RICE KRISPIE ICE CREAM SANDWICHES
Steps:
- Coat a 8″ or 9″ cake pan with non-stick cooking spray. NOTE: The smaller the pan the thicker your layers will be.
- Remove your ice cream from the freezer and place on your counter or in the sink for about 10 minutes to slightly thaw.
- In a large non-stick pan, melt butter and mini mashmallows on low heat stiring regularly to ensure the mixture does not burn.
- Slowly start to add rice krispie cereal into the mixture until well combined. Once mixed, turn off the heat.
- Add half of the cereal mixture to your cake pan and press firmly into shape. NOTE: I always wet my hands a little bit to ensure the mixture doesn't stick to them. Also, I try to ensure the two bottom and top layers of rice krispie are half the thickness of the ice cream layer. You are welcome to make them thinner or thicker based on your preference.
- Cover your pan with a lid to keep the remaining mixture warm.
- Place your baking pan with your first layer into the freezer for 10-5 minutes.
- Remove the baking pan from the freezer and spread a thick layer of ice cream onto the bottom most layer of rice krispie cereal. Press firmly to ensure the ice cream layer is well compant and smooth at the top. As noted above, you can choose to layer one layer of ice cream, two or three side-by-side.
- Place the baking pan back into the freezer for an additional 10-15 minutes.
- Remove the baking dish from the freezer and layer the top layer of rice krispie cereal on top of the ice cream. Press firmly into shape. Place back into the freezer for 5+ hours or overnight.
- Cut into squares or shapes and serve!

A combination of corn syrup, peanut butter, and Rice Krispies with your choice of ice cream or yogurt sandwiched in between.Place a piece of plastic wrap on top of the cereal mixture and then press down with your hands if you wish to keep your hands clean. I keep a plastic quilt ruler with my baking supplies for measuring squares and pastry. From a magazine clipping. No baking required!

Steps:
- In a medium bowl, stir together corn syrup and peanut butter.
- Add cereal and stir until well coated.
- Press mixture firmly and evenly into a buttered 9"x13" pan.
- Place in freezer until firm, about 15 minutes.
- Cut cereal mixture in half crosswise.
- Spread one half with softened ice cream or frozen yogurt.
- Top with second half of Rice Krispie mixture to make one very large sandwich.
- Freeze until firm, about 2 hours.
- Cut large sandwich into 2" portions (using ruler again).
- Wrap individually in foil paper or freezer wrap and store in freezer until needed.

- Microwave butter in large microwaveable bowl on HIGH 45 sec. or until melted.
- Add marshmallows; toss to coat. Microwave 1-1/2 min. or until marshmallows are completely melted and mixture is well blended, stirring after 45 sec. Add cereal and sprinkles; mix well.
- Press onto bottom of 13x9-inch freezerproof pan sprayed with cooking spray. Freeze 15 min.

- In a large saucepan over medium heat, combine butter and sugar. Stir in rice cereal, 1 cup at a time; remove from heat.

- Line 2 9-by-13-inch baking pans with foil, leaving 2-inch overhangs on 2 sides of each pan. Mist with cooking spray. In a large pan, melt butter over low heat. Add marshmallows; stir until melted. Remove from heat, and stir in Rice Krispies. Working quickly, mist your hands with cooking spray, divide mixture in half and press into baking dishes. Let cool completely.
- Let ice cream soften slightly. Working quickly, spoon ice cream on top of Rice Krispies layer in 1 baking pan, spreading evenly to edges. Remove Rice Krispies layer from other baking pan, using foil overhangs as handles. Peel off foil and place layer on top of ice cream, gently pressing down. Return to freezer until hardened, about 1 hour.
- Line a baking sheet with parchment; set in freezer. Using foil handles, lift ice cream treat from pan, peel off foil and place on a cutting board. Cut into 18 sandwiches; place on baking sheet in freezer. Remove a sandwich from freezer, press edges of sandwich into sprinkles, then return to freezer. Repeat with remaining sandwiches. Freeze until ice cream hardens, at least 30 minutes. (For longer storage, wrap sandwiches in plastic wrap after they are firm.)
