Tomato-Goat Cheese Spread image

A good friend shared this recipe with me. It is super easy and so delicious. Guests will love it! It's best served with crackers that aren't strongly seasoned. -Linda Alexander, Madison, Wisconsin

Number Of Ingredients 5

1 jar (8-1/2 ounces) julienned oil-packed sun-dried tomatoes
2 garlic cloves, minced
1 log (11 ounces) fresh goat cheese
Minced fresh parsley, optional
Assorted crackers

Steps:

  • Drain tomatoes, reserving 3 tablespoons of oil., In a small skillet, heat reserved oil, tomatoes and garlic over medium-high heat. Cook and stir 5 minutes or until garlic is golden and tomatoes are heated through. To serve, place cheese on a serving plate. Pour tomato mixture over cheese. If desired, sprinkle with parsley. Serve with crackers.

GOAT CHEESE AND THYME CRACKERS



Goat Cheese and Thyme Crackers image

Number Of Ingredients 6

4 ounces goat cheese
2 tablespoons butter, at room temperature
4 sprigs thyme, leaves removed and lightly chopped
Zest of 1 lemon
Kosher salt and freshly ground black pepper
1/2 cup flour

Steps:

  • In a stand mixer with the paddle attachment blend the goat cheese and butter until smooth. Add the thyme, zest, and 1/4 teaspoon salt. Taste a bit, and season with more salt, if needed and add a few grinds of pepper. Add the flour and blend until smooth. Remove the dough and using a piece of plastic wrap to guide and mold, roll the dough into an 8-inch long log. Refrigerate for 2 hours.
  • Heat the oven to 325 degrees F.
  • Remove the dough log from the refrigerator and cut into 1/3-inch discs. Place on an ungreased parchment paper-lined baking sheet, about an inch apart. Bake until golden on top and set, 30 to 35 minutes. Remove from the oven and slide the parchment off of the baking sheet and onto a cooling rack with the crackers still attached. Cool completely before eating.

2 cups gingersnap crumbs
6 tablespoons melted butter, plus extra butter for pan
1/4 cup sugar
Pinch salt
2 (8-ounce) packages cream cheese, at room temperature
1 (12-ounce) log goat cheese
12 ounces creme fraiche or sour cream
4 eggs
1 cup sugar
2 teaspoons vanilla extract
Vanilla Pineapple Compote, recipe follows
Special equipment: 9-inch springform pan
1 cup brown sugar
1 1/2 cups water
1 cup rum
2 vanilla beans, split, seeds scraped and reserved
1/2 lemon, juiced
1 ripe pineapple, top, skin and core removed, cut into bite-size wedges

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the crust:
  • Stir all of the ingredients together in a large bowl. Butter a 9-inch springform pan. Press the crumb mixture onto the bottom and about halfway up the sides of the pan.
  • To make the filling:
  • Beat the cream and goat cheeses in the bowl of an electric stand mixer with the paddle attachment until light and fluffy. Add the creme fraiche and beat to combine. Add the eggs, 1 at a time, beating after each egg is added, until thoroughly combined. Beat in the sugar and vanilla until just combined.
  • Pour the filling into the prepared crust. Put on a baking sheet in the preheated oven and bake for 55 to 60 minutes. Rotate the baking sheet halfway through the cooking process. If the cheesecake starts to color, tent the springform pan with aluminum foil.
  • Remove the cheesecake from the oven and let it cool completely before serving, as it continues to set as it cools. It is best to refrigerate overnight before serving. Cut the cake into wedges and serve with Vanilla Pineapple Compote.
  • Say cheesecake!
  • Combine the brown sugar, water, rum, and vanilla beans in a saucepan over medium heat. Squeeze the lemon juice into the pan and stir to combine. Bring to a simmer, add the pineapple and stir until well mixed. Simmer until the liquid has reduced to a syrupy consistency and the pineapple is soft.
  • Let cool and serve as an accoutrement to yummy desserts like goat cheese cheesecake!

WILD RICE AND GOAT CHEESE DRESSING



Wild Rice and Goat Cheese Dressing image

2 cups wild rice
6 cups water
3/4 pound Spanish-style chorizo, diced, see Cook's note*
5 tablespoons unsalted butter, plus extra for greasing the dish
1 cup Spanish onion, diced
1/2 cup diced carrots
1/2 cup diced celery
3 cloves garlic, finely chopped
2 tablespoons fresh thyme, chopped
1 (day-old) loaf country-style bread, cubed
2 to 4 cups homemade chicken stock
12 ounces goat cheese
1/2 cup fresh flat-leaf parsley, chopped
Freshly ground black pepper
Kosher salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Combine the rice, water and 1 tablespoon of salt in a large saucepan, bring to a boil over high heat and cook until the grains open all the way, about 1 hour, 15 minutes to 1 hour, 30 minutes. The rice should be very cooked (not even the slightest chewy). Drain well, place in a large bowl and set aside.
  • Heat the butter in a large high-sided saute pan over medium-high heat. Add the chorizo, onions, carrots and celery and cook until soft. Add the garlic and thyme and cook for 1 minute. Add the onion mixture, bread, goat cheese, parsley and 2 cups of the chicken stock to the rice. Mix to combine. The mixture should be quite wet; add more stock, if needed. Season with salt and pepper to taste.
  • Transfer the mixture to a large buttered baking dish and bake, uncovered, until heated through and golden brown, about 30 minutes. Remove from the oven and let rest 10 minutes before serving.
  • *Cook's note: We recommend to order from D'Artagnan because it's not raw or totally cured and cooked...it's kind of in between.

8 ounces shelled frozen edamame (about 1 3/4 cups)
24 rice crackers, such as KA-ME brand
5 ounces chevre cheese (fresh goat cheese)
3 scallions, very thinly sliced
hot chili oil

Steps:

  • Cook edamame in boiling water according to package directions.
  • Drain beans in a colander and run cold water over them to cool.
  • Drain well and sprinkle with salt.
  • On top of each cracker, spread about 1/2 teaspoon of goat cheese, and then top with 3 to 5 edamame, a pinch of sliced scallions, and a few drops of Chile oil. Serve.

1 1/2 cups all-purpose flour
1/4 teaspoon salt
1 1/4 sticks (1/2 cup plus 2 tablespoons) cold unsalted butter
an 11-ounce log soft mild goat cheese
about 1 cup tapenade

Steps:

  • In a food processor or in a large bowl with a pastry blender pulse or blend flour and salt. Cut butter into small pieces. Add butter to flour mixture and pulse or blend until mixture resembles coarse meal. Measure 1/3 cup goat cheese, reserving remainder for serving, and break into small pieces. Add cheese to flour mixture and pulse or blend until mixture just begins to form a dough. Halve dough and roll out each half between sheets of parchment paper into a 12- by 10-inch rectangle (about 1/8 inch thick). Chill rectangles in parchment on baking sheets until firm, about 30 minutes.
  • Preheat oven to 375°F. Transfer 1 rectangle of dough on baking sheet to a work surface and remove top sheet of parchment. Working quickly and using a ruler as a guide, cut rectangle into 1 1/4-inch squares without separating squares. (If dough becomes too soft to work with, freeze or chill on parchment and baking sheet until firm.)
  • Bake crackers on parchment and baking sheet in middle of oven until golden, 15 to 20 minutes. Cool crackers on parchment on a rack. (Crackers will continue to crisp as they cool.) Cut and bake more crackers with remaining rectangle of dough. With a spatula carefully remove crackers from parchment. Goat-cheese crackers may be made 5 days ahead and kept in an airtight container at room temperature.
  • Spread crackers with reserved goat cheese at room temperature and top with tapenade.
