5 pounds total), membrane removed
1 tablespoon extra-virgin olive oil
1 small onion, diced
1 clove garlic, chopped
One 3-inch piece ginger, peeled and chopped
One 10-ounce bag frozen peaches, thawed
3/4 cup apple cider vinegar
1/2 cup packed light brown sugar
1/2 teaspoon kosher salt
1/2 teaspoon Calabrian chili paste

Steps:

  • For the ribs: Preheat the oven to 300 degrees F.
  • In a small bowl, mix together the sugar, salt and paprika. Place the ribs on 2 sheets of aluminum foil large enough to wrap around them and seal. Rub the ribs evenly on all sides with the sugar mixture. Bring the foil up and around the ribs and crimp closed. Place on a rimmed baking sheet. Bake until tender but not falling apart, about 3 1/2 hours. Allow to cool slightly, about 30 minutes.
  • For the sauce: Heat a medium saucepan over medium heat. Add the oil, onion, garlic and ginger to the pan and cook, stirring often with a wooden spoon, until the onions are soft and fragrant, about 4 minutes. Add the peaches and stir to coat with the flavors. Add the vinegar, sugar, salt and Calabrian chili and stir to combine. Bring to a simmer, then reduce the heat to low to maintain a gentle simmer. Add any dripping that may have accumulated on the baking sheet from the pork. Simmer until the peaches are very soft, about 30 minutes. Using an immersion blender, puree the sauce until it is as smooth or as chunky as you like.
  • Preheat the broiler to high heat. Spoon one-quarter of the sauce all over the ribs. Broil for 4 minutes. Remove and repeat the process another 2 times, until the sauce is thick, sticky and golden brown. Serve with more sauce on the side if desired.

Black pepper (to taste)
For the Peach Barbecue Sauce:
2 medium peaches (peeled, pitted, and sliced or chopped)
1 3/4 cups ketchup
2 tablespoons corn syrup or golden syrup
1 1/2 tablespoons Worcestershire sauce

PAT'S RIBS WITH PEACH BBQ SAUCE

Pat's Ribs with Peach BBQ Sauce image

"These ribs are perfect for a throw-down-and-wow-your-guests summer barbecue," say the Neelys. "They are sweet and smoky with just a hint of spice. The pureed peaches provide the sweetness and the hickory gives us that smoke. Our secret ingredient is the smoked paprika, which gives the ribs another layer of flavor and smoky sweetness."

Provided by Patrick and Gina Neely : Food Network

Categories     main-dish

Time 12h15m

Yield 4 servings

Number Of Ingredients 18

2 tablespoons kosher salt
2 tablespoons smoked paprika
1 tablespoon ancho chile powder
1 tablespoon garlic powder
1 tablespoon dark brown sugar
2 (3-pound) slabs pork spare ribs
2 cups Gina's Peach BBQ Sauce, recipe follows
1 tablespoon butter
2 cloves garlic, minced
1 small shallot, diced
Kosher salt and freshly cracked black pepper
1 tablespoon reserved peach dry rub
2 cups ketchup
2 cups peach nectar
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1/2 lemon, juiced

Steps:

  • Ribs:
  • For the dry rub: Add the salt, paprika, chile powder, garlic powder and brown sugar to a bowl and stir until thoroughly incorporated. Keep the rub in an airtight container for up to 6 months.
  • For the ribs: Rinse and dry the ribs. Put them on a clean cutting board and pull off the thin fatty skin that lines the underside of the ribs. Trim the ribs of all excess fat. Reserve 2 tablespoons peach rub (1 for ribs and 1 for sauce), then liberally sprinkle each side with the remaining rub and wrap the ribs in plastic. Refrigerate for at least 8 hours so the flavors can permeate the meat.
  • Fill a grill with the chips and briquettes and preheat them to 250 degrees F. Put the ribs, meatier-side down, over indirect heat and cook for 3 hours with the grill cover down. Turn the slabs and cook until the ribs bend easily, about 1 hour. At this point, remove them from the grill. Sprinkle the slabs with 1 tablespoon reserved peach rub and slice it into portions. Cut each slab into individual ribs and coat with Gina's Peach BBQ Sauce. Arrange on a serving platter and serve.
  • Melt the butter in a large saucepan over medium heat. Add the garlic and shallots and saute until tender, about 3 minutes. Season with salt, pepper and peach rub. Stir with a wooden spoon until fragrant. Stir in the ketchup, peach nectar, apple cider vinegar, mustard, Worcestershire and lemon juice. Bring the ingredients to a boil, and then reduce the heat to a simmer. Let cook until thickened, about 30 minutes, stirring occasionally. Adjust the seasonings if necessary, and enjoy.

  • For ribs: Sprinkle ribs on both sides with a salt. I was pretty liberal with my salt and I went through about 1/2 teaspoon per side. Place fresh herbs and cloves of garlic in the center of a sheet of foil that measures about 24 inches long (your ribs may vary in size so just eyeball it, being sure to leave about 4 inches on each side. Place rack of ribs on top of the herbs and garlic. Top with a second sheet of foil that is the same size as the bottom sheet. Fold in the sides of the foil, wrapping it like a present. Transfer the foil packaged ribs to a baking sheet and place in the oven to bake for 30 minutes. Turn the oven's temperature down to 250 degrees F and bake for an additional 1 1/2 hours to 2 hours. Meanwhile, make the bbq sauce.
  • For the bbq sauce: Bring a medium saucepan with water to a boil. Using a knife, make an X in the bottom of each peach half. Drop each peach half into the boiling water, skin side down, and cook for about 1 minute, until the skins turn a more opaque color and the peach looks a bit softer. Transfer to a cutting board to cool. Peel peaches, discarding the skins and pit, and coarsely chop.
  • In same pot (just be sure to dump out the water - no need to wash it) over medium heat, add two tablespoons of olive oil. When the oil is hot, add the onion and cook until translucent, about 5 minutes. Next, add the garlic, jalapeño and chopped up peach. Cook for an additional 5 minutes, stirring every so often, until the peaches have really softened and everything is fragrant. Add the apple cider vinegar, water, bourbon, tomato paste, honey, Dijon mustard, light brown sugar, Worcestershire sauce and a few pinches of salt. Bring the sauce to a simmer, cover and then immediately turn the heat to low. Cook for about 10 minutes, until the sauce has thickened, peaches are super soft and everything smells delicious.
  • If you have an immersion blender, you can use it now. Blend the sauce until smooth. If you don’t, no biggie. Transfer this bbq sauce to the blender and pulse until very smooth. Be sure to allow air to escape as you’re blending to avoid a blender explosion.
