1 tablespoon lard or solid vegetable shortening
1 1/2 cups long grain rice
1/4 large onion, finely chopped
2 or 3 cloves garlic, finely chopped
2 whole tomatoes from a 15-ounce can
1/4 cup liquid from canned tomatoes
One 40-ounce can chicken broth (30 ounces used total)

Steps:

  • Open can of tomatoes and chicken broth and set aside. These ingredients have to be added quickly, so have them ready.
  • Heat lard or shortening in a saucepan on medium-high. Add rice, stirring constantly. When rice is brown, immediately add the onion and garlic and stir so it is evenly mixed. Quickly add the 2 tomatoes (squish them with your hand). Add 1/4 cup of liquid from the can of tomatoes and 3/4 of the entire amount of chicken broth. Bring to a full boil, cover and reduce heat to medium-low. Let simmer until rice is tender and most of broth has evaporated, about 20 to 30 minutes. (The remaining broth can be added if rice is still a little hard) Remove rice from heat and leave covered until ready to serve.

1 1/2 pounds squid, with tentacles
4 tablespoons olive oil
1 large onion, chopped
1 pimento, chopped
1 tomato, chopped
2 cloves garlic, minced
1 tablespoon minced parsley
Coarse salt and freshly ground pepper to taste
Large pinch saffron
1/2 pod chili pepper, seeds removed, crumbled
1/4 to 1/2 cup dry red wine
2 cups short-grain rice
3 to 4 cups fish broth or clam juice
1 pimento, cut in strips
Garlic sauce
3 cloves garlic, crushed
1/2 cup extra-virgin olive oil

Steps:

  • Clean the squid, reserving the ink sacks and the tentacles. Cut the squid into half-inch wide rings or into pieces. Chop the tentacles.
  • In a wide, shallow casserole, preferably earthenware and about 12 inches across, heat the oil and saute the onion until it is wilted. Add the squid rings and tentacles and saute five minutes, then add the chopped pimento, garlic, tomato, parsley, salt, pepper, saffron and chili pepper. Cover and simmer 30 minutes.
  • Break the ink sacs in a cup and mix with the wine. Pass this mixture through a sieve several times until most of the ink is extracted. Reserve. Add the rice and broth, boiling hot, to the casserole and stir in ink mixture. Season with salt and pepper. Bring to a boil and cook over medium-high heat, uncovered, and stirring occasionally, for 10 minutes, until the rice is no longer soupy but some liquid remains. Decorate with the pimento strips and transfer to a 325-degree oven. Bake 15 minutes, uncovered, until the liquid is absorbed but the rice is not quite done. Remove from the oven, cover lightly with foil and let sit 10 minutes.
  • While the rice is resting, make the garlic sauce. Place the crushed garlic in a processor or blender. Very gradually, with the motor running, pour in the oil. Serve the rice with a salad and a dry white wine like Cepa de Oro. Pass the garlic sauce separately.

6 cups fish or shrimp stock
2 1/2 tablespoons squid ink
5 tablespoons Spanish olive oil
1 medium yellow onion, finely chopped
3 garlic cloves, finely chopped
2 medium tomatoes, seeded and finely chopped
2 teaspoons Spanish paprika
Sea salt and freshly ground black pepper
2 cups Spanish short grain rice
2 pimentos, chopped
6 pitted green olives, smashed
1/4 cup finely chopped flat-leaf parsley
1/2 lemon, juiced
Pan Roasted Prawns, recipe follows
2 pounds giant prawns, with heads and shells on
1/2 cup extra-virgin olive oil
2 teaspoons Spanish paprika
2 garlic cloves, crushed
1/2 lemon, sliced thinly
Sea salt and freshly ground black pepper

Steps:

  • Combine the stock and squid ink in a saucepan and place over medium-low heat, stir to combine.
  • Heat 3 tablespoons of the olive oil in a wide shallow skillet or paella pan over medium heat. Make a sofrito by sauteing the onion, garlic, and tomatoes; cook until the mixture caramelizes a bit and the flavors meld, about 10 minutes. Sprinkle with the paprika, salt and pepper. Fold in the rice, stirring to coat the grains. Pour in the hot, black stock and give it a stir. Reduce the heat to low and cook until the liquid is absorbed, about 10 minutes; season with salt and pepper. Do not cover or constantly stir like risotto.
  • Mix the pimentos, olives, parsley, lemon juice, and remaining 2 tablespoons of oil together in a small bowl. Arrange the pan-roasted prawns on the black rice, and sprinkle the olive mixture all over the top; serve directly from the pan at the table.
  • Make a quick marinade for the prawns by combining them in a bowl with a healthy drizzle of olive oil, the paprika, crushed garlic, lemon slices, salt, and pepper. Toss the prawns so they are coated with all the good stuff and marinate for 5 minutes to 2 hours in the refrigerator.
  • Place a large skillet over medium-high heat and coat with a couple of tablespoons of olive oil. When the oil is hot, pull the prawns out of the marinade and toss them into the pan. Saute for 3 minutes on each side until the shells are red and charred. Serve the prawns with the Spanish black rice.

1 lb 5 oz fresh squid, cleaned
8 cups fish stock
1/3 cup olive oil
1/2 cup sofrito
3 cups paella rice
3/4 oz squid ink (optional)
2 tbsp picada

Steps:

  • If the squid has tentacles, pull them away from the body. Cut the squid into 1-inch strips. Then cut into 1-inch cubes. Pour the fish stock into a saucepan, cover, and bring to a simmer. Put a large pan over high heat and add the oil. Add the squid. Fry for 2 minutes, until golden in places. Add the sofrito and continue to cook over medium heat for 10 minutes. Add a teaspoon of water if the sofrito starts to stick to the bottom of the pan. Add the rice, stirring it into the squid. Fry for 10 minutes, stirring often. Turn the heat to high and add a ladle of stock, stirring continuously. Once the stock has been absorbed, add another ladle and repeat until 5 minutes have passed. Dissolve the squid ink in a little of the remaining stock. Add this to the rice, and then continue adding the rest of the stock. Cook the rice for another 12 minutes, stirring frequently. Add the picada and continue to cook for another 2 minutes, or until the rice has absorbed most of the liquid and is just tender to the bite. Season with salt, then serve.

1 tablespoon white wine or 1 tablespoon cider vinegar
2 cups cooked white rice

Steps:

  • In a medium saucepan, heat the oil on medium.
  • Stir in the onion and pepper, add the garlic.
  • Cook until tender or about 8-10 minutes.
  • Stir in the remaining ingredients.
  • Bring to a boil.
  • Reduce the heat and simmer for 10 minutes.
  • Serve over the white rice.
