RICE COOKER CHOCOLATE CAKE
This dark, rich, chocolate cake is perfect with coffee on a lazy afternoon or as a special treat for a birthday cake. It has no eggs or milk so is ok for Vegans. Top it with your favourite frosting, or just sprinkle powdered sugar on it to 'finish' it for the table.I love the recipe as I alway seem to be out of milk and eggs, so this recipe suits my house! I do not have an oven so need something that works in rice cooker. Rice Cookers vary but this recipe seems to work just fine in most. Set the cooker for slow cook if you have that function.

- Add together the dry ingredients: 1.5 cups white flour, 1/2 cup raw sugar, 4 tablespoons dark cocoa (powdered chocolate), 1 teaspoon baking soda, 1/2 teaspoon salt, 1/2 teaspoon cinnamon, 1/4 teaspoon double acting baking powder (leave out for heavier cake).
- Mix dry ingredients well.
- Add wet ingredients to the mixture: 90 ml of sunflower oil (any oil may be used),1/2 teaspoon vanilla, 1 tablespoon vinegar, 1 cup of water.
- Mix well till smooth, about 1 minute, do not over work batter.
- Pour batter into the greased rice cooker bowl.
- Set rice cooker to 'slow' if possible for 60 minutes and start cooker (if your cooker does not have a slow setting don't worry).
- Some rice cookers will go to warm cycle after 5 minutes, allow cooker to be in that mode for a few minutes (like preheating) then restart timer for remainder time to equal 60 minutes total cook time.
- Check cake at 45 minutes.
- Cake is finished when a toothpick comes out clean from edges and center of cake.
- Take rice cooker bowl out of machine when cake is finished cooking, and allow the cake to cool in the bowl for 15 minutes before removing.
- To remove the cake put flat plate on the top the rice cooker bowl and invert bowl in a smooth motion.
- Sprinkle with powdered sugar or top with your favourite frosting.
- Try not to eat the whole cake in 1 seating!

- 1. In a rice cooker bowl, spray with cooking spray if your rice cooker bowl is not non-stick. Place all cake mix ingredients together in the rice cooker bowl. Spoon half of the chocolate frosting in the middle of the cake batter. 2. Place the bowl in the rice cooker and push the cook button. (My rice cooker has a slow cooker option, so I pushed that button and it took about 2 hours or maybe even longer. The cooking time may vary according to different rice cookers - so when your rice cooker beeps saying it's done, and you open the rice cooker and it's still liquidy, no worries, just push the cook button again and wait. You may have to repeat this process a couple of times. But remember, the cake will be very moist and worth the wait. Just plan ahead!) 3. When the cake is fully cooked, flip the bowl upside down onto a flat plate. Heat the rest of the frosting in microwave for about 20-30 seconds. Pour the frosting over the warm cake. Serve warm.

- Empty cake mix and cake mix ingredients into Rice Cooker Plus and mix together.
- Add ½ the can of frosting with Small Scoop.
- Microwave for about 8-10 minutes or until a cake tester inserted into the center of the cake comes out clean. Microwave time may vary.
- This is how I've done it.
- Mix the cake like you normally would but do it all in the rice cooker. Drop 3 -4 spoonfulls of frosting into the batter cover; Bake in the microwave for about 10-12 minutes.
- Carefully remove lid and check with toothpick and make sure cake is done.
- Warning, cake will be HOT!!! Once it is comfortably warm, place a plate on top of rice cooker and invert cake onto plate.
- The frosting will be melted and cake will be HOT!!

- Preheat the oven to 425 degrees F. Spray four custard cups with baking spray and place on a baking sheet.

- Preheat the oven to 400 degrees F.
- Brush four 6-ounce ramekins with the melted butter and sprinkle lightly with sugar. Place the ramekins on a baking sheet.
- Combine the chocolate and butter in a medium microwave-safe bowl. Microwave on high in 30 second intervals, stirring in between each with a rubber spatula until completely melted and smooth, about 1 1/2 minutes total. Add the vanilla, espresso powder and salt into the chocolate mixture and stir to combine.
- Add the eggs, egg yolks and 1/4 cup sugar to the bowl of a stand mixer fitted with a whisk attachment. Whisk on medium-high until fluffy and pale, about 1 1/2 to 2 minutes.

- Divide the batter equally among the 4 prepared ramekins. Bake until the sides are firm but the centers are still soft, 12 to 14 minutes. (A cake tester inserted into the center of each cake should not come out clean.) Do not overbake.
- Let the cakes cool for 1 minute. Invert onto serving plates and serve warm.

- Coat the inside of 4 1-cup (125 G) ramekins with softened butter, then sprinkle with the granulated sugar, tilting to coat completely. Set aside on a rimmed baking sheet.
- Heat the heavy cream in a small pot until boiling.
- Pour the boiling cream over ½ cup (120 ml) dark chocolate in a small bowl and let sit for 3 minutes. Stir until the chocolate is melted and smooth. Refrigerate for at least 30 minutes, or store in the freezer for up to 3 months.
- Preheat the oven to 425°F (220°C).
- In a small microwave-safe bowl, combine the remaining ¾ cup (170 G) chocolate and the butter. Microwave in 30-second intervals, stirring between, until completely melted.

Legend has it that this dessert was the result of a major catering disaster. - Generously butter the inside of 4 (5 1/2 ounce) ramekins. Place them in a casserole dish.
- Whisk together egg yolks, eggs, and sugar in a bowl until light, foamy, and lemon colored.
- Melt chocolate and butter in a microwave-safe bowl in 30-second intervals, stirring after each melting, 1 to 3 minutes.
- Stir melted chocolate mixture into egg and sugar mixture until combined.
