1 cup heavy cream
1 cup milk
3 drops hot sauce
¼ teaspoon salt

1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Spread shredded cheese in the bottom of pie crust.
  • In a large bowl, combine eggs, cream and milk. Season with hot sauce, salt, pepper and paprika. Pour filling over shredded cheese in the pie crust.
  • Bake in the preheated oven for 40 to 50 minutes, or until golden brown. Cool 10 minutes before serving.

1/2 cup French-fried onions

Steps:

  • Heat oven to 400°F. Grease 9-inch pie plate. Stir together cheeses and bell pepper; spread in pie plate.
  • Stir Bisquick mix, milk and eggs until blended. Pour into pie plate; sprinkle with onions.
  • Bake about 35 minutes or until golden brown and knife inserted in center comes out clean. Cool 5 minutes.

2 (8 ounce) packages cream cheese, softened
2 eggs
1 cup white sugar
1 teaspoon vanilla extract
1 cup sour cream
2 tablespoons white sugar
¼ teaspoon vanilla extract
1 (9 inch) prepared graham cracker crust

Steps:

  • Combine cream cheese, eggs, 1 cup sugar, and 1 teaspoon vanilla in the bowl of an electric mixer. Mix on low speed until smooth. Pour filling into graham cracker crust.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes. Remove pie from oven. Raise oven temperature to 450 degrees F (230 degrees C).
  • In a small bowl, blend sour cream, 2 tablespoons sugar, and 1/4 teaspoon vanilla together. Gently spread mixture over pie.

This recipe was inspired by a pie at my favorite bakery in Brooklyn, Four and Twenty Blackbirds. While mine will never live up to their version, I think it's getting pretty close. I was really pleased with the addition of cardamom in the filling!

1 1/4 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 stick cold butter, cut into 1/2-inch chunks
4 to 5 tablespoons ice water
1 1/2 cups farmer cheese (about 12 ounces)
1 cup dark brown sugar
1/4 teaspoon ground cardamom
5 eggs
1 1/2 cups heavy cream
Orange marmalade, for serving

Steps:

  • For the crust: Place the flour, sugar, salt and butter in a food processor and pulse until the butter is evenly distributed but still visible in chunks. While pulsing, add the ice water 1 tablespoon at a time until the dough is just wet enough to hold together when pinched between your fingers.
  • Turn the dough out onto a piece of plastic wrap, form into a disk and refrigerate for at least 30 minutes.
  • Preheat the oven to 350 degrees F. Roll the dough out into a circle about 1/8-inch thick, and then fit into a 9-inch pie dish. Dock the crust all over using a fork. Cover the crust with plastic wrap and refrigerate for at least 30 minutes.
  • Line the crust with foil and fill with dried beans or baking marbles. Bake for 10 to 12 minutes, and then remove the foil and beans and bake until the crust just begins to brown, another 15 minutes.
  • For the filling: While the crust is baking, combine the farmer cheese, sugar and cardamom in a stand mixer with a paddle attachment and whip together until well incorporated. Add 1 egg at a time on medium speed, waiting until fully incorporated and smooth before each new addition. Stir in the heavy cream.
  • Fill the crust with the cheese filling and bake until the top is browned and the filling is just slightly jiggly, 45 minutes. Let cool, and then eat the pie. Serve with orange marmalade.

5 large eggs, lightly beaten
1/2 pound ricotta cheese
1/2 pound fresh mild goat's cheese
1/4 cup thinly sliced scallions
1/4 cup each finely chopped parsley and fresh basil
1/4 cup each finely chopped parsley and fresh basil
1 cup freshly grated Parmesan cheese
Salt and freshly ground black pepper
Salt and freshly ground black pepper
2 tablespoons olive oil
2 medium cloves garlic, minced
1 teaspoon dried oregano
10 ounces tomato puree
4 ounces tomato paste
1/2 cup sliced black oil cured olives
1/2 pound thinly sliced mozzarella cheese
1 large red bell pepper, seeded and sliced into matchstick pieces

Steps:

  • Preheat the oven to 425 degrees. Combine the eggs with the ricotta cheese, goat's cheese, scallions, parsley and basil and Parmesan and season well with salt and pepper.
  • In a medium skillet heat the olive oil. Stir in the garlic and oregano. When the garlic is on the verge of turning golden, add the tomato puree, paste and olives. Season with salt and pepper.
  • Spread half of the cheese mixture in the prepared pie shell. Spread half of mozzarella, sauce and bell pepper. Make a second layer with ricotta cheese, mozzarella, sauce and bell pepper. Cover with the top crust and pinch edges together and flute them.
  • Make 3 long parallel slashes through the top crust. Set pie plate on a baking sheet to catch drips and bake for 40 minutes or until well browned. Let stand for 1 hour. Serve with a crisp green salad with mustard dressing.
